    I've had my Bosch for several months now and just starting to get comfortable with it. I don't use it frequently like you so you'll probably get used to it much quicker. I felt clumsy the first couple of times using it (like getting the lid on and off, etc) but now I'm now accustomed to it. It has its quirks but you'll find yourself getting used to it. I let my dough rise in another bowl but I like to hand kneed the dough a little bit once I get it out of the bowl just to get a feel for its smoothness. Always did that even with my old KA. I like the power of Bosch over KA though I find myself doing the small stuff by hand (old fashion hand mixer). But doing small batches/cookies/cakes by hand was even true for me with my old KA. Will be interesting to see how you do with your new Bosch is upcoming videos.

    I’ve been very pleased with my Artiste so far. I only make one or two loaves at a time. And the bread dough hook works fine for my cookies, also.

    I just recently bought a Bosch and some folks are saying for cookie dough skip the cookie paddles and stay with the dough hook. I personally haven’t given this a try yet (trying to reduce my calorie intake 😂). You may want to experiment with this if you haven’t done this yet.

    ABSOLUTELY LOVE ❤️ my Artiste. Use it for everything. Upgraded from my KA to this because home milling beat the KA to death. No, it didn’t kill it but it got hot. Artiste doesn’t even blink. For me, I LOVE the plastic bowl. It is so easy to clean and the lid completely sealing unlike top fed mixers is wonderful. Lol and Alexa is the best kitchen timer.
    Best mixer is my best kitchen purchase in a long time.

    I am just starting my fresh milled wheat journey after a lifetime of baking with storebought flours, so am super thankful for all of your info and tips! But I'm commenting on the background... are those karate belts on the wall? We did the exact same thing with my son's belts 20 years ago. Now that he's flown the nest and married they adorn the wall in our laundry room. Love it!!

    I got this mixer (and for a great price during Black Friday) and I LOVE it. I really am not very interested in using it for much other than bread so I'm super happy. I had JUST ENOUGH room on my counter for it in a very handy place, and I've been amazed to learn that I can use it (on the slow speed I like to use it -- which is mostly just "1") -- and it does not wake up my housemate whose bedroom is right off the kitchen. YAY....(coz for her own very good reasons she sleeps really late but is also a light sleeper). I have to mill my grain the night before (because that WOULD wake her up), but since I'm mostly into making sourdough bread I can usually take care of all the noisy stuff in the evening anyway. SUPER happy with my Nutrimill Artiste mixer! (I HAVE used it for yeasted breads but my housemate and I prefer the sourdough in the end.)

      May I ask: For your sourdough baking, have you tried mixing dough for bigger loaves, like let's say 2 kg?

      I have kneaded dough about 2 kg (but not for sourdough) and actually now I normally do about that much, but it's pretty much my limit. I actually recently stopped making sourdough having noticed that the yeasted bread is giving much faster healing responses for me and my housemate. I was proofing my sourdough average 48 hours or more (including fridge) and I figure that it was losing too much nutrition staying uncooked that long. Just my hypothesis, but there you go. I AM keeping my sourdough starter alive and plan to make some yeasted bread with an added cup of starter just for the taste but still baking the bread within a few hours of the flour having been milled.
      To make the kneading process what for me seems easier, I spread some olive oil inside the mixer bowl with my hands before adding ingredients, then add the wet ingredients that I have already mixed together in a separate bowl and pour that into the mixer with the dough hook taken out. Then I mix the dry ingredients into MOST of my flour -- holding back a cup or two to add as it is mixing. Once I have the first flour (about 5-6 cups) put in, covering the wet ingredients around the mixer bowl I put the dough hook back in, put on the cover and start mixing. I go from there adding the rest of the flour in small amounts until it is coming off the sides. Sometimes the dough climbs up really high on the dough hook, but that hasn't really been a problem.     I have the Bosch and I move the dough into another bowl.
    I use mine mostly for bread. Hand mixer for cakes and cookies.

