Sir, thank you for reviving my love of cooking. Your enthusiasm, joy, and energy in the kitchen is amazing. I have become so inspired by you that I've dusted off my chef's coat and have gone back into the kitchen making gourmet food for my family at every meal. I do it to relax in the evening after a hard day's work - because to me, cooking is one of the purest expressions of love.

Retirement, I know from Culinary Experience you deserve it, in a Chef’s career an 8 hour day is Part Time… People truly have no idea how many hours a Chef of your Expertise has worked. I did 48 years, I probably only worked an 8 hour day 100 times if that, and Sick days in 48 years I can count on 1 hand. Jean Pierre if it’s true I for one understand, I too loved cooking but a tough career, anyone wanting to be a Chef today and want’s a family life , Do Corporate Cheffing ❤

@@Johnny_Guitar I had the joy and privilege to grow up all over the United States. Every where my family lived I always ended adopting something of the culture of that area. We had the fortune to live in the Deep South for many years. We very quickly grew to love the people of the south and as a result I retain many of the mannerisms acquired while living there. “Y’all” is a sort of catch-all for a gathering of two or more people. It’s a sort of quick and semi-polite way to recognize everyone. There isn’t a day that goes by that I don’t miss all of my beloved southern friends and some of their cuisine… don’t miss the weather but I sure as hell miss the people and the food!

A nice addition is mix honey and dijon mustard to "line" the pastry - in between the pastry and the meat, in other words. Then grate some mature cheddar and sprinkle that onto the egg-washed pastry - by the time you have cooked that for 45 minutes, the cheese gives a wonderful crunchiness to the pastry. Sprinkle with cracked black pepper, sesame seeds or whatever floats your boat for extra yumminess... Another twist is to egg-wash the entire "inside" of the sausage roll and then sprinkle finely grated parmagiano onto the egg wash and then place the sausage meat - you get a wonderful cheesy border between the meat and the pastry. Either way, you get meat, cheese and pastry all in the same package. You will never buy another "supermarket" sausage roll again

I love your videos Chef! Every one of your recipes I’ve made has been delicious, and so easy a child could do it! I’ve learned so much about cooking from your videos.
Remember onion always first (unless you are adding bacon)!!😊.

Amazing once again Chef. Keep them coming as you are the best!! As a matter of fact I work with a young girl who just today said that she needed to learn how to cook. I without hesitation sent her straight to your site and told her there is no better teacher! Thank you for what you do.

I have a concern about what I heard during your video Chef. You mentioned something about your English being worse as you approach retirement. Selfishly, I hope you aren't thinking about retiring from your TH-cam channel because your videos bring so much joy to me, and I would miss them dearly. Please keep them coming! You are an absolute treasure!

You can’t imagine how much my cooking has improved because of you! Thanks!
Because I am from germany I can’t order from your store, and the Wüsthof, serrated pairing knife is only available in the US market.
So I did what anyone would do:
I emailed them and they said that they don’t make it anymore, but still have a few left in their factory, but cant ship them. So I will be traveling across germany to Solingen and get one!

Well, you've done it again. Thanks God, I just finished eating otherwise I would be in trouble! I have no doubt that is delicious, now I have to try this and make puff pastry, I never made puff pastry. Mom used to make it but now she doesn't know how to cook anymore, she would have to make it if she could..... now I have to make everything by myself. The sausage is piece of cake, the puff pastry not so sure, I remember mom work all day and we would eat it in in an hour if she would let us. She constantly kicked us out of the kitchen.😂
Thank you Chef, love your videos ❤

I have made lots of sausage rolls (not a chef by any means!) & I roll out the pastry & add the meat filling with a piping bag and oh the messes I have made - this is a much better idea - Thanks Chef!

Chef, I made sausage rolls this morning.
My goodness what a delicious thing this is.
I used what I had and I had frozen puff pastry dough and into my sausage I put herbs de province and then when I rolled them up in the sheets I put a layer of caramelized onion on top. Now that's very simple compared to yours but it's certainly was delicious.
So delicious you could eat them all in one sitting😂❤😊
