Instead of maple syrup, could you finely cut up a couple of dates?? I’m not a big fan of syrup, but I appreciate that there needs to be some sweet to offset the acidity as you say👍

Looks delicious and easy to make, one Q though, the White sauce was only flour, so u would think it bland tasting, I would add flavours to the sauce, perhaps some Nutriental Yeast, and or mixed Herbs etc. I suppose the Olive Oil and the Oatmilk would add some flavour to the White sauce.
Looks Delicious! And easily adaptable as you can pretty much any veg you like, can be made gluten free if anyone is coeliac and oil free for any fellow whole food vegans out there. Brilliant!

You can get extra crispy goodness with breadcrumbs on the top, also putting it under the grill :)

I never thought of baking the veggies before putting into pasta sauce. Never though of eggplant in pasta either. Thanks for the great ideas!
