We recently upgraded our tilt head artisan Kitchenaid to a Kitchenaid bowl raiser KSM60 for $350 (all metal gears, no sacrificial gear) and we're very happy with the results. The kneading time went from 30-35 mins to 10-15 mins. The 6 quart bowl with the spiral dough hook can make a variety of amounts. If a kitchenaid doesn't already pass the dime test, you've just got to adjust it so it does, and it'll handle small amounts well. We just throw it all in, and once the dough is starting to come together we stop it and use a spatula to get all the extra dough off the sides. I've noticed the earlier I do that, then it'll get done around 10 mins instead of 15 mins.
I am in Alberta Canada and I have to add about 1/2 c flour prior to kneading process, then I knead on 1 for 9 - 11 minutes depending on the weather. My bread turns out beautiful. Yes, I use fresh milled flour and I have 3 mills, the Classic, the Harvest and the Junior in case of power outage. I want to get your cookbook. Thank you Cara.

I think it's not quite fair to decide that yet, because I am still learning and getting used to the Bosch. But, they are both amazing mixers, and made with quality that will last a long time, and they both will mix large batches of dough with ease.

I’ve been using your recipes for almost a year and when my dough is a bit wet I imagine you on my shoulder saying “you don’t need to add more flour! 😊”…after watching this, I realized it’s a bit more nuanced than that and for a wet dough like this, a tiny bit of flour might help. I have this exact mixer :) Thanks for the tips! I’m also noticing how my dough changes season to season so as I get more confidence I will know how to adjust! 👍🏼

just a heads up, mix your recipe for this no less than 15 minutes after your soak and you will see the dough will come off the bottom and sides of this mixer and you will enjoy using it even more. I use your recipe and you won't have to keep going up and down with the flour. I mix 20-25 minutes on 2-3 with an occasional side scrape. Under 15 minutes and it will look like your pre soak auto.. You saved me time now time to return the flavor...ty

Sugar water works good as a basted topping on your fresh baked dinner rolls. It just adds a touch of sweetness to your rolls. By the way, I have ordered your book and it should be here Thursday. I have had the most success following your methods.

HI there. Your rolls look delicious, so thanks for sharing this. I am debating between the plastic and stainless steel bowl for the Bosch. The SS one doesn't look like it has a rolled lip. Is the edge on it on the sharp side? And since you have an Ankarsrum, do you think the SS Bosch bowl is as sturdy (heavy) as the Ankarsrum bowl? Thank you.
I sure would like to see how easy (or difficult) it is to clean the bowl and plastic center post of this mixer, especially where they come together. The Artiste mixer has a seam at the bottom the plastic bowl…and I worry about stuff collecting there. Thank you for the lovely recipe. I plan to use it next week!
I haven't had any issues with cleaning it, the bowl can also into the dishwasher. My pleasure! We love this roll recipe, it is always a crowd pleaser! :)

Thank you Kara for using the Bosch. That’s what I have. Will the same be for the sourdough if I’m doubling the recipe.? in other words. Should I use double sourdough to be 115×2 or what amount should I use instead of the yeast if I’m doubling the recipe thanks
If using sourdough, I would double the whole recipe, including the starter, But, I wouldn't do an overnight ferment in the fridge. I find that fresh milled flour sourdough tends to over-ferment if so. Let me know how it goes! Happy Baking! :)

I guess it was meant to be. I kid you not, I'm in the process of making your rolls from your cookbook 😂 They are shaped and rising. Then I just saw your video. I have this mixer in white. I love it for bread doughs. It's definitely a work horse.
I'm really wanting either this one or the Ank. I keep going back and forth. It's not a small investment and certainly not one i want to regret because i found out the other would have served better. So I've not bout either yet. I'm waiting to hear a better comparison of the two.
Honestly, you can't go wrong with either one. They will both get the job done without struggle. Also, both built to last. The rest is just preference, and there are many people on both sides of the aisle. The Bosch is quicker at getting the dough kneaded, and the Ank is gentler. I would be happy with either one! :)
Just transitioning my sourdough to fmf. Grain mill on order. I am going to order a Bosch. Have you compared the plastic bowl with the stainless? Only $50 difference so stainless seems to be a better choice. Im going to add the baker's package. What would you choose?
I think they are both great! The stainless is wonderful because it is metal, but the white plastic bowl is less likely to have dough stick to it. The bakers package is great for cookies and cakes!

We make it work! lol. I did retire my little Bosch Compact this year, so it's no longer traveling with us. We do have a 42 FT Fifth Wheel, and luckily it has a decent amount of storage. :)
I cannot imagine dealing with that center post every time I use the mixer. The Ank is full open and I love that both for adding ingredients and for retrieving the dough when it’s done not to mention the ease of cleaning a solid flat bottomed bowl. I never use anything but roller and scrapper as it first came out with just that and for many years. I weighed out the difference before I purchased an so pleased with my decision it was the right one for me. I’m sure others have their needs met with the Bosch, after all still a free country 😉 love your cookbook, just noticed today no pie crust recipe in it that means we need another edition😂 soon. Please.

It does not have a rolled lip, but I haven't noticed it to be sharp either. It is pretty heavy duty, maybe not quite as thick as the Ankarsrum bowl.

I have the Bosch and for my climate (I guess) mine works perfect on speed 3 for 12 minutes. It’s crazy how it varies!

One of my favorite special gains to add is rye, I do about 10% typically, it actually helps keep the bread soft longer!

Ahhh, I see. I have not had my Bosch long enough to have tested all those things, but I plan to have some videos in the future showing it! :)

Any reason you didn’t melt your butter with the water as you do in your other recipes.
It can be done either way. If it's cold in my kitchen, or I forget to set out my butter, and it's not super soft, then I will melt it.
I keep hearing that if you make small batches (3 1/2 cups) it does not Knead well. Do you think your Bosch or Nutrimill worked best for you.
I think they are both great mixers, but I wouldn't do a batch smaller than that in either mixer. :)

I definitely WANT one. It may sound like a small thing, but IMO, the open bowl is a major PLUS.