      I loved my kitchen aid mixer, but baking with it so much using the fresh milled flour, I burnt it up. Poor thing! However, I still can use it for making pasta, and using the front attachments! It just decided when it wants to turn on and off on it's own! lol. Thank you so much! Happy Baking!

      @@GrainsInSmallPlaces I can say, I have the artisan KA for everything little, and the Artiste for doughs. I also make my Grandmothers Spanish Polvorone cookies , and the KA could not do it. ( Grandma and Grandpa would hand knead it for a long time). The artiste makes the lightest fluffiest cookie. It handles the Huge batch. So I would say, it is for large and heavy doughs. Cookies are great with the dough hook. I prefer it. My Kitchenaid is on the counter ready for anything for an average family treat . I love the pasta attachments.

    Very nice video. I have 3 KAs, Artisan, Pro 6 a!d 7 qrt DC motor and the Bosch UP. For breads, it’s the Bosch hands down. Everything else I use a corresponding KA model, depending on the task. The new bowl scraper paddle from beater blades is a godsend for KA. No scraping whatsoever and the results are outstanding and minimal cleanup!!! I never use the Bosch’s mixing contraption/scraper - way too much trouble. However, it does a good job (large batches), but just like you found out- it is hell to work with.

    I have had this mixer in and out of the cart a dozen times. I think you've saved me some money. I have a larger Kitchen Aid pro, and plenty of attachments for it. But I've had a serious case of FOMO with the Bosch, Artiste and Ank mixers. I make all kinds of stuff, and mostly make sourdough bread. I'm sure it's a fine mixer, but I think I'm going to be good with my KA. Thanks so much for the honest review!

      Welcome! ❤ I want to be honest with my reviews, and this one is an amazing mixer, but as with everything else, not every appliance is right for everyone! So, it depends on your primary use, and your preferences. What works for one person may not work for another. And on the other hand what one person dislikes, may be what someone else loves! That is why I am so happy there are so many choices out there!

      I love the Ankarsrum wouldn’t trade it for a new car!😉 my KA just could not stand up to my bread making with fresh milled flour. I loved that mixer but it now resides on top of freezer in garage, I can’t part with it too many memories from day one to 34 years later retiring it. It even went to Kitchenaide for a gut make over ( which it was never right after plastic guts I think was the replacement) but my Ank was a gift for Christmas right after the mill purchase. He saved for a bit to get it but I’m so thankful and so is he after the bread comes out of oven!

    I have the Bosch Universal Plus, it works great for everything, without replaying your video on the measurements, I went and measured the unit, it is less than 11 inches high including lid, 11 inches deep, and 15 1/2 inches wide including the motor for accessories. I put the paddle attachments on and the lid fits fine. That was your one complaint about cake making. Inside diameter of bowl is about 10.5 inches and inside height of bowl approx. 6 inches. The lid is identical to the 2 part lid that you have with the Stainless steel bowl. I usually do Pantry Mama's discard bread and double the recipe, have done 6 loaves no problem. It can do up to 14 loaves, so they say. They are both 6.5 qts warranty on Bosch is 3 years, Artiste 1 year in Canada. Price is more than double for the Bosch but I love mine. Love your videos, you do a great job.

      I am not sure what they changed, because I actually at first thought this was a brand new mixer. But, people let me know in comments that this was discontinued years ago, and brought back. But, I heard they made the motor stronger. The new model came out earlier this year, I believe. (At least that is when I heard of it first.😉

    I've had the Bosch compact for a few years now and love it. The KitchenAid was too cumbersome for my arthritic hands. I don't know what I'll do if my Bosch ever breaks as I don't like that center column in the bowl of the mixer you're demonstrating. Maybe use my KitchenAid hand mixer and make batter breads.

