  • PAN DE YEMA/ EGG YOLK BREAD
    3 tbsp active dry yeast
    ¾ cup sugar
    1 ¼ cup warm water
    6 cups all purpose flour
    1 cup unsalted butter, room temperature
    9 egg yolks
    2 whole eggs
    1 egg for brushing the top
    Pinch of salt
    In a bowl, add 1 tsp sugar, yeast, ½ cup flour and warm water. Mix well and let yeast foam. In a mixer with paddle attachment, add butter and sugar on medium speed until creamy. Add egg yolks,whole eggs and yeast mixture. Beat until well incorporated. Add pinch salt to the flour and add flour to the wet ingredients. Switch the paddle for the hook attachment. Let the mixer knead the dough for about 10 minutes.
    Butter a large bowl and place the dough in the bowl. Do a few flips to gather the dough into a ball shape. Cover with plastic wrap and leave it to rise until it doubles in size. Place the bowl in a warm place without any drafts.
    Preheat the oven to 350 degrees and place parchment paper in baking sheets. Uncover the dough and punch it down and shape the dough into balls of 16 pieces of dough. Place the balls on the baking sheets. Place it yitď in a warm place and let rise the second time for about 45 minutes. Score a cut on top of the dough and with the last egg make an egg wash and brush over the bread. Bake it for 20 minutes, until cooked through and it is brown on top.
    PAN DE YEMA/ PÃO DE GEMA DE OVO
    3 colheres de sopa de fermento seco ativo
    ¾ xícara de açúcar
    1 ¼ xícara de água morna
    6 xícaras de farinha multiuso
    1 xícara de manteiga sem sal, temperatura ambiente
    9 gemas de ovo
    2 ovos inteiros
    1 ovo para pincelar o topo
    Pitada de sal
    Em uma tigela, adicione 1 colher de chá de açúcar, fermento, ½ xícara de farinha e água morna. Misture bem e deixe o fermento espumar. Na batedeira com batedeira em formato de pá, adicione a manteiga e o açúcar em velocidade média até ficar cremoso. Adicione as gemas, os ovos inteiros e a mistura de fermento. Bata até incorporar bem. Adicione uma pitada de sal à farinha e adicione farinha aos ingredientes molhados. Troque a raquete pelo acessório do gancho. Deixe a batedeira amassar a massa por cerca de 10 minutos.
    Unte com manteiga uma tigela grande e coloque a massa na tigela. Dê algumas voltas para formar uma bola com a massa. Cubra com filme plástico e deixe crescer até dobrar de tamanho. Coloque a tigela em local aquecido e sem correntes de ar.
    Pré-aqueça o forno a 350 graus e coloque papel manteiga em assadeiras. Descubra a massa, dê um soco e molde a massa em bolas de 16 pedaços de massa. Coloque as bolas nas assadeiras. Coloque o yitď em local aquecido e deixe crescer pela segunda vez por cerca de 45 minutos. Faça um corte em cima da massa e com o último ovo faça uma lavagem de ovo e pincele sobre o pão. Asse por 20 minutos, até ficar cozido e dourado por cima.
