I got tired of washing out the muffin tins with some stuck on eggs, so now I make a whole small cake pan and cut them in squares!! So much easier, but you don’t get a variety! I make mine with sausage, colored peppers, green onions and then pour egg mixture on top!! Then I bake at 350 for about 50 min!
I was going to do that also I recently ordered some silicone molds $0.97 on clearance at Walmart never use silicone before I must say I did butter the silicone some say you don't have to but I did oh it was easy peasy no mess
I make it in silicon cups. My favorite is with chopped spinach, French feta cheese (valbreso) and finely chopped jalapeños. My husband loves it with potatoes, onions and jalapeño jack cheese. Another way to add onion flavor without actually putting onions in: add onion powder to the eggs with a little Himalayan salt and black pepper/ red pepper.
I’m on meds that I can’t take on an empty stomach and I’m a zombie in the morning. I’ve been making these ahead of time to take my meds with and came looking for ideas to change them up some. These are great ideas. I’ve been making asparagus, cheese, onion ones and spinach, mushroom, onion ones. I just grab a couple straight out of the fridge and eat the cold with a glass of almond milk.
You're so inspirational honestly. Depression makes it hard for me to cook and eat and stuff, but I watched your videos for the first time yesterday, and I cooked today. Subscribed!! Thank you!!

Hi Dani, I just wanted to say thank you for this awesome channel. As a college student it's really nice to have a place to get some simple, time saving, and interesting recipes to try out - it helps so much! It definitely gets me motivated to be eating cleaner, and healthier. Thanks again!

Love that tip about buying only the whole egg organic. Would love to see a video giving out those kinds of tips. Where to spend your organic budget and why.
Thanks for sharing, they look very delicious....Yummy😋 Now I have a few more ideas to play with when I make my egg muffins. I usually make mine by wrapping turkey bacon in the cups with spinach and cheese, and my egg white mixture is with some Greek yogurt and garlic salt, also very delicious. This was the first time I heard about egg muffins and they sounded so delicious that I made them right away. I added spinach leaves and red pepper and these are so great. Thank you! Such an easy healthy thing to cook!
Very educational and energetic presentation. I cook these for our kids to grab for snacks, better than chips and junk. I always look here for other ideas just to change it up a little, you gave a wonderful demonstration and provided details on nutrition as well. Thank you
OMG, such great tips Dani. Thanks so much! Can't wait to make these. Just wanted to mention that sometimes I add a bit of whipped cottage cheese to my beaten eggs and they become very "fluffy". I wonder how that would work in this recipe.
I make these all the time. I use the large muffin tins and put a little cheese on the bottom to help it release and stay together. I have arthritis so I use a lot of anti inflammatory veggies. Easy breakfast. Just heat and eat. Good way to start the day. 😊💖🦋🕊
Girl, you killed it!!! This is the best video to teach us hiw to make these beautiful cute egg muffins. Simply adorable and delicious. Thank you soooo much! This is perfect for a tea party or a little brunch hosting. Love it!!!❤ you are awesome!

@@worldcitizeng6507 Eggs cook pretty fast in the microwave so you'll need to experiment with the time for your own personal tastes; but I have found that 1 scrambled egg (with or without anything added) will cook in about 45 seconds. If you cook it for too long it'll be rubbery and gross...unless you're into that. Lol! Also, eggs expand A LOT in the microwave. They fall almost immediately when removed, so don't freak out when you see it expanding past the height of the container it's in.
You just saved our breakfast! We had been making one big egg pie and cutting it into 8 slices, which means we were tired of our breakfast about day three :( And hubby likes things spicey, whereas my taste buds, not so much. Now we can have both!
I love love love these muffins. Thank you so much, this recipe has been helping me a lot. My husband is a picky eater but he loves these muffins for his breakfast at work. Thank you 😊
I'm very late to the video, but I thought I would tell you how I do these fast in the morning. I'm afraid I had never thought about them as snacks to have on hand. I use a small round 'tupperware' type container - forgot the name brand, but try to get bpa-free - about 3" diam. Like you, I put in my veggies and whatever (usually ham or salmon for me) Crack in one egg, add garlic powder, and an herb of some kind (usually cilantro, basil, tarragon or thyme) top with grated cheese and then scramble it up really well with a fork. Then just put in the microwave for 1 min with the top on very loosely. And it's done when you hear the beep. Note: this size round fits on an english muffin for those who want that. If I want more to eat in the morning I use a larger container and two eggs. I find that usually take 2 mins. They certainly don't puff up as much as yours, or more I should say, they puff and then deflate. I also find that if I use frozen veggies (I like to keep frozen onions and peppers in the freezer) it help to microwave them for about 15 - 20 seconds before adding anything from the fridge, like cheese or the egg. Then just microwave as above - 1 min per egg.
Love this idea and tried them right away. Thanks so much for sharing, My one bit of advice for all who try this after me .... do NOT forget to spray/grease your pan. I forgot. Mine was a stuck on mess. So bad I tossed the pan rather then even attempt to clean it lol ... will be making these again as soon as I get a new muffin tin :)
Just made egg muffins for lunch withy husband. Mine turned out massive! I used non dairy butter to oil my 6 hole muffin tin which is deep. Kept two for my husband's lunch for work. Super easy but took me a bit long to do but I got now will be doing more in the future!
Major OMG‼️ Made these using baby Bell peppers, yellow onion, mushroom, & tomato, all spiced up, and topped with a little bit of cheese. Absolutely incredible and what a great idea. Thank you 😊
I’m glad I found your website it’s great to learn new healthy ways to cook with healthy ingredients. I made your oatmeal apple muffins they were delicious. Your recipes are easy and I will use them. Thanks!!
Dani, when you send these in your kid's lunchboxes, do you pack them with an icepack? Or is it okay for them to just come up to room temp by lunchtime?
I took fried egg sandwiches for lunch for Years and ice packs didn't exist. I never got sick. They even had mayonnaise on them. Of course this was in Chicago, not Arizona.

I use the left over cheese from my cheese platter that i have with my wine from friday/saturday evenings for meal prep of these egg cups on Sunday, chive herbed goat cheese and pepperjack are delicious options! A little goes a long way, use just enough to flavor your egg cups to keep the cals/fat low...
I usually put things like leftover rice or potato, carrot, spring onions, either cabbage brussel sprouts or broccoli, cheese, spinach or peas, chili's, also veggie meats like Lightlife sausage since we don't eat pork. We sometimes add a little bit of tamari into the uncooked egg. Rare occasions we add pieces of bread and vanilla and almond milk for a mini bread pudding.
Thanks Dani this is what I need been watching u for couple years now n yesterday I made the pumpkin muffins thanks 🙏 thanks for sharing ur beautiful family love ❤️
