  • Chouriço Caseiro
    15 lbs pork shoulder cubed
    ½ cup chopped garlic
    1 cup spice malagueta
    2 tbsp paprika
    4 tbsp kosher salt
    3 cups burgundy wine
    Sausage casing
In a large bowl, add pork shoulder, garlic, malagueta, paprika, wine and salt. Mix everything well. Cover and put the bowl in the fridge overnight. Next day fry a few pieces to test for salt and spice, add more salt or pepper if needed. Put your casing on funnel and insert meat into funnel. If you see pockets pierce with a pin and push meat to make a tight chouriço. Tie the ends and twist the middle to form the links. Place the links in the smoker for a few hours. When the color has become dark and the link has shrunk in size, it is ready to remove from the smoker. Cut the tips and let cool. When cool, place in ziploc bags or sealer bags.
Misture tudo bem. Coloque o invólucro no funil e insira a carne no funil. Corte as pontas e deixe esfriar.

Angela, I agree with you in that homemade Chourico tastes better than the bought ones. I too always make my own.

Hello love your channel I have a question you dont tie your chourico do they come apart for example in a pot of soup or it stays as one long chourico
