      The chickpea water (aquafaba) is the water you get after you boil the chickpeas, the thicker the better.

    Tip for removing your skins: Use a bigger bowl when you rinse them in water. Get your hands in, rub the chickpeas together vigorously but not so hard you crush them. Then swirl the water around and the skins will flow off the top. Do this a few times and you’re really will get rid of the majority of those pesky skins very quickly. Not only do you get a smoother hummus but you will increase the nutritional value of the skins as they prevent your body absorbing all the good stuff. Also, if you soak your chickpeas for 24 hours with a splash of cider vinegar you will make them more digestible and nutritious. Why is hummus so addictive? I just love it. 💖💖💖

      @@shellyannbrown7615 i started reading some stufff about vegan and I discovered that i dont need the animal protein at all, after this, things become easier, i dont change my diet a Lot, just added more beans, and like the time goes, i learned a lot about what i really need to eat in a day and saw a million videos of how to enjoy the foods cooking well. Good luck and sorry my english.

      ShellyAnn Brown Tbh, since i was young i felt the need of going vegan and throughout the years i would inform myself on our bodies and what it needs. I just woke up one day after getting sick of eating meat and said, you know what? i’ll try it. what do i have to lose? so i started simple. Bought a bunch of fruits and ate raw for a few days and then i started making smoothies, i started experimenting with tofu and made tofu scramble, overnight oats, oatmeal, i made tex-mex quinoa, etc. Look up lots of recipes and it’ll get easier. you’ll get the hang of it! The best thing that i’ve ever done, honestly.

    Hi Rachel. I have been using home made yogurt rather than tahini in our humus. I also boil the soaked peas for 90 minutes. I use skins and all in the humus. The add ins are then similar, garlic, lime or lemon juice, olive oil and spices. I blend this in a ninja. The humus is smooth and excellent. John

    I have a little tip for you: soak the chickpeas over night in water and baking soda and the next day put them in a bowl and put the bowl under the tap under running water and start kneading them you basically kneading the skins of the chickpeas. You will see them skins floating on the surface of the water in your bowl and as you pouring out the water of the bowl you pour out the skins also. then you can basically boil the chickpeas without the skins and get the ultimate smooth hummus you want..
    You are awesome much love from Austria I love your videos!!

      @Nadia-du8vb 4 ปีที่แล้ว +2

      Ottolenghi is such a culture vulture 👎🏼 Israelis have no business profiting off arab recipes when they are occupying and oppressing them.
      “A Culture Vulture is a practitioner of cultural appropriation. A Culture Vulture is an inauthentic individual who attempts to identify with aspects of another culture and claim it as their own. They do this by mimicking aspects of culture that belong to another group of people and not giving credit where credit is due, which creates the illusion that the aspect of culture they are mimicking is authentic to them. They also do this by claiming that certain aspects of another group of people's culture originated with them, with no historical proof to back their claims.”

    • @amaniabdelsalam9596
      @amaniabdelsalam9596 4 ปีที่แล้ว +1

      Couldn’t have said it better myself. He completely appropriates Palestinian and Arabic food. It was extremely frustrating to hear him referred to as the “guru of Middle Eastern cuisine” in this video bc he is of Italian and German descent. Just because he was born in Israel (which occupies Palestine) doesn’t mean he has the right to claim food that doesn’t belong to his culture as his own. Where are the true Palestinian and Arab chefs?

    get hulled tahini for the lighter and more pleasant taste, unhulled tahini gives the bitterness because the skins are still on the seed :)

    Thanks for a great video! Which one was the japanese tahini? Is it among the listed tahinis?

    Sorry to keep commenting. Good call pointing out the Tabbouleh feast in your book. I have your book but somehow did not remember seeing it. Don't know how i missed it but now i have something else to try. I will tag you in Insta as usual when i cook your food

    Great video, thank you for the recipe ! I never bother to get those skins out when making hummus, watching this makes me think I probably should ^^'
    By the way, if you ever want to make a video on your skincare, I'd love to see it, you're always glowing (now more than ever of course, congratulations on the pregnancy ;) )!

    Great recipe! I’m quite selfishly enjoying your current hatred of garlic - makes adjusting your recipes to my lowfodmap diet much easier 🤭🙋🏼‍♂️

    I have never tried hummus even though I have chick peas in my cabinet. It looks delicious though. Think I'll try this.

    Do you use the regular vitamix blender jar or is that the one you use for dryer ingredients?
