Alabama's BBQ White Sauce || Food/Groups

  • Alabama doesn’t always get its due on the map of U.S. barbecue. From the Carolinas to Memphis, pretty much everyone in Bama’s neighborhood has a bigger BBQ profile nationwide. But the Yellowhammer State does have one undeniable claim to barbecue fame: northern Alabama white sauce.
    Like the state itself, this Alabama BBQ White Sauce is a bit of a barbecue outsider: a white mayonnaise concoction designed not for brisket or pork, but for regular ol' chicken. In northern Alabama, the white sauce’s legacy is as complex as it is delicious. It's now a staple in college football tailgates across the state and one that the Alabama Crimson Tide in particular can't get enough of. So we traveled all over Alabama to get the scoop on this misunderstood sauce, starting with Bib Bob Gibson's, the place that created it almost a century ago. Roll Tide!

    Sounds good. As a person who doesn't like sweet sauces like BBQ, I have to try this one day. This is very comparable to Ketchup vs Mustard. Children use ketchup and adults use mustard.

    I love this stuff. For someone not from northern Alabama, this white sauce tastes like a cross between ranch dressing on steroids and standard barbecue sauce. It’s excellent on split chicken as well as pulled pork.

    Alabama White Sauce battles the yellow swill from S.C. as my least favorite but that *_brisket panino_* looks pretty dang delicious.

    God damn! I've seen Chris Lily on tv for almost 20 years now whenever there's anything about bbq. And from that first time I saw him on Foodtv's cover of the Memphis Royal where I think he won or came in 2nd, he's alway's talking passionately about his craft.
    Also I thought he was Woody Harrelson for a split second the first time I seen him on tv.

    You should do one on windsor Ontario’s nikos sushi. They have something called nikos sause that is SOOOOOO GOOD. Like, amazing. It’s this creamy sauce that goes perfect w it. Go and try it!

    As a Tarheel, I am very demanding regarding my "Q." But I do not look down my nose. It does not have to be my style. My demand is only that it be damned good!
    I picked up some Mustard sauce on my way through Spartanburg yesterday, for my kids to try. That's when it dawned on me that there is still a style that I have never tried! I found this video in a search to make a wise choice, and on your word...I ordered some of that white sauce from Big Bob Gibson's.
    Understand that your Bama sauce is being taken by carrier now into the Tarheel State. It will meet a TOUGH audience. But my palate awaits!

    Moe's Barbeque is taking the Alabama white sauce to other parts of the country. I think they have 40 or so restaurants, including at least 3 in western NC where I live. I like their food and eat there quite often, but I am not really a fan of the white sauce or just about anything that is mayonnaise based.

      That's cos the other " secret ingredients" are horseradish, garlic and onion powder and a lot of cayenne. Brick and Tin are making your average coleslaw dressing and calling it the best Alabama BBQ White Sauce in the world. lol

      i've eaten an embarrassing amount of brisket in lots of different places, and honestly this was some of the best. it might look dry, but it isn't. if i remember correctly, chef mauricio sous-vides it, which may account for the unfamiliar look. but the texture/flavor was top-notch.

    I'm Mexican-American....born/lived here in LA all my life. I don't like ANY sauce on my BBQ (ribs...spare ribs, not baby-back) and Brisket. I always thought it was all about the "rub"...and the wood??? Like....you put sauce on stuff that isn't seasoned or smoked properly???

    This is northern Alabama in southern Alabama we use mustard based sauce don't put us in the same category nobody likes that BS down here in the south eastern area

    White sauce did not come from ALABAMA. IT originally from up North. It's not Southern BBQ. It's an abomination
