Can we add mozzarella instead. One more thing after they are baked, they shrink down, so why does it happen because of less vegetables or because no flour is added?how much veggies should we fill in?Can we add cooked chicken also?
Yes, you can use any cheese and veggie you like. I prefer the veggies to fill the muffin cups at least a half-way full, but you can go up to 3/4 cup full. Then pour the eggs over the top. They shouldn't shrink too much when you use this water bath method. (Though veggies do naturally shrink some when cooked.)
