I grew up in the fifties and my dad was a real fisherman. He would bring home fresh blue crabs and my mom would boil them and separate the meat. Then she'd scrub the shell out and set it aside. Then she's mix the crab meat with hamburger or pork sausage, a bit of cracker crumbs, one or two eggs, diced celery and onions, salt and pepper. She'd stuff it back into the shells and then deep fat fry it. It was the best crab I've ever eaten in my life and I've eaten a lot of crab cakes and they were all crap compared to the stuffed crabs my mother prepared. There was just something about the large pieces of crab meat and the nice fat of the cooked meat included. Then the deep frying added all the more flavor. Unfortunately she was in her 90's when I asked her for the recipe and she just gave me the ingredients and no amounts. Older cooks didn't measure much. They just tossed it all together and new how much they wanted by feel and appearance. I guess using pork skins instead of cracker crumbs would result in a very low carb almost carnivore dish.
I wonder if freezing for a bit could help with "binding" for pan frying. Gonna try this with tuna and report back. I'll tag ya on IG when I get to it!! Thoroughly enjoying your content!
