Saren's speech actually turned out to be easier to work with despite, or in fact because, there was a lot less of it. His voice lines generally all maintain the same sneering tone, whereas Shep adopts a bunch of different tones depending on the scene and context.

I'll be real, I've combed through the games ost to try and find what that song is playing at Sarens suicide. If anyone knows what it is please let me know
So, I don't know about an official title. I pulled the audio from the game files using Sound Explorer from the Legendary Explorer suite of tools, and the file (titled "end_70_saren_suicide_total.wav") includes the sound of Saren's board, gun, and the glass breaking. I have not seen a file with *just* the music.
