Pecan Brittle - Quick and Easy in the Microwave - Steph’s Stove

  • Pecan Brittle in the Microwave- Quick and Easy!
    1 cup granulated sugar
    ½ cup light corn syrup
    1 full cup pecan pieces
    1 tablespoon butter
    1 teaspoon vanilla
    1 teaspoon baking soda
    Preheat the oven to 350° Line a cookie sheet with aluminum foil to where foil will cover the edges of the pan. Spray lightly with cooking spray and be sure all surfaces are well greased. Place the pan in the oven to preheat and keep warm - this step will help your mixture spread evenly.
    Combine sugar and corn syrup in a microwave safe glass batter bowl. Stir to incorporate and discard spatula used. Cook the sugar mixture on High for 3 ½ minutes.
    Remove from the microwave and the sugar mixture should be light colored at the end of 1st cooking. Add pecans and stir. Discard the second spatula after stirring.
    Return to the microwave, cook on High for 3 minutes.
    Remove from the microwave and the mixture should now be a golden brown color.
    Add in butter and vanilla. Stir well and discard the third spatula after stirring.
    Return the mixture to the microwave for 1-minute.
    Remove from the microwave and the mixture should be medium amber colored at this point. Remove the cookie sheet from the oven and place on a cooling rack. Add baking soda by sprinkling over the top of the mixture. Stir with a new spatula. The mixture should foam up during the stirring process. Stir just enough to incorporate the baking soda. Pour mixture onto the cookie sheet and allow to cool completely. Break into pieces and enjoy! Store in an airtight container if any are left over. :-)

    when did you add the pecans, and how much ?

      I add the pecans after the first 3 1/2 minutes of cooking. Stirring in 1 cup of pecans, the continue with the cooking. Also, the full recipe and instructions are listed in the video description. I hope this helps. 😊 Thanks for watching and your question. Have a blessed weekend!!!

    You need some counter space. If you’re having to add and stir on top of the microwave. Plus, we couldn’t see part of what it looked like, because the camera didn’t get it.

    Not very good video
