You don’t want your brittle to burn. Ingredients:# 1 cup of roasted peanuts, I used @hamptonfarmspeanuts shelled peanuts 1 cup of sugar 1 tablespoon of butter 1/2 teaspoon vanilla bean paste or extract 1 teaspoon baking soda 1/4 cup of water 1/2 cup corn syrup How to - Get a deep pan, I use a Dutch oven! Add in the water, sugar and corn syrup! Bring to a boil, once to a boil, let it sit untouched until the temp comes up to 240° Pour in the peanuts, cook until the temp reaches 300° this could take a few minutes! You’re looking for a beautiful golden brown. As soon as the temp reads 300° remove from the heat, add in the butter, baking soda and vanilla, stir it really well and pour onto the baking sheet to cool! Let it cook completely before touching!
