    Marion, here in Greece we fry the eggplant just like you did in some olive oil at first and take it out, then we add lots of onions and garlic and cook until golden brown and in the end we add the eggplant and some fresh tomatoes sauce . Let it slowly cook until the liquid evaporates and you have a heck of a dish🙂. So delicious guys

      Christopher Genethliou Yiasou Christopher, And we do the same thing with eggplant here in Greek America! I learned to cook from my grandmother, Yaiyia Eleni... I still dazzle friends and family alike with fabulous Greek styled eggplant dishes of all sorts. But like your recipie Christopher , I make everyday eggplant in same manner. Keep cooking!       @@waterandair its the Turkish dish called "Imam bayildi". We put feta cheese on top too a few minutes before its done to get nice and creamy😅

    Insanely good! Ok, it was a fail as I overcooked the eggplant in the pan trying to brown it, BUT, even mushy this was the best eggplant ever! I will make this agIn, and I will not overcook - it was indeed lovely, silky. Thanks Marion - really, sublime!!

    Delicious dish -- made according to the recipe with two minor substitutions: swapped out white vinegar for Chinese black vinegar to get a slightly rounder acidity, and used mirin rather than sugar. Will make again!

    This is one of the best recipes I've ever followed. I add wild mushrooms that have been cooked separately near the end of the eggplant's cooking time. So delicious, thanks Marion! I always buy Miso paste as a souvenir from little Japanese miso breweries/food speciality shops and it was so great to find another way to use the ingredient in my cooking.

    Delicious! Used vegetable broth instead and added cubed tofu, served over rice - the entire family enjoyed this meal immensely. As commented by my husband - I'd eat this sauce over anything!

    My meat-eating son who just tolerated vegetables has now become a vegetarian, and has stuck to it for more than a year, so this dish will be perfect to cook for him when he visits.

      @@fjp9 Lol, he’s gone back to eating meat. He found it difficult to prepare a veg dish that has most nutrients that he needed, as he is a fitness freak.

      @@squange20 got it. you can try recommending this to him if you like and if he is interested. try doing one vegan or vegetarian meal per day or once or three times per week. smaller goals like that are easier to hit, and you don’t feel as bad if you cheat. it can help his body to adjust easier than going straight vegetarian or vegan. it can also help with less consumption of animal meat and help with certain health issues like cholesterol, high or low blood pressure, etc.

    This is a great idea, thank you. I'd recommend you cook the miso sauce at a lower temperature to reduce the liquid as boiling it kills the miso!

      I agree! In Japan, when they make miso soup. They add the miso paste in right before they transfer into the bowl. Full oomph of umami goodness.

    Cut my eggplant pieces too thin and didn’t use enough eggplants. With that said, it was delicious! What a winner. Would love more veggie based dishes. Trying to add more in to our diets and this recipe makes it so easy. Thanks Marion! Stay safe and healthy 💜

    I AM AMAZED! i have never cooked with miso or eggplant before. i wanted to try something new and this is absolutely fantastic! i was doubtful at first but i went to the grocery store right away and picked up an eggplant. here i am, writing this comment while eating this dish with some rice!     I was a bit unsure about the smell of the miso paste as I was cooking (I've never used it before), but the flavour of the final dish was INCREDIBLE. An intense savoury explosion of flavour.

    Made this today! I used tomato paste because I didn’t have miso around. It tastes incredible! Paired it with some raw cabbage and cucumber for freshness and roasted tomatoes and onions for added richness. The eggplants themselves are already so rich though. This is definitely better than my usual stir-fried eggplant with some simple oyster sauce.

    mmmmhh, had this for dinner last night, Meat-free Monday, with sesame shallot pancakes and brown rice. It was so good. Making the chicken, sweetcorn and cauliflower soup for the rainy cooler weather in Sydney today. Thank you for helping me feed my family with delicious dishes.

      If u think this looks good , you should see some of the Asian recipes with spicy garlic sauce and minced pork ! If your vegetarian or vegan there's plenty to see with no pork or animal protein

    Hi Marion! Loved that you just shallow pan fry the eggplants. Deep frying eggplants are good but they can be very heavy. I’ll try this recipe later for lunch!

    Science Lesson! The reason salt cuts bitterness is because table salt (NaCL) will block the ion channels in the bitter taste buds so that it will not activate for bitter compounds. It does nothing to destroy what makes the food bitter.

      tr0ublerising then seasoning the eggplant immediately before cooking and adding salt to the cooking liquid would have the same effect. But it does not have the same effect as salting and then squeezing out that liquid. What gives ?

      @@mohitoness double whammy, the water draws out some of them and when you blot it you remove them from the eggplant. Next time you drink coffee, put a few grains of salt on your tongue before drinking a sip. You will see it cuts the bitterness and you did not directly season the coffee.

    The recipe turned out great! To avoid deep frying I usually drizzle oil over the eggplant before putting in the pan.

      their texture can be uncomfortable sometimes but if u cook it right. it is soft and juicy. Just one bite and the juices burst all over your mouth.

    Lady this is awesome! Made it because it is low carb (enough) for me and a nice break from meat. I figured I would have enough to take for lunch tomorrow but my kids who love carbs and meat inhaled this! I added a handful of zucchini noodle to cook in a corner of the sauce for the last minute before serving with your chili sauce. Beautiful!

    Tried this recipe. It is oh so good! Silky tender eggplants with spicy, savoury, tangy sauce with a hint of sweetness. I didn't salt the eggplants cos i was using japanese eggplants which aren't bitter. Didn't braise as long only 5 mins cos i didn't want the eggplant too disintegrate in the sauce or become too mushy (asian eggplants are thinner & longer in type & aren't as big so generally after pan frying or deep frying the simmering part isn't as long).

    Made this but I'm WFPB with no added oil. Instead of that great looking chili oil, I used some tiny minced garlic, red pepper flakes, sriracha, and a small amount of balsamic. Yum Yum!! Also, water sautéed the eggplant.

    This is so good! I just made it for lunch. It was a little too salty, but that might have been my miso paste or tamari. Cut it back with some more broth and thickened with starch, served over rice, and made a super tasty lunch. Next time, I'll try adding some potato or pork/chicken!

    There is a boutique restaurant in my city that offers a dish similar. They cut theirs in rectangles. And the chili's are cooked in. But so so so divine. Oh, I think they use the Japanese or is it Thai variety of eggplant? It is long and slender like zucchini. DO TRY THIS RECIPE!

    This was SO yummy and what a clever recipe - braised like beef but eggplant! The result was juicy, plump, flavourful and really brought out the best in what I think is a pretty tricky vegetable. Also lots of fun to make ❤️

    I knew this was going to be something special as soon as the sauce hit the pan. I made a couple of tweaks to suit my taste though. Dashi instead of beef stock, and red miso instead of white. It's so good you don't even need the chili oil, but if you have it the slight heat really makes this dish exceptional.

    I made this last night and it was so so so delicious and such a hit! It was slightly too salty/umami for me, I possibly overdid it on the miso. That would be the only watch out - taste the mixture before you add it to the eggplant to make sure it's not too salty. I'll be making this again and again!

    Definitely recommend using sake, mirin and sweet vinegar to substitute the sugar.