      I Love my little Bosch compact as well. I did not love the middle shaft in the mixer either. But, I now have an Ankarsrum, and have been loving it. However, I will still keep my Little Bosch compact for smaller jobs!     I really like your videos! I thought your unboxing of the artiste was awesome. I had just ordered mine when I saw it and I did not have a delivery date yet. I now have it but have not opened it yet. I made Sue Beckers Zojirushi recipe bread and have finally gotten a nice loaf. Milling is new for me. Using a mockmill 100 and very happy with it. I have had some physical disability is why I went with bread maker vs hand kneading. I wish I had seen about the Artiste first!! I would not have bought the Zojirushi. In fact the Artiste is a bit less expensive!! I think I would rather bake my bread in the oven and also have the ability to make different breads etc with the artiste mixer. A Bread maker is VERY handy in hot weather (so I WILL get use out of it for sure) I love the bread makers but their timings are all for store bought flour!! Zojirushi does have the ability to set your timings. Plus my kitchen is small with limited counter space. Any way a Live unboxing would be great for interaction but I will be happy with your unboxing regardless. Anytime is good for me with some advance notice please. I live in Virginia

    I have the Bosch Universal Plus (purchased second hand) and I have found that my home milled flour bread dough needs to be a little stiffer in order to knead the dough efficiently. It should just pull away from the sides of the bowl, rather than stick to the sides. I also never make less than three loaves worth of dough in it. Less than that does not seem to work as well, even though I do have the dough hook extender attachment for it. I am fine with that, since more dough at a time is the main reason I wanted the mixer. The bowl is the same size as the Nutrimill Artiste’s bowl, so some of this information may apply for both.

    Stupid to pull the Compact. It was my first stand mixer and I still have it.
    I now use an Ankarsrum. I also have a BUP but haven't used it yet. It's interesting that you need to use the cover with the Artiste because I've never used the cover on my Compact and as long as I reduce the speed on my Ank, I have no problem with ingredients and the bowl parting company. I think you'd like the Ank because its action tends to require less flour than the recipe calls for but the dough isn't as sticky as what you're getting, i.e. you achieve a soft loaf with easier-to-handle dough. Regardless, very nice demo--enjoy your new mixer! I'm a moderator on an online list for mixer owners and several of our members are looking into the Artiste because they're finding their BUPs a little too big but want something with more capacity than their Compacts.

Like the Artiste and BUP, there's a bit of a learning curve but the proper bread technique is just a little different than what you do with your Artiste, so you're already on the right track.       Incidentally, I like to rest my whole-grain dough for a bit but I wait until the yeast is added and after I've gotten "the doughnut." Not so different from what you do.

    Hi there. I'm glad I've found your channel, as you have some really good recipes. Thank you! Do you prefer the Artiste mixer to the Bosch Compact? A friend is selling her Compact, and it includes the blender, slicer/shredder, food processor, meat grinder & sausage attachments, nut graters, cookie presses and citrus juicer. She's asking only $135 for all of it. Just wondered if you think the attachments are good. The mixer itself seems to do a good job on cake, and I've seen your oatmeal & honey bread recipe, so I'm guessing it will also be good for heavy cheesecake batters? I'm really considering buying it.     I like lives because I can ask real time questions, but most people do them at dinner time. I guess cuz of work schedules, but I am never able to watch due to dinner prep and meal time. So... I guess if you choose a live, please do it after typical dinner time or maybe a weekend. Thanks for the review!

      @@cynforrest I hope you got it. I had the KA pro and burnt mine out with making our big batch of Spanish Cookies. We also started doing all sourdough bread. SO between the two, it just died……. I got the Nutrimill Artist and LOVE IT! I wasn’t crazy about all the paddles and plastic, So we got an KA Artisan six months later. I missed the KA for the ready to go cakes, cookies and I make pies etc. Safe your PRO!

    I had pretty much the same experience with my artiste. I got it because my kitchenaid couldn't handle dough and the artiste makes dough like a champ. But I still use my kitchenaid for everything else. I love my artiste but if you don't make a lot of bread dough then its probably not worth it.

      I agree, it is best for bread and yeast dough recipes, which I do a lot of, but I also do a lot of the other things too! I LOVE my little Bosch compact for those other things.     Leave it in mixer it works. I don’t spray just put lid on. I have Ankarsrum but basics are same. I take my roller and scrapper out put lid on let first rise it sticks to side no problem I like my dough sticky. Make softer lighter loaf

      They are both great mixers. I have been loving using my Ankarsrum mixer! But, there are people who love each mixer! The only pasta attachment I know of that is available is this one

      The Bosch is a bigger machine than the one I am using in the video, so it probably is fairly sturdy so it doesn't move much while kneading. I hope that helps!

