Since it was quite late in the evening I procrastinated just a bit wondering if tonight was the best night to try something new but decided late or not I would dive in. I thought why not, I have all the ingredients. It was quick, easy, and so delicious, it earned my 5 star and will definitely make it again. I am wondering, since we always have chicken on hand if it would be good with chicken. I didn't really see one on your website. What do you think?

Where have you been all my life?😅I have your eggplant lasagna in the oven right now and I can't wait to dive in! Can I ask, what is the difference in USA gulf shrimp and red shrimp? I'm thinking taste, texture...smell 😁 I saw red shrimp at my local HEB but was afraid to buy any because I had never heard of or seen them before. They creeped 😱me out actually 😂.

My doctor just suggested Mediterranean diet for my liver health so I am going to try this, it is a little transition though but I am going to try!
