Tried making the cake yesterday the cake is soft and tastes amazing but it was to sweet I would suggest reducing the sugar if you like the cake with moderate sweetness.
I can testify that this cake is amazing. We tried a few versions as maryam would bring us pieces to taste and critique them. This final version is amazing. Maryams mum😊

A professional baker told me once that the less you beat the batter the tenderer the cake will be. Also butter milk is the best to use in a regular cake.

Hi Etido! :) Hmmm I haven't tried replacing the regular oil with coconut oil so I'm not too sure but I imagine it would work fine, you would probably just have a stronger coconut flavour :) and unfortunately reducing the sugar will affect the texture of the cake. You can reduce it slightly though if you wish :)
I watched carefully and MK is definitely using what in Australia, we call dessicated coconut. Something I have noticed about coconut in other countries is that it often is sold frozen or refridgerated and it isn’t as dry as our dessicated coconut. It is also sold sweetened or unsweetened, another thing we don’t have here in Aus. I found frozen ‘dessicated’ coconut in the freezer section of an Asian grocery store. It’s like freshly grated, so moist and delicious. However it was expensive. I’ll be trying MKs cake with regular dessicated coconut, I can’t wait to try it! One day I will learn to check for typos before I hit send!
I just noticed that MK calls for the same coconut to decorate the cake and there, it is obviously shredded coconut. So I am sorry if I am leading you astray but it def looks like a much finer coconut used in the cake
Hi Carole! :) Just to clear any confusion, I use threaded/shredded coconut for both the cake layers and the outside of the cake :) I haven't tried desiccated coconut myself but it should work fine! Might just have a little less of that crunch on the outside :)

Looks really good, I'm sure it tastes gooder!! Question: Can I use mascarpone cheese instead of cream cheese? I'm thinking the coconut flavour might be more pronounced as it doesn't have to overcome the taste of cream cheese..
Hi Anderson! I haven't tried my cream cheese frosting with a mascarpone substitute just yet so I'm not too sure how it'll work out but you can definitely give it a try! You may need less powdered sugar though, or you can also try my mascarpone whipped cream frosting if you prefer and add the coconut flavouring to that :)

Hi Ruqaiyah :) So happy to hear you're enjoying the videos! The best thing to do would be to wrap them well with cling wrap and place them in airtight container and then freeze them. Simply take them out the night before you're going to ice/sell them :) hope that helps!
Can o freeze the layer to icing in the morning? Or can icing the cake the night before and place in the fridge. Will that change the texture too much ?
