Made this last night, it was delicious!, had the rest for lunch just now, heated up again really good, really filling, I will be making this recipie once a week for sure, thanks guys !!!
You know what else I love (other than your channel, recipes, accent ...) is that it looks like you used your granny's favorite pan! Y'all are THE best!
I have been preparing your recipes for the past 2 weeks and I have never eaten so much veggies! I do buy a lot of veggies, but I always get lost with the dishes I could prepare with them. Awesome recipes! Thank you!
Had this recipe last night and it was so good! I didn’t have any tofu at home so I just made a thick cashew cheese sauce instead. tasted really yummy! My whole family loved (and they’re not vegan)! Will definitely be making this again👍🏻
As italian. This seems really tasty. If you want to make it more tasty you can add a vegan besciamella (plant milk and flour you find everywhere a recipe) but maybe besciamella is a little overkill with your feta, just put some milk or more creamy things, on top some nutritional yeast and put it on the oven for a while at your pleasure.
I made the recipe last night it was already suuuper creamy and tasty. I personally think that a bechamel would be too much here (but delicious in many other dishes for sure 😄)
That's a great idea to roast the pasta sauce. I'll definitely be making it this week. All these savoury tray bakes you've been giving us lately are amazing. Thanks!
Yet another amazing recipe. Thanks guys! I am a mentor of a 22 day Vegan challenge on Facebook and I’ll be sharing this recipe there as well as your channel. Cheers!
Made this tonight for dinner, delicious. Subbed walnuts for the cashews, zucchini for the pepper and lime juice for the lemon juice. Got to use what you have. I would say this makes 6 good size servings not 3?
We made this last night and it was absolutely delicious!! We realised that we were out of tofu lol so we used 200g lacto fermented tofu and an extra 100g of cashews. We got 4 big portions for our appetites 😄
Amazing! I wanted to try this but didn't want to use the vegan feta as it's sooo high in calories/saturated fat (as delicious as it is haha) so I am so glad you guys have created this with tofu feta! 🙌🎉
Love the recipe. But would also like to have one of those small enamel colander you called a 'slotted spoon'. I'm in the UK so could you tell me the name/type of yours as it seems the right size? Mine are either too big or too small.
Let’s see more oven tray recipes to save time. I have been chucking plain vegetables in the oven for lazy meal prep. Any different inspiration is good.
That looks amazing!!! Any suggestions for something to replace the tomatoes? I hate cooked fresh tomatoes (fresh tomatoes should only ever be raw). 😳 I don’t mind the canned ones but I know that will taste different and you need the juice. I think it’s the skin I don’t like.
My wife has gone shopping to get me some ingredients for this, looks right up my street this meal does!, Just need the coconut oil and eggplant and I'm good to go!
Hiya! I am currently making this, and was wondering if the coconut oil is necessary? When I gave the feta-mixture a taste the coconut came through a tad too much for me (it might go away in the oven tho). Next time could I use olive oil instead? Keep up the good work!
when I make vegan feta, I use "refined" coconut oil instead of "unrefined" for this reason- refined coconut oil is tasteless but has the same consistency!
@@stevenvitali7404 Didn't taste it that much but there was a hint of it, so I would probably try what Jay said above or try out olive oil or something else. (Still did empty two plates instantly, with some added lemon and salt!)
@@TheLuvGD thanks for the quick reply, I didn't think you would reply back before I made it for dinner tonight but you did!, I will try the coconut oil and see what it's like, my oil is unrefined, looking forward to this meal, sounds super yummmmm
Hi guys. I am an Italian vegan cook and right now, as I write this, we are live on twitch. we wanted to tell you that you are very nice and that you look a lot like tonio cartonio. both of them. however we also wanted to tell you that the pasta is not al dente but it is for those without teeth. and then we love you. we would be very happy if you greeted us. many beautiful things. ps. the tomatoes must be cut, before being baked, otherwise they will booom in the oven. many beautiful things.
I've previously done a cup of soaked cashews, 1tbsp vinegar, 1 tbsp water, and 1 tbsp salt plus a squeeze of lemon before. It's more of a wet ricotta consistency though (maybe the tofu would help like in the video above).
I'd try using vegetable stock, water, aquafaba, or omit. Most times oil is not needed for roasting, but people tend to use it for everything. You could always put a parchment paper under the vegetables when roasting so they do not stick, and remove when adding the pasta to the roasted vegetables.

Sorry Guys, but as a professional qualified Chef, I have a real problem with associating the word FETTA with VEGAN... New words need to be created to describe the collection of plant based ingredients that attempt to replicate the purity and gastronomic goodness of our trades most beloved foods.. Vegan Butter is considered the greatest sacrilege of our trade...

Making this right now and my kitchen smells insaane! So hard to wait, but I will persevere!
What did you think of it?, I cooked it a few days ago, loved it!

Gotta love that sibling dynamic
great recipe, I put it in the oven a little bit with the pasta in the end for that extra crisp.
Sounds like a good idea, I will try that next time I cook it

Yes , I made this just for me and there was loads!, on the up side I ate the rest the next day
Wow. That looks lush. I saw the non vegan version recently and wondered how you would veganise the recipe.
Nice and easy. I will add some chickpeas in the tray to make it more proteic.

Nice video 👍 brother Iam from London
Can't wait to go to the grocery store tomorrow to buy all of this omg
hi! i’m allergic to cashews, so is there a substitute that i can use?
Can you guys cook something with mostly regional Winter vegetables? Just an idea
They have a channel full of basic winter vegetables lol
Can we leave the oil out?
I also prefer not to use at least coconut oil, it is not the healthiest one.
Olive oil will be fine and compliments the dish!

Good morning! Thank you for another delicious recipe. Do you think this would be ok without the coconut oil?
300g firm tofu
60ml coconut oil
60g cashew nuts
1 tsp garlic powder
Red pepper
1 Aubergine
500g cherry tomatoes
4 cloves garlic
1 tsp Oregano
Juice of lemon
2 tbs nutritional yeast
Salt
1/2 tsp black pepper
Oil
400g pasta of choice
Fresh basil

You could actually add them raw at the end, it would give it a really nice fresh contrast to the richness of the sauce
Hi guys can I use rapeseed oil, avocado or olive oil in place of coconut oil... does your course have a lot of coconut oil, cream? I avoid. Thanks
That looks absolutely delicious! I wish I could smell it. And eat it all obviously haha.
Thanks Lauri hope all well

Just using what is in my lockdown kitchen, would chunky hummus work instead of the cashew mix?

maybe sunflowers soaked in boiling water? Or more tofu? :)
I wonder if it would be even more tasty if you'd mix in the (par)boiled pasta before it goes in the oven?!
