I made this last night and have to say that this really is the BEST mashed potato recipe ... ever! I've tried all the variations of mock mashed potatoes using cauliflower, radishes, etc., but none come close to the taste/texture of this kohlrabi-based dish. It truly has the texture and "feel" of mashed potatoes, but more-importantly, it tastes very close to the real thing! Although Kohlrabi comes from the cruciferous family (cauliflower, broccoli, cabbage, etc.), it does not have the strong cruciferous smell that the others have. My preparation came out a bit "wet", so I'm going to try what we do with cauliflower in the micro (uncovered) to see it it won't cook and dry the kohlrabi a bit. Can't wait to make more of this with amendments like garlic, cheddar, herbs. I am also going to try taking Kohlrabi to the next level ... Mock Potato Salad! Thanks again Tom for such a great recipe!
Finally got around to making this. I put the unpeeled kholrabi in the pressure cooker and when it was done, it was easy to peel with a knife. It was more like shaving the exterior off. The cooked vegetable was easy to cut up in cubes, mix with butter and cream cheese and use a stick blender to mix. A definite home run recipe. Thanks.
@@claudiafiore2789 Hi, I just get the pressure relief valve rocking hard for 10 minutes, then lower the heat to low just to keep the relief valve moving slowly for another 10 minutes, then I shut off the heat and let it sit. Once the kholrabi is cool to handle, I find that I can just twist off the husk with my hands...it has become easier than peeling and the inside is soft for mashing.

I have eaten color Robbie for years normally I eat it raw I peel it and make it in the sticks and put them in my veggie trays and everyone always ask what they are they’ve never had them before but I have never cooked them but I will definitely try this because normally I use radishes in my homemade soups and everybody thinks they’re a little red potatoes so thank you so much for the new suggestion and they’re very easy to grow in your garden

So I notice that mashed 'faux-tatoes' recipes use cream cheese. Do you have to use it? I love cream cheese, I even love it in real mashed potatoes, but for me to get a good idea of how it stacks up with potatoes, I'd rather not if I can get away with it. I don't always put cream cheese in my potatoes, usually just milk and butter. Not that I would never do it, I'm just wondering if it compares to potatoes without the cream cheese.

In Cincinnati we have a store called jungle Jim's that sells every ethnic vegetable and grocery item imagined. Not sure if they sell online but you might want to Google it

Another good choice is mashed rutabaga (or a mix of the two) :)

probably just too wet. That can happen with cauli mash too. Just make sure to try the ingredients really well before blending.

That seems really high. I usually pay about $3 for a bundle. Each bundle has 3-4 in it. So I'd say they're about $1 each.
This is the 2nd recipe I’ve seen using Kohlrobi, do you think instead of a food processor you could run it through a potato ricer?
I don't have a ricer to try it, but once they're boil they do have a similar texture to boiled potato. I would imagine it would work.

Are they enough like potatoes to make Gnocchi? Would you need to add a type of flour or egg? Just a thought. Me T1.
Would not recommend as they don't have the same starch and gluten to hold.

Speaking of radishes - I tried roasting them as a potato substitute and they are awful! I would rather eat them raw!
Interesting....I roasted them with garlic and then added lots of melted butter and thought they were delicious. Still not like roasted potatoes LOL
