    Just a personal tip for a thicker cauli-mash: place the cauliflower into a cheese cloth and squeeze as much of the water from it as possible, after cooking it (and before adding anything else to the cauliflower). Removing the excess water from the cauliflower will fool even the hardest carb eaters.

      I microwave the cauliflower for 6 minutes covered with only one tablespoon of water. Then I lift the lid and let the steam escape. Add two tablespoons of cream cheese or ricotta, garlic and bacon chips. The microwave with just a bit of water keeps it from getting watery and leaves it nice and thick.

    I love mashed cauliflower. Here is a tip. Set some aside without the garlic and pepper. Add some sweetener and a splash of heavy cream on top. Tastes like Cream of Wheat, also add cacao powder or sugar free chocolate syrup to make a chocolate Malt O Meal like breakfast. Its soooo good.

    There's no need to make the garlic butter separately. Just add the cloves to the cauliflower when boiling and smash them together. Also, when the cauliflower is still hot from the boiling you can add the rest of the ingredients and do a quick mash up with a fork. The warmth of cauliflower will melt and blend everything perfectly. No need to put in the stove or food processor. Just trying to make it easier. Recipe is delicious. Thanks for sharing

      The butter becomes infused with the garlic and will taste much nicer than just mashing it all together. The heat from the cauliflower is not enough to sauté the garlic which is where the flavor is at. I highly recommend at least trying the extra step and see if you can taste the difference.

      @@pixelobservations Plus you don't drain away the healthy benefits of garlic when you drain the cauliflower. I think I will try it separately. And, do a 1/2 recipe trial. Don't want to waste any if I'm the only one eating it, lol.

      I know this may be six-months too late, but here goes: about ten years ago I was diagnosed with diabetes, and bad cholesterol issue. My doctor sent me to the practice's dietician. Had I followed the dieticians diet I would be a medication dependent diabetic. I lost over 70lbs in a few months. After the first month my doctor said I had made good progress and she was going to hold off with medication. After three months I came back for my blood test. I followed a little stricter version of Dr. Atkins diet. I cut every carb out of my diet I could. I ate nothing that had any more than 2-carbs per serving. I ate lots of sausage, bacon, pork, beef, chicken, fish. No fruit, dark green veggies only and small portions, no juice, lots of fat to satiate my appetite. After following my version of Atkins I told my wife, as I was preparing to go get tested, that the blood test was going to show Atkins is right or was going to have me with one foot in the grave. My doctor looked at the results and told me she had never had a patient turn numbers around like I did and she had over 1500 patients. Since the original diagnosis I have kept my A1c at 6.0 or below. My last three A1c tests were 5.7, 5.3, 5.6. My bad cholesterol is at the low end for bad cholesterol. Make sure you have everything that you need to eat. When you are hungry eat, this is not a starvation diet. Do not try to find substitutes for all the foods you like. Even this cauliflower dish can be too high for you if you don't have it under control. As long as you try to live the same life and find substitutes that you think will allow you to eat as you did before you learned you are a diabetic you get well. Your food lifestyle has to change. Find new foods to like and make sure they are low-to-no carb foods, and don't cheat at all for six-months or until you have totally taken control of you eating habits and your blood sugar i below 120 nearly every time you test. Until every number and your weight is where it needs to be you have to stay on low-to-no carbs every hour, every day, every week, every month. Moderate exercise. I jog about 20-30 minutes five days a week. It helped my sugar drop about 10-15%. No intense exercise, it will raise you blood sugar. Stay away from people who don't support you and tell you it won't hurt you to eat regular food items or my favorite: go ahead and have fruit it has natural sugar. They know nothing and are dangerous to you and your health. They are incorrect and the poor advice will kill you. Good luck, I hope you are doing well.

    Skip the food processor. Just put everything in the pot and use immersion blender and then cook them as needed. Just save many dishes from washing :)

    I just made this. I made it all in one pot on the stove, added the ingredients to the cooked cauliflower on the stovetop and blended it with the immersion blender. Super easy, very tasty and only one thing to clean.

    Gouda, bacon & mayo in place of sour cream tastes awesome as well. For sure using the processor or emersion blender is key also. I think fresh cauli makes it better too. I've tried frozen for mash but it always tastes best with fresh like you did here.❤️
    *I always use a little xantham gum to keep it from being watery too.*

      Same idea, but I use a tablespoon or two of coconut flour. It soaks up the extra liquid and the sweetness of the coconut flour balances the bitterness of the cauliflower perfectly.

    Xantham gum has been a life saver on keto I use it with my beef broth for the most bomb beef and broccoli EVER that's keto friendly!! I literally could eat it everyday!

