Let us normalize not calling all white sauce pasta as carbonara. Creamy pasta will do. Nothing against sa food evolution pero respeto pa rin sa origin, lalo na't part ng culture yung way of cooking and recipe.

In Italy we have never eaten such a recipe like this. That's NOT italian Carbonara! You are doing all wrong or probably you are doing another filipino dish, not italian Carbonara. I think you have never been to Rome (Italy). Please visit Rome to learn how to make a real italian Carbonara.
That wasn’t remotely Carbonara. Literally everything you did was wrong. Watch Vincenzo’s Plate to learn. First off you don’t use bacon but instead either guanciale or pancetta, and definitely no ham. Next no onion and garlic. Try to use a non orange coloured spaghetti (it’s not noodles). Also don’t cook the spaghetti so soon. Where were the eggs and pecorino or parmigiano ? Mixing them makes the cream when mixed and a little pasta water is added to the mix. Then why mushrooms and especially canned mushrooms. They don’t belong in this dish. Why condensed milk and then also cream. Neither belong in Carbonara. The fake cheese you used at the end is also so wrong. About the only two things you did correctly was add the pasta to the ‘sauce’ and use black pepper. Please learn the basics of cooking authentically and don’t call this dish Carbonara as it wasn’t remotely that.
This style is called the Filipino version which is loved but everyone in that country. Everyone is entitled to cooking their own version, who do u think u are
It is a dish called Carbonara. It isn't necessarily Italian Carbonara or DOP Carbonara. I am excited for the day when you learn about the Filipino dish, Paella Valenciana, which is made with glutinous rice and coconut milk.
No Carbonara is as I described. This Filipino dish wasn’t that. End of storey. Filipino’s might enjoy it but I seriously doubt anyone else would. I will pass on the Filipino rice dish as that too isn’t for my palette. Paella doesnt have coconut milk in it. That’s for Asian rice dishes. You’re confusing food cultures.
