  • The best simple hummus hacks for the BEST HUMMUS! I will no longer be lazy and used tinned chickpeas and not take the skins off!

    Main lessons:
    Use quality organic dried chickpeas (best for flavour as well as nutrition)
    Remove skins with methods shown (only way to get it super smooth)
    Make a little seasoned paste with the Tahini lemon garlic and salt before mixing in the blender
    Always use quality lightly roasted Tahini, bitter ones with create bitter hummus

    Tip for removing your skins: Use a bigger bowl when you rinse them in water. Get your hands in, rub the chickpeas together vigorously but not so hard you crush them. Then swirl the water around and the skins will flow off the top. Do this a few times and you’re really will get rid of the majority of those pesky skins very quickly. Not only do you get a smoother hummus but you will increase the nutritional value of the skins as they prevent your body absorbing all the good stuff. Also, if you soak your chickpeas for 24 hours with a splash of cider vinegar you will make them more digestible and nutritious. Why is hummus so addictive? I just love it. 💖💖💖

      The chickpea water (aquafaba) is the water you get after you boil the chickpeas, the thicker the better.

      @@shellyannbrown7615 i started reading some stufff about vegan and I discovered that i dont need the animal protein at all, after this, things become easier, i dont change my diet a Lot, just added more beans, and like the time goes, i learned a lot about what i really need to eat in a day and saw a million videos of how to enjoy the foods cooking well.       ShellyAnn Brown Tbh, since i was young i felt the need of going vegan and throughout the years i would inform myself on our bodies and what it needs. I just woke up one day after getting sick of eating meat and said, you know what? i’ll try it. what do i have to lose? so i started simple. Bought a bunch of fruits and ate raw for a few days and then i started making smoothies, i started experimenting with tofu and made tofu scramble, overnight oats, oatmeal, i made tex-mex quinoa, etc. Look up lots of recipes and it’ll get easier. you’ll get the hang of it! The best thing that i’ve ever done, honestly.

    okay you guys, I just made this recipe. When I blended everything together and made my first taste test, I literally stood speechlessly for about 3 minutes straight. I'm pretty sure I accidentally reached nirvana at that moment, my consciousness was somewhere else and everything in my organism made a pause, because all the energy was concentrated in my tasting buds.

    You need to try Zartar if you haven't. Its a seasoning from the middle east and along with the extra virgin oil it will upgrade any hummus. Looks really yummy btw!

    Just a heds up, the soaking water is not the same as aqua faba. Aqua faba is the cooking liquid :) Happy vegan meringue making :)

      yeah I just realised I didn't fully properly explain lol, usually i'd cook that soaking water and then use it like that but I drained it because i wasn't going to cook it. Pregnancy brain was intense that day lool xx

      @@RachelAma please don't use the soaking water even for cooking. The soaking water contains all the farty stuff from the chickpeas.... its best to go down the sink. Use fresh water for cooking and you will still achieve aqua faba. xxx

    I seldom use canned chickpeas, never for hummus, always soak overnight and cook with baking soda in my instant pot. I use silken tofu instead of oil. It always tastes great!

    Just a short note after you boil your chickpeas the water is put in the fridge where it becomes gelatinous, this is when you can whip it into a meringue. I actually saw it on TH-cam last night the dish was made by an Indian chef. Your recipes look great. I just came across your name with the hummus

    Hi Rachel. I have been using home made yogurt rather than tahini in our humus. I also boil the soaked peas for 90 minutes. I use skins and all in the humus. The add ins are then similar, garlic, lime or lemon juice, olive oil and spices. I blend this in a ninja. The humus is smooth and excellent. John

    didn't know about the ice cube trick! I always used canned chickpeas because no matter how much I take the skins off the cooked chickpeas it's never smooth enough for my liking! :D Love making hummus

      Chickpeas cause painful acid reflux, like end up in the ER painful. So no hummus and I never liked the taste 😅

    I love making hummus. I make roasted red pepper with chili oil, roasted garlic with rosemary oil, and just plain hummus with sea salt. I like to soak the peas overnight. I make it the same way as you.

    I so hope you will read this!!
    I have a little tip for you: soak the chickpeas over night in water and baking soda and the next day put them in a bowl and put the bowl under the tap under running water and start kneading them you basically kneading the skins of the chickpeas. You will see them skins floating on the surface of the water in your bowl and as you pouring out the water of the bowl you pour out the skins also. then you can basically boil the chickpeas without the skins and get the ultimate smooth hummus you want..

    Well i thought i was the master hummus maker but you are right about the distribution of flavour.
    I had not thought of mixing flavour separately but that is how am going to make from now on. Great tip.
    Dried is always tastier. I noticed this with dried beans. I don't know why but it is worth the faff because the taste is mmmmm.
    Btw, I don't know about London but I live in Nottingham and although main supermarkets have limited stock, Asian supermarkets have everything ... even things like tofu and miso paste. Great vlog as usual

      Ottolenghi is such a culture vulture 👎🏼 Israelis have no business profiting off arab recipes when they are occupying and oppressing them.

      Couldn’t have said it better myself. He completely appropriates Palestinian and Arabic food. It was extremely frustrating to hear him referred to as the “guru of Middle Eastern cuisine” in this video bc he is of Italian and German descent. Just because he was born in Israel (which occupies Palestine) doesn’t mean he has the right to claim food that doesn’t belong to his culture as his own. Where are the true Palestinian and Arab chefs?

    InstantPot for the win! Soaked chickpeas cook in 12 minutes! If you put in baking soda, then even less time - maybe 8 minutes, because you will end up with chickpea mush... (Speaking from experience... :D)
    Love hummus! My favorite way to eat hummus is in a wrap with rocket and pickled jalapeños or hot sauce, slices of tomatoes. Yum!

      Just taste it! Just because it is out of date, it does not mean it's not fine to eat. Food does not know theses dates, they're human made.