    Accidentally made mashed potatoes out of my hard boiled eggs in the food processor, was trying to make deviled eggs as a sauce for some chicken but realized it had a nice whipped creamy texture which tasted absolutely amazing. If you’re into eating high protein and fats this is definitely the way to go 🔥

      @@MarianaLOGEN I lost the recipe but I would deshell the eggs and throw about 6 of them into a food processor to blend, I would then add a little bit of garlic salt, paprika, and cayenne pepper to give it a little bit of a kick but not too much and then proceed to add yellow mustard and mayonnaise to give it its flavour. Tried my best to find the measurements I took down but lost them sadly

    Nice...I don't add the cream since there's so much water in cauliflower to start with. I melt 2 tbs of butter in a sauce pan and add about a tsp of dried parsley and 1 tsp dried chives along with 1/2 teaspoon of California Roasted Garlic powder (Kroger private selection brand) Adding the herbs to the butter helps bloom them for flavor instead of just adding dry to the cauli when ready. I add the 2 tbs of course cream with salt /pepper at the end mix. I also like the final product more rustic so I use a stick blender to get it just where I want it. Less cleanup also.

      @@shaylaster1607 I just add 2tbs each butter & sour cream..... then salt /pepper/ parsley flakes / chive flakes (optional) and use a stick blender. I don't obliterate the mix... I try to keep it the consistency more like starchy potatoes. Just a preference. I'm sure you could add things like cream cheese or even ricotta cheese. It's all yummy.

    Made this tonight and your dressing to go with my bacon wrapped turkey tenderloin. I never got to the gravy ... Everything was soooo good. I was really surprised w the cauli mash. The blender and ingredients are key as well as putting in sauce pan on stove to meld the flavors

      Valerie Bui, I tried riced cauliflower tonight! It didn’t stink when I was microwaving it, so that didn’t bother me. As for taste, alhough it wasn’t tasteless like rice, it wasn’t horrible. I decided to try it because I was making some Asian style chicken and wanted some thing like rice. Once I got the chicken and sauce on it was pretty good. Every once in a while there would be kind of a sweet, unusual taste, but it wasn’t bad, just unexpected. Another wonderful benefit for me was that it didn’t hurt my stomach at all like rice normally does. I was talking to my mother afterward and I told her I think I’ll try it again another night. Maybe I’ll try making those delicious looking mashed ‘potatoes’ and gravy! 😊

      Girl do it a few other places to get great recipes Ketoconnect, serious keto, and Cjs Kitchen all 4 channels have made my life so much easier. We have been keto for going on 3 yrs now and I really don't miss many recipes because I have found an alternative for them and usually its all homemade nothing processed so healthier in many ways. Keto has been keeping my husbands bone cancer in a range where we do not have to get treatment yet. He is no longer diabetic at all either. My psoradic arthritis is doing better because keto helps reduce inflammation.

      Just remember even just doing some meals like that is healthier even if your not 100 percent you are making sure your body gets less carbs I still sometimes lost weight like that.I know it takes u out of ketosis but strangely sometimes when I wasnt trying I had several sm McDonsls frappes each week and atr mostly low carb lots of burgers w no buns & lost 18 pounds sometime within 6m prev Drs visit.I thought I gained.

    I left the hot cauliflower in the pot after straining, added garlic, butter cheese, salt, pepper and used my hand blender to blend it all, worked well.

    Agree with the garlic cloves with boiling or steaming the cauliflower. I have also been substituting plain Greek yogurt for sour cream for many dishes for digestion and lower carbs.

    Pro tip I've learned along the way:
    Instead of using the food processor, use an immersion blender, it gets creamer and saves dishes to wash 😃

    People think I’m crazy bc I have a dish washer but I wash EVERYTHING by hand too! I feel like all the work you put into getting all the dishes into the dishwasher, might as well wash by hand!

      My dishwasher has broken far less glasses than I have, and with its highly efficient use of sprayers, tends to use less water washing and rinsing the same amount of dishes as by hand, so mine definitely gets put to use!

    I made the mash potatoes, AMAZING. I had made my son regular mash potatoes, and these were much better and even so the next day with my lunch. I didn't put in the garlic and the cheese and sour cream really makes it!!!!

    I love to put only some cheese in it when mixing it together then I put it in a baking dish, cover with the rest of the cheese & bake it in the oven for short time to just warm it back up & melt the cheese on top. YUM!☺️

    Try it with turnips, you know the turnips that make great French fries and home fries! I haven’t made hash browns yet.

    I do a loaded mashed cauliflower pretty regularly. I use cheddar cheese instead of parmesan, cream cheese instead of sour cream, add chopped bacon and occasionally chives, and have never made gravy. I might have to try that.

    I'm going to be making The mass potatoes Wednesday. Getting ready for Thanksgiving on Thursday. I made the gravy tonight and omg. Amazing amazing. I added a little bit of garlic powder, onion powder, black pepper, sage, rosemary and parsley. Excellent!!! Thank you. I never made gravy before.

    you ARE the best!....."just not a dishwasher kinda girl".....so rare.....gone "minimalist" along with my keto/fasting protocols.... got a dishwasher on the end of each arm!.....no need to use electricity OR get my fave dishes/bowls, etc "stuck" in a "waiting" load......i wash most things AS i am prepping/cooking, so when i sit down to eat, i only have the plate im eating off of to wash.....yeahhh!...

