    This is very nice! (I say) "Don't peel that eggplant!". I did exactly as shown here, but cherished the nice purple skin, so the "outside" slices were just cut cross-hatched with a sharp knife, and also the skin slices were fried longer. It was pretty and delicious, one of the best vegetarian things I've ever tried, easy to do. Leftovers seem promising, I already ate some cold. But a layer of this on top of hot rice was very nice, and I think not fattening! A little bowl of soup on the side. NICE!

    Thanks für this great idea!
    I had no sake at home & so I made the glaze with some fruity rum, mirin, soy sauce & some homemade vegetabel broth.
    Garnished with some chopped spring onions & some thin striped nori.
    The taste was awesome

      Average paid holiday leave in the US is about 10/15 days per year - you wouldn't get 45 days' leave even if you'd worked for 20+ years in the US. They let the greedy, selfish corporations run the country.

    Hello midnight kitchen San. Lovely video and thanks for the recipe. Here is a tip for when you have tripod issues; move on to still shots instead of moving shots. So shoot the bowl with the rice, make sure you’re holding the camera with two hands the body and under the lens to stabilize or on each side of the body if it’s a smaller camera. Then shoot the eggplant on top of the rice and then after you’ve drizzled the sauce etc. The eating shot can be done with the camera on a stack of books perpendicular or parallel to your body. Then depending on your editing software you can also further reduce the shakiness with stabilize the shot function. Great video regardless of technical issues 👍🏿

    This looks like a great recipe!! What kind of eggplant should I used? Japanese eggplant or can I use the Globe eggplants? My local supermarket only carries the Globe eggplants.

    What a way to waste water. Rice water is excellent wood floors, furniture cleaner and also very good for plants. Why would you want to discard the skin of an eggplant? That nice deep purple skin is filled with antioxidants (nasunin)? But then again you're using vegetable oil and white sugar so I guess you're not into health.