      Not awful, probably the same as my other mixer. Everything seems to clean up pretty quickly, as long as you get to it right away and don't let it sit and dry on there, of course, 😆

    In the last 27 years i have gone through 3 KitchenAids. The last was the large professional model. They are just not made for everyday bread makers. My opinion.
    I am looking at the Ankarsrum. I have heard nothing but positive. I need a mixer not afraid of 8 cups of flour or to go past speed #2.

      Yes! I love my kitchen aid for some things (like pasta, and the shredding attachment) BUT, it just doesn't hold up to fresh milled flour. I do not regret my Ankarsrum mixer purchase at all!       Hi, my name is Kara. I don't have a Bosch mixer, but this is for the Nutrimill Artiste mixer which is very similar. The noise is from the motor running. I hope that helps!

      All Bosch pieces can be used on the Artiste. It is so cool. I have the Bosch metal bowl and the Plastic one from the Artiste. I really love the Artiste.

      No, it is still going strong! My hubby just always notices when I make a larger batch of anything I have to either get 2 mixers out, or take double the time to make it twice separately. So, we thought we would swing for a bit larger mixer. I still LOVE my little Bosch Compact, and if they ever redesign or put it back on the market, I will be probably the first in line to pick up the new model. I will still be using it for smaller batches, and non bread type things. 😀

      I am definitely going to switch to instant yeast as soon as I use up my active yeast. I'm SO excited -- should be getting my Nutrimill Artiste in a week. I have been baking bread for something near five years and have gotten more than weary of kneading dough to the point I just didn't care anymore. I just wanted to eat the bread no matter how poorly the loaves came out, haha. Now I will be able to make PRETTY loaves! (Been home milling -- with a BlendTec blender -- for the past couple of years. I am thankful that works, because it is hard to afford all the great appliances. (Got the Artiste with the Black Friday sale for $120 off -- and even that was a huge stretch for me!) Thank you for showing that recipe for the honey oat wheat bread. It looks FANTASTIC. Seeing your demonstration was helpful for me! I think you said this is a "newly updated" Artiste and I am curious what you meant by that.@@GrainsInSmallPlaces

      I hear a lot of the attachments to the Artiste have been known to break due to some of the plastic parts, but people like me who use it mostly just for bread (or pizza crusts) are happy as clams! I also hear that the more expensive accessories that work for the Bosch mixer fit with the Artiste, so if I cared about the accessories I'd probably save up for the Bosch attachments that fit with the Artiste. MANY people leave the lid/cover off when they are kneading -- even when not filming -- so I appreciate it that you made that boo-boo of turning it on before you put in the flour, so now I know to be careful at least until the flour is in there too!

    Why do you add the yeast in late?

      I like to add the yeast in after the autolyse, because once I add the yeast is is "activated" So, if I need to autolyze for a longer time, or forget about it, or need to run errands, then I don't have to worry about it. Once I put the yeast in the rise timer "starts" I hope that makes sense!

    I think the dough was over kneaded in the second batch. I think at 8 to 10 minutes would have been perfect. I have a Bosch, 15 minutes is too long. When bread dough is kneaded too long the gluten starts to break down. This has happened to me before.

    I have the Artiste and am so disappointed with it. If I make a batch of bread with more than 5 cups of flour it always shuts down because the motor overheats. Save you money and buy the Bosch they are not the same at all my best friends have Bosch and they never shut down, so by trying to save money I need to trash this one and buy the Bosch, the only upside is I will have an extra bowl.

      I am so sorry to hear that. I did end up with the Ankarsrum mixer, and it can handle very large batches of dough. If you are interested in the bigger Bosch and you just got your Artiste, I would recommend contacting Nutrimill and see if they will allow you to exchange it. It doesn't hurt to ask.