    Tried this recipe for the first time. I added about 2 oz of cream cheese to mine. OH MY WORD! These are the best ever. You would never in a million years believe this is cauliflower. Thank you for sharing!

    i first saw this recipe weeks ago but put off making it, probably because I have been disappointed too often with recipes that claimed "tastes just like normal bread, or potatoes or whatever". But tonight I tried it and it while you could tell it wasn't just mashed potatoes, it tastes so good that my grandchildren left me no leftovers for tomorrow!     Hello, I’ve been doing the Atkins diet (On and off) for a couple decades now. I never really liked it because of the restrictions and having to eat the foods they recommend are quite boring. Then I found you, and things changed for me. I made the mashed “potatoes” and chicken gravy today. It was such a game changer having a complete home cooked meal. Next, I try the Almond flour pizza crust and fried chicken. Thank you, my food just became a meal. 👍🏼✌🏼

    I made the keto bread , looked just like it should. Baked 22 minutes. I could not swallow the bread without water. $6 of ingredients and to the Garbage it went.

      Yumm! I'm working on a sweet Keto bread recipe. In meantime, have recipe for sweet cakes with coconut flour:
      1/4 cup coconut flour
      3 large eggs
      2 Tbs olive oil
      2 Tbs water
      1 tsp baking powder
      1 tsp vanilla extract
      Pinch of cinnamon
      Mix ingredients together.
      Cook on medium low heat each side for 2-4mins.(flip when see bubbles).😋

    I steam my cauliflower and use nutritional yeast, instead of cheese. For anyone who doesn’t like cauliflower, maybe you could mix cauliflower with potatoes-one half to one half or 2/3 to 1/3. A TH-cam keto doctor said he does that. It’s still lower carb. Just a thought.

    Ohh my goodness Myra, I just love this dish, don't even need the gravy, I can eat it hot, or cold, straight from spoon, or with some vegan mince, whatever - I just LOVE IT - I make it at least once every week, sometimes more!
    You know, I was wrapped with your potato salad made with cauli, was so amazed with how good it is, but crikey, this beautful mash, evens beats it lol- probably because its made so fast.
    You have amazing recipies, every one works and tastes fantastic. I know straightaway, that I can rely on you that everything has been tried and perfected. Your recipies and those from Heavenly Fan, are the simply the best ever! 💕

    I came for the gravy. Just bought my xanthan gum today. I was so nervous about the Thanksgiving gravy, but this video took away ALL the anxiety without any medication! The cauli mash looks great. I usually want to cut carbs, but I think my mash will have some rutabaga (8.8g net carbs/cup) and turnips (6.06g net carbs/cup), and that will definitely add carbs (Oh, no!), but I'm really craving the tastes. 1 cup of each mixed together and a 1 cup serving gives me 5.88g net carbs. Ohhhhhh, and that gravy! I usually eat 20g carbs/day. This Thanksgiving meal, even with all of my splurges, looks like it might come in under 30-36g net carbs total. So thankful for your videos! Happy holiday!

    One little advantage unsalted butter has is when you don't want your vegetables to release water when trying to get them nice and brown. This is especially so when browning mushrooms. I couldn't believe it until I tried it....no sweating into a pool of water!! Just got them nice and brown! Just wanted to pass that along. Otherwise, I use salted butter 99% of the time unless a recipe calls for otherwise.

    If you're not a fan of cauliflower, you can substitute daikon radish, just peel & steam and follow this recipe! I can't wait to make this! ❤

    Yummy. When I’m in a hurry, I cook the cauliflower in microwave at about 1/4 the time than stovetop. Plus you can use an immersion blender right in the pan while it’s still warm on stove. Saves from washing extra pieces (food professor).

    Hi. I would like to share my fix for Mashed Cauli . I take 2 Birdseye Mashed Cauli and microwave them till done. Put them both in a bowl and mix in 2 Herb-Ox Sodium Free chicken bouillon packets, some garlic powder and 1/2 to 3/4 C. Sharp Cheddar Cheese. Top with Keto gravy if you like. Works for me. 👍🏼

    Sooooo I made this just now. It has given me faith in cauliflower for sure. Delicious! I added sharp cheddar as you did. I used K&F beef bone broth instead. It was a bit tasteless but nothing a little salt couldn't handle. I used a hand mixer because I'd rather wash the paddles instead if the processor BUT it came out a bit chunky so I'll use the food processor next time to see if it gets smoother. Thank you so much!

    I boil the Cauliflower with 2-3 smashed cloves of garlic. As for the gravy, some are sensitive to Xantham gum, I like to use full fat sour cream and cream cheese.

    Looks great but you know that boiling the veg leaches all the nutrition out into the water which you just drained away. Better to steam or microwave :-)
