Chicago's Delicious Mild Sauce Tradition || Food/Groups

  • Chicago is a city that adores its food icons. From pizza, to Italian beef, to hot dogs "dragged through the garden", the Windy City is an international beacon of intensely lionized foodstuffs. But there's one Chicago food tradition that flies so under-the-radar, even many Chicago residents hadn't heard of it before Chicago-born comedian Hannibal Buress penned a love letter to it in Chicago Magazine in February 2017. "If you live on the South Side or West Side and you go to a restaurant that has bulletproof glass, they probably have mild sauce", he wrote. "It should have Sriracha levels of fame."
    So we went to Chicago to find out why it doesn't. Along the way, we fell in with a who's-who of the Chicago sauce cognoscenti, from rap blogger-turned-chef Cliff Skighwalker and entertainer Larry Legend, to award-winning poet Nate Marshall, to the crew of an entire damn podcast named for the iconic, under-appreciated condiment. The question was a two-parter, but simple: what is mild sauce, and why doesn't it get the credit Buress (and countless Chicagoans) believe it deserves? Watch the episode above for an answer.

    As a black man I am glad to hear anytime someone shows pride in the black community. Especially when it comes to owning your own business and showing that you can be a success. It can not be all about well we can not do anything other than sell drugs, rap, or complain about life. However there is one point that I would like to make and that is with the poet who compared McDonald's with Harold's. You can not make that apples to apples comparison so lightly for a lot of reasons. McDonald's was started by two brothers with a focus on quality, speed and great service. It had nothing to do with race or taking anything from anyone else. The business changed with Ray Kroc. He created this have to be the best attitude that ran so many mom and pop places out of business (think Walmart). He forced the McDonald's brothers into selling him the business and founded the McDonald's corporation. He then bought up cheap land to expand the business. Franchisees often paid all the cost to run the business and get it open with McDonald's collecting huge fees in the process. Harold's from what I can tell was about serving the community were he lived the food they wanted. We can not speak to the vision the founder had for his business nor why he did not try to build it beyond where it is now. Some people focus on one thing but, they do that one thing so well it allows them to be successful. The question I have is how do you define success? Is it a ton of locations, millions of dollars, and stories in the paper? Or is it building something that continues after you pass on? Does it have a legacy of quality and supporting the people who you serve? Lets not forget that for any restaurant to make it past one year is really uncommon so the fact that Harold's is still around says something. On the same level as McDonald's? No, of course not but maybe that is a good thing looking at what it took to get there. That to me makes the story of Harold's shine that much brighter.

    it's crazy that i grew up on the north shore and yet the chicago experience i am familiar with is so different from the south side or west side, this city is so segregated it's insane

      I'm live in Texas in the DFW area, there are a lot of imitators, but none came close than original. But I found a group that actually sells it a third party thru restaurants

    As someone whose family is from northeast chicago and the suburbs, this was a really interesting look at something I knew nothing about considering how many times I have been to Chicago. Next time I visit my family, I really want to try it.

    Mambo sauce has pineapple juice and white vinegar.... Mild sauce has bbq on top plus the brown sugar (maybe honey too) and more ground seasonings than Mambo sauce. That's what I can tell from taste

    We finally got a Harold’s up in Evanston for us north suburb folk. Nothing beats going to a Harold’s down in the South Suburbs though. Everyone is friendly down there- even the customers.

    A chicago native... left in 1993 tasted mild sauce before i left from the local chicken shacks... as i ventured the chicago area with my new driver's license. But other duties called 20 years went by and I was constantly bamboozled, hooters let me get that mild sauce, oops thats not what I thought it was gonna be. New Jersey, let me get 6 wings fried hard with mild sauce, the waitress would look at me crazy, San Diego, Connecticut, Florida the same result. It wasn't until I reached a small city in the heart of the SOUTH. Where I could say 6 fried hard with mild sauce on everything people would understand what I was saying. Atl., has stepped up to be the carrier of the torch and pass the mild sauce tradition on to others, there is currently 4+ Harold's franchise restaurants here Black owned. And the owner is doing her best to spread the Chicago love for MILD SAUCE

    I visited Chicago for the first time in October 2017, and made the trek to Harold's with a local friend of mine. The mild sauce was GLORIOUS! If I could only get it in NYC.

    It's crazy, I just poured Captain Curt's Boss Sauce...on my chicken and fries, it tastes like I'm back on 83rd and Cottage Grove! Anybody from the South Side of Chicago knows, one end of the block had Curt's...across the street, at the other end was Leon's! Can't go wrong, I grew up on both and they both always showed me love! ✊🏻👊🏻✌🏻

    The mild sauces from Harold's and Uncle Remus have been out of stock for at least a year. Amazon doesn't know when and if it will be sold on Amazon. I have emailed both websites and have not received a reply

    This video really made me feel good, considering I'm from K-Town and that my favorite guilty pleasure is 6 wings with mild sauce from Coleman's or uncle Remus to this day,but so many really good bbq joints are gone now(Rib lady on 21st and pulaski 😔) through out the westside that things just isn't the same nomore. .
