    I will show you how to make the ultimate Crying Tiger Thai dipping sauce.
    Easy to make at home. The only sauce you will need for Thai BBQ meat. Most commonly used with Crying Tiger Beef.

    Don't forget as with all recipes YOU have to taste along the way of cooking - all Thai recipes especially are SALTY, SOUR, SWEET these may need adjusting to your own tastes. We can throw chilli heat into the mix as well. Use as many chillies as you feel you are ok with. All recipes are full working recipes and as a base they are great - tailor to your own taste.     2 Tbsp Tarmarind puree
    2 Tbsp lime juice
    1 ½ Tbsp Palm sugar - or any sugar
    1 ½ Tbsp Toasted Rice Powder
    4 Shallots thin sliced
    2-3 Coriander / cilantro twigs depending on size
    2 green onion
    Chilli Flakes - as much as you want

      It is Karl - there are many recipes but after 17 years cooking in Thailand its as real as it gets - I LOVE IT cant get enough BBQ steak and this dipping sauce. Really appreciate your comment and stopping by hope you stick around - thanks again, Rik

      To make a Tamarind paste substitute which is similar texture to the real deal and in taste, sweet and sour. You will need equal amounts of these ingredients:
      Dates
      Prunes
      Dried apricots
      Lemon juice
      Most Thai recipes call for a tablespoon or so of tamarind paste. To make a paste substitute, just combine a teaspoon of each ingredient to make 1 1/2 tablespoons of the paste.
      Or you could try A combination of water, lemon juice, tomato paste, Worcestershire sauce and brown sugar gives a similar flavor profile. However, you have to dabble with quantities to see what you like. You won’t get quite the same tartness that you would get using actual tamarind paste.
      Alternatively just add more lime juice and wing it

      Yes no problem even normal sugar will work - just adjust to your taste

    @backyard Chef, I just made the sauce, as I'm missing my favorite Thai dish Tiger Cry in IL since relocating. It's very delicious and taste exactly the same!! However, my family can't get past the fishy smell. Can anything be done to tame the fishy smell of the fish sauce? Thx

      Worcestershire sauce. It has a similar umami flavor

      You can dilute the fish sauce with water and add salt.

      I’m not trying to be annoying. Honest advice. Try different fish sauce(s). There are so many. Some are better for hot cooking, some are better for dipping. (Some are just plain nasty in smell and taste.)
      Trying to share my experience being married into a Thai family of exceptional cooks. And starting to annoy the Mrs by always buying different fish sauces to try. ;)

      Your family should eat the dish including the dipping sauce. And not let them smell the flavour out of the bottle. In the past 40 years long I was unable to eat fish, because the smell of rotten fish. But after I have to cook my favourite cooking style, Thai style, i need the taste of some tee spoons of nam Pla. Where it is in the recipe of course.

      I have never kept it longer than 2 days - we make to eat here in Thailand - and to be true i have never frozen it

      If the weather is hot it will get soft. Just chop it up, it’ll melt anyway

      Hello. There are two types of palm sugar available. The paste one could be quite harder to come by in other place than Thailand (I guess as a Thai), and the dry lump type. The two types are as good but the dry lump is more convenience to transport and store. But there's an addition chore to do when in use. You 'll need to use knife to slice the lump off to flakes of sugar or it won't dissolve easily.
