You are lucky! I can never quite get mine to taste the way they did when I had them in London, but I keep trying new ones hoping it’ll be juuuust right.
Yup. You can use phyllo pastry to, as long as you spray the pastry sheets with a plant sprayer of water, 6 inches away, to stop them drying out as you work with the dough
I would have one tip here and that is roll out the sides of the pastry before final assembly so you end up with half thickness of the pastry where the edges fold together so you end up with uniform pastry thickness.
Nice recipe I tried it and it worked really well I've been making sausage for a long long long time I'm 64 years old I had my own Deli and catering business and your recipe is very good and I definitely will use it again thank you

OMG! I miss a good sausage roll! Haven’t had one since I was in London 20 years ago. I live in Sacramento California. I’m going to give this recipe a try knowing the flour is going to be a little tricky because we don’t have the same flour here. I also miss a good scone. And fish and chips! Americans don’t know what they’re missing! (I also yearn, crave for an Aussie meat pie!)
David Lang I've just moved back to Canada from being in the U.K. And I am soooo missing the fish and chips in Fife, Scotland, and the amazing sausage rolls in St Andrews, the Cmberland sausage of Yorkshire especially from the wee farm shop in Barkisland, oh and the Cornish pastries and all the cake from the wonderful tea shops. Oh could go on and on. Living in a tiny town in the Rockies and there is none of this here! I'm so trying to survive.

S M oh I’ve tried many times but I think it’s the flour we have in the US. When I’ve made scones in Vancouver or Sydney, Australia I was getting better results. So I think Canada and Australia has flour that’s different from the US. Or I’m just not a good cook!
You are so freaking talented!!! I would love to have you as a neighbor. I live on Cape Cod in New England, and there are several houses that have wonderful people living here. One is a scalloper, one is an oysterman, one a lobsterman, and one a fisherman who catches flounder, cod, haddock, striped bass etc. One gal grows microgreens in a greenhouse for local restaurants. One owns a pie shop...where she sells both sweet and savory pies. One has a small farm and produces organic fruits and vegetables as well as organic free range eggs. Theres a fellow who owns a local food store and he brings butter, cream, spices, and things like cream of mushroom soup. He always brings a box or two of food for our pantry. Even the day old bread to make bread crumbs ! Sometimes he will bring 10 lbs of ground beef or pork. This is a tourist area where the population swells 20x or more for 8 to 12 weeks in the summer..The winter is just deadly quiet. In the winter, we meet on Wednesdays, to cook enough for everyone, then we share. Our local church has a massive commercial kitchen that we use. It is really a great social thing that we all do. We show up, and spend most of the day on Wednesdays together. Some might throw in the ovens a few dump cakes, or cobblers, made using the frozen berries gathered from the farm in the summer. Or, the kids might work on sugar cookies, and decorating them. There's always plenty of food, so after we all eat, then we make up some containers for each of us to take home, and we also make up some to drop by to some elderly neighbors. It gets us all out of the house in the Winter. Particularly when there is a huge snowfall. An Amish lady started this some 60 years ago. There's very few Amish people in the area here so it was wonderful for her to meet and befriend others. My grandmother was one of her closest friends. She rolled out her homemade pie crust until she was 95 years old. She canned jellie's, jams, and applesauce.She made incredible sticky rolls and breads. Anyway, this has been a long standing tradition here. I know my neighbors would go crazy trying to recruit you if you lived near us. Anyway, you absolutely rock !!!!

I made these! Using Richmond sausages (cos I hate them and was given them during lockdown).. I added all your spices. And made the pastry, though it didn't flake. Added too much Fennel on top, but they were well nice and very filling. Lot of effort though..

that recipe for rough puff pastry took me right back to when I was first married in the sixties when you were unable to bye flaky pastry in the shops and I used to make it all by hand, its a good recipe and all ways worked for me. Thank you for that.
Was interesting to see you make the pastry so quickly. when I was taught to make it at school, we would rub in a third of the fat then roll out and dot fat in to then fold to form the layers. this would take much longer. cant wait to try this recipe!!

I wish making the pastry was that easy! I think you have a very cold kitchen Gill ;-) I worked really quickly with fridge cold butter and iced water but still the butter had softened toward the last few "turns" and things started to get messy! I think another time, I would let the pastry chill in the fridge for half an hour before another turn and roll. That said, a brilliant tutorial and one other TH-cam chefs and bakers could learn from! Thank you Gill 😀
Thanks for the recipe, i am use to making it with toasted fenal seeds, dill and sweet parika in the pork seasoning mix and spring onions rather than chives, for breadcrumbs we use german rye bread. This is how my Oma taught me but i will give your recipe a try the crunchy fenal seeds sound really appealing to me and i wonder how plain breadcrumbs will change the flavour. Thanks for the recipe, i am use to making it with toasted fenal seeds, dill and sweet parika in the pork seasoning mix and spring onions rather than chives, for breadcrumbs we use german rye bread. This is how my Oma taught me but i will give your recipe a try the crunchy fenal seeds sound really appealing to me and i wonder how plain breadcrumbs will change the flavour.
