    I made this pudding and took it to a friend She is from the south (I am from Phila) she was openly moved bc it was so delicious and authentic. She reminisced about her childhood and I got to know her better. Thank you for making the recipes so easy and delicious. Next on the menu your meatloaf,

    Hi Charlie. Two things. ( 1 ) go down to your local Goodwill Store and get a glass, stainless steel, or ceramic bowl to use of your meringues. The plastic cups have oils in them and it will affect your meringue. ( 2 ) Don't throw your used vanilla beans away. you can take the bean out of the custard, wash it off, and put it into a jar with sugar and make vanilla sugar for your coffee or baking. And here is a lagniappe for you...I put used vanilla beans in either rum or Everclear ( legal white lightnin ) to make homemade vanilla extract.
    Keep up the good work!

      @@CharlieTheCookAndrews It's interesting that liquors generally enhance foods that are grown in the same areas as the liquor is made. Rum complements tropical fruits like bananas, mangos, papayas, and pineapples. And who doesn't love frozen strawberry daiquiris?!!!

    Your recipe is very much like what I have used for years, except I don’t use the vanilla bean or food color. I was always so proud of our “old family recipe,” handed down from my mother, handwritten and barely legible after over 50 years in my possession. Imagine my surprise when I discovered it was identical to the recipe on the Nilla vanilla wafer box except for using corn starch instead of the flour specified by Nabisco. But it doesn’t matter. It is still a terrific recipe and a “command performance” dish when we gather for family holiday meals. Always enjoy your videos! Keep them coming.

    I’ve been baking it for years but just like technology, cooking methods change as well. I like how you didn’t use the double boiler method because not everyone owns one. I’ve never used the freezer method. I think it’s because my pudding recipe thickens up pretty quickly. I use flour instead of cornstarch but I’m going to try your technique and see if it’s easier than what I’ve been doing. Thanks again.

    Thanks for the recipe. Pure vanilla extract can be used in place of vanilla beans, but in cases where the beans are being steeped in a boiling liquid, such as cream, add the extract off the heat; otherwise its flavor dissipates.

    • @CharlieTheCookAndrews
      @CharlieTheCookAndrews  4 ปีที่แล้ว +1

    Great video, and thank you
    Question? I was taught that a custard is actually COOKED since we are using raw eggs. In other words, bake dish in oven. Was this step omitted unintentionally or is it enough to temper and return to stove on simmer for 3minutes

    • @CharlieTheCookAndrews
      @CharlieTheCookAndrews  9 ปีที่แล้ว

      Thank you! Yes I believe that it is enough to temper and return to the stove and let simmer for 3 minutes. So far I haven't gotten sick lol Yes you can bake it for 15 to 20 minutes if you like. That step
      is optional. :)

    I use the same custard method and ingredients that you do, but I make a bit more of it, enough to completely cover the cookies and bananas and then bake it until the custard softens the cookies and bananas and forms a firmness similar to that of a bread pudding. And then the meringue goes on last under the broiler. I'm not sure when these unbaked crunchy cookie banana puddings started but I never made of one of them. My banana pudding I always baked thoroughly. So my recipe is exactly the same as yours except that I bake my pudding.

    • @CharlieTheCookAndrews
      @CharlieTheCookAndrews  7 ปีที่แล้ว

      Wow cool. That's a good thing. Banana pudding has been around for a long time that's for sure. It is a true classic dessert! Thanks!

    • @theadversary1188
      @theadversary1188 7 ปีที่แล้ว +1

      +Bonnie Cotman I like a little bit of firmness with my banana pudding as well but not too firm. As long as my custard isn't hard, then I'm fine with it. How long do you bake your custard for before putting the meringue on top going into the broiler?

    • @bc1248
      @bc1248 7 ปีที่แล้ว

      The Adversary Bake it just until the custard is firm, about 15-20 minutes in a hot 350 oven and then add the meringue and let it go under the broiler until it's set and well browned. The cookies will be so wonderful and soft and the banana flavor of the bananas will come more alive.
