OMG, I ran across your recipe by accident. It's Christmas time 2018 and I was just telling my husband that I would love to make my mothers famous pineapple coconut cake for our family Christmas Get-together which will be at my house this year. I never new how my mother made this cake she passed away 2 years ago. When I saw your recipe I cried....I think my mother sent you to me. The only difference is she made a rectangle cake and it was my familes favorite. I'm going to surprise them and make it. So thank you and God bless you.

Carolyn I'm a professional Chef and Pastry Chef. I have watched many TH-cam videos of people demonstrating their home cooking techniques. Most of what I have watched is comical and full of really bad cooking and awful food at the end. You however are a delight to watch and your cake demo was spot on. Nice looking cake and I know just from watching it is moist and tasty. Good job and keep on cooking lady.

Hey Carolyn. I have been looking for this recipe forever. One of my Granmothers from SC use to make this for us all the time during the summer. No lie her cake had a shelf life of one hour. If you didn't get a slice when it came out the oven all you got what stories. I have never seen any of my Grandmothers cakes last a day. Your cake would probably last about 20 minutes at one of our family functions lol. Thanks.
This cake was AMAZING. I will definitely be making it again, and especially for holidays. I poked some wholes in each of the layers before I put the filling on top so that it would seep into the cake a bit. It was wonderful :)

I make cakes all of the time, I haven't been able to in the past 2 years, because I've lost the ability to walk. I've always been disabled I thought I would be ok not walking I thought I was ready but you never are truly ready for these things so, I don't have a disabled kitchen setup, we now have the money to redo the house I can't wait for my kitchen, and I'm so excited, because I'm going to be able to bake. I made this today for Father’s Day and it was the absolute best cake I have ever had! It is so fluffy similar to angel food cake and the filling is so creamy! This is soooooooooooooooo amazing and my dad and husband loved it! Thank you for this recipe I am defiantly subscribing! God bless

That is possibly the most delicious looking cake I've ever seen made on TH-cam. My Georgia mother was famous for her Coconut Cake with 7 minute icing, and this brings back so many wonderful memories.
