    This is how we make Nam Prik, This is normally used with fish but it works for anything IMO, We also add crushed pan roosted peanuts and turn it into a peanut sauce, That stuff is delicious, I think it would make a good salad dressing.

      There are 100's of different dipping sauces and 1000's of versions of each, this one is very good, but lately, I normally ask for the peanut sauce, that is good on everything, nothing like an insanely spicy salad...lol

    I like that with thai food ..and most food we can all make the same dish but I do mine like my husbands mom taught me and we don't crush our yum prik we finely chop everything.. but I like this version..because its how I make the paste for other dishes and som tom.. Nice! mahalo

    Looked very good to me. Yes the ones I had in restaurants were a tea coloured liquid with a few slices of fresh red chilly floating in them.

      +Dale Calder The one you add is on most every restaurant table in the country, All it is is fish sauce with chili added, It is to add a little spice as you want it, Most people eat it with fried rice. In the video I did at Valentines one of the sauces was this one, Served with the fried rice.

      This is very good, there are a few different sauces that we use, I will make a video on them soon, this one is very good with fish but good on everything, even salad.

    As Sirisux Maieiem mentioned, this is not น้ำพริก (nam phrik), it is น้ำจิ่ม (nam chim).
    Nam chim is more watery while nam phrik is a lot more viscous.

      Add crushed roasted peanuts and you have the best peanut sauce ever, I am sure it would make a very good salad dressing.

      +lifeinthailand I was interested to see the garlic water. I'd never heard of that before.
      I tend to be boring and use my sweet chillie sauce for dipping. Compared to the commercial ones, mine is much less sweet. You really get the ginger in mine, a lot more salt from the fish sauce and the lime takes out the sickly sweet the bought ones use.
      My friend, you have now given me a whole new sauce to play with.

    Excellent! My son would really go for this. If making your own garlic water, do you just put a few cloves into a jar of water and let it "steep" for awhile?

      +Gardeninggirl1107 We buy it like this, Come in a bag, If it was me I would leave this out. Maybe add a little water to thin it out a bit if you think it is a little thin, Or add a little more fish sauce, Be careful with the fish sauce though, It can get very salt depending on the brand you use.

    looks good !! similar to what we make just no fish sauce and if i have it some palm sugar . wife likes blacan in it (fermented dried shrimp) i don't care for it though It is and acquired taste

      +john parker (the gimpy gardener) I don't like the fermented dried shrimp either, Palm sugar is used a lot in Thai cooking and fish sauce is what makes it Thai. lol

      I put 40 eggs in the incubator a few days ago but it is so hot here the temp is too high all day, Be very surprised if it works, How many days did it take the last time for yours.

      +lifeinthailand 14 days being rocked and then 2 or 3 with the rocker turned off.
      The eggs do well at around 37.5 degrees. I think the trick is to keep the humidity above 60%.

    That looks aloi mak! But I like it better with more water in it. It is easier to control the amount of heat in the meal that way.

      I would say as long as you have fresh garlic your good, Maybe add a little water to thin it out a little if you want.This is one of those dipping sauces that after you make it once or twice you well be able to add or change it to your liking, There all a little different but all delicious.

    Try to fix the ratio of fish sauce to lime juice.
    2:1, 3:1 or 3:2, your preference.

    Ymmmm....this Spicy Thai Chili dipping sauce looks so good and from your reaction it was SENSATIONAL! Up until your missus added the soy sauce, sugar and garlic water, it appeared to be very similar to stoneground mexican salsa, only the mortar and pestle we use to grind the salsa is made of a black stone, molcajete is what we call it, the best salsa or Thai Chili dipping sauce is made by hand,lol....forget the blender or immersion blender, it just doesn't taste the same! ;D

      Maybe you can replace it with soy sauce, have never done it so you would be experimenting, should be OK, different but OK.

      Bawang putih tiga biji, cabe merah, bawang merah kecil tiga, daun bawang - tumbuk dengan garam sampai hancur.
      Lepas itu gaul dengan sos ikan and air bawang putih. Lepas itu campur sedikit gula and sedikit air limau

    It's Nam Pla Prik or Nam Jim not Nam Prik(น้ำพริก). All Nam Prik(น้ำพริก) will have shrimp paste in it except only Nam Prik Ong (น้ำพริกอ่อง) that don't have.
