    It's crazy what kind of food stuff people have invented over the century. "Oh, I left eggs who are notorious for spoiling easily for some time in mud and now they are black and translucent ... hmm, let's eat them". "Oh, I mixed milk with a calf's stomach and now the milk is curdled and moldy - let's eat it!" Shoutout to all the brave food explorers who forged our path XD

      Now it's just fun experiments but back then I guess they don't have that much of a choice? Yk that toxic plant on an island in japan that has to be dried in the sun for it to not be poisonous... they don't have that much other food so they gotta sacrifice a few ppl to find a safe way to eat it

      @@emmaedwards7087 It happens slowly. Initially we figure out a rudimentary flour-water dough mixture then we figure out what else we can put in it to make it more palatable. But we probably started with a dense, tasteless dough.
      There's a few videos of Sohla in the History channel where she makes dishes in the way they were made waaaaaay back when. It shows how they change. It's not even the first iteration of these dishes, just an old one. And back then they didn't figure all the ingredients and cooking techniques at once so the dishes look weird when you know what it's supposed to be but you can still see some resemblance to today's dishes.

      @@nodezsh the first breads were unleavened and I imagine that yeast was discovered quite by accident. If you leave wet flour out long enough, some yeast will find it. The true inspiration was to bake that rotten flour. Baking soda and eggs were relatively modern improvements on the bread making process.

      I usually get annoyed when youtubers have sponsors for every upload but with her, I’m genuinely happy for her and feel she only chooses to do sponsors that she truly believes and supports too so I’m okay with it. Hope she’s making hella bank from them because she deserves it.

      You could have stopped after "they're not meant to be eaten". I had it at a restaurant with plenty of congee, dried shrimp, etc, and it's the first time I've been physically ill in a restaurant. The rest of the food was delicious, that egg made me violently ill on the spot. And I'm not some sort of ridiculously picky eater

      @@Jcremo they do look really cool! My friends order these eggs in their rice porridge when we eat dim sum together but I never had the courage to try them. I haven’t even tried chicken feet either. Haha. I can do some cheeses but aged cheeses I struggle a bit. Is it pungent like blue cheeses or Gorgonzola?

    Lye is also used to make hominy, which is dried corn with the hulls removed. And it's used to make that legendary Scandinavian dish lutefisk, which is reconstituted dried codfish. Two other dishes to try! And speaking of Scandinavian cuisine, I would love for you to try rommegrot, which is a pudding made with flour and heavy cream, where you stir the cream so much it eventually turns into butter.

    So up until now I actually thought century eggs were ACTUALLY a century old. I thought someone would set them aside and then in 100yrs your family gets to eat them. Like they were aged like wine or cheese or something. Feeling kinda silly for thinking that but I doubt I'm the only one who thought that. 🤦🏼🤦🏼🤦🏼😂

      For that the mistake (or idiocy?) Is not on your part, since preservation methods to keep food edible for a ridiculously long time does exist, and some joker decided to name these things "century eggs" for some reason...

    This reminds me of a picture my uncle gave me when I was a child of a frog being swallowed by a heron, but the frog is reaching out grabbing the heron's neck so it can't swallow him, with the caption "Don't ever give up." You are the embodiment of this concept!

    When you talk about people eating the eggs whole and vomiting, and that is not how they should be eaten, II think that is true for a lot of seemingly strange, strongly flavoured foodstuffs. Besides 1000-year eggs, things like Vegemite or Surströmming or nattō. They always get served in a way that mitgates the strong flavour, with Vegemite spread thinly and the other usually served with some very low-flavour staple.

      Idk man, I feel like most super weird cultural foods are hard to enjoy unless you grew up with it. Here in PA we have scrapple, which I think is delicious, its crispy and creamy and savoury. But like, what other meat has those attributes, not many. Meat is not generally thought to have the texture of thick applesauce in a crunchy shell. Feta cheese is generally just lightly crumbled on food, but I literally just break pieces off and eat it, love the stuff. Im not sure eating a very small portion of a century egg mixed with joke would make people think, "huh thats actually pretty good." But idk, Ive never seen someone do like a second attempt at weird food eaten properly

      @@skeetsmcgrew3282 Yeah true, there is a big element of acquired taste involved, but I also think the first step of acquiring a taste for something is to not overload yourself with the food. That is what a lot of these "Trying [strong food]!" videos often do wrong.

      I didn't eat Marmite growing up but now as an adult i eat it a shitton... But i am from a culture that eats a lot of it (Britain).
      A lot of people are very unadventurous - i feel like the same crowd in the Anglosphere who make a fuss about surstromming, Durian, Century Eggs and (outside of Britain/Australia/NZ) Marmite also cause a fuss about Blue Cheese of all things (I can't believe how many Americans don't like it)

      But a large portion of those people will hate it anyway, no matter how you try to sugarcoat it. Especially if it's very different than the kind of food they are used to eating. Its a matter of individual taste.

    Never eat Century Eggs without having rice or noodles in front of you. Because it needs additional starch because your tongue will swell is what my Lala told me as a girl.^^

      @@ellespoonies I think maybe because she wanted me to eat well as a child. I helped make manufacture many of those duck eggs and after awhile you don't want them any longer. But what else do you have when in village as a child?
      I am thankful for my childhood experience. Most poor people in America don't know what poor means. I am happy my children will not have to deal with that life situation^^

      I was coming here to find out if they were safe to eat as well. Do they just need more time to get to the green? Why did they do that, I noticed in the solution some of the ingredients settled... wondering if the green eggs were in the bottom and thereby processed faster? Also, I wasnt aware they needed to be cooked... or is that just for this recipe?

      Seems like she did, she replied to other commenters that they were milder. I just saw a video from a channel called "Goldthread" of some people making yellow or golden eggs and the channel explains that it is just a matter of the alkalinity or curing time. The solution might have been more alkaline near the bottom or something.
