    1 Italian Eggplant
    1.5 cups ap flour
    3 tbsp parmesan
    2 whole eggs
    10-12 Basil leaves
    3-4 tbsp bur rata cheese
    1/2 cup pine nuts
    salt & pepper to taste
    Balsamic Glaze:
    2 cups balsamic vinegar
    1/4 cup brown sugar

    Byron you are seriously the best. I just recently started culinary school at Le Cordon Bleu in pasadena and you were definately someone who truly inspired me to cook and go to culinary school. I have this project coming about someone who inspired you to cook and you were the first to pop in my head.

    I always though leaching the liquids out with salt was just making the eggplant mushy, and usually skipped that step. Glad to see you doing this also. This looks fantastic and I love the fact that you use a lighter oil than olive oil, which I think contributes to the overall heaviness that traditional eggplant parm can often have. I will def try this soon. Thank you !

    Ah snap, yesterday I made eggplant lasagna because my eggplant was going to rot in the fridge... should have waited a bit to taste your recipe. Oh well, next time. I love how you explain everything really straight to the point, especially how to make sure a recipe turns out well even when you put your own twist on it. Sometimes I improvise in the kitchen because I don't have all ingredients, and sometimes it turns out really well and sometimes it feels like something is missing. Making sure that all the components of the flavors are in the dish really makes sense, i'll keep that in mind from now on :) thanks, i really love your channel!

    ohh i've tried SO many recipes for eggplant Parmesan,. fail.. every time!.. i fell in luv with the one at olive garden, & i've been trying to re-create ever since... can;t wait to try your version... your recipes have been a staple in our house =)

    Ahhh this looks amazing Byron! I've been subscribed for such a long time, it's awesome to see how far you've come. :) I've always been super curious about your filming setup though! Do you have like 5 cameras spread around pointing at their respective places (cutting board, plate for eggplant, saucepan with vinegar, etc.), or do you just have one and run around and adjust everything between shots to get the look you're going for?

      I only use one camera (Canon 6D : L 100mm Macro / L 50mm Prime) and position it as best as I can in order to explain a procedure. I try to get as many interesting shots as I can, but It does get pretty hectic. I try to take my time with everything, but great question and thanks for the kind words! ;)

      Absolutely! Yeah, I've filmed a few cooking videos myself and it's super difficult, especially when you're by yourself, have one camera, and whatever you're working on at that moment requires you to move quickly. Looking forward to more #veggieweek! :)

      Why don't you say that you hired professionals to do film you?All big YT channels do exact the same.Even make up artists,hairdressers,stylists are involved

      ***** I don't think there's anything wrong with getting help for filming, but I do think those that _do_ get help from professionals are in the minority. Even with big youtubers who might want help, I rarely think the help they get comes from actual filmmakers, hairstylists, editors or other professionals, but instead comes from their friends or family. For example, even if Byron got help, he has Rachel who could help him get the right angles, depth of field, sound checks, etc, and wouldn't necessarily need a professional to help. Plus he said he only uses one camera, which is what I was most interested in, and I don't think he'd have any reason to lie about that at all. :)

    Hey Byron! I am obsessed with your recipes!! I just bought the ingredients to make this one, though I will give it a latino twist and substitute the cheese for either Queso Fresco ( Mexican) or Queso de Hoja ( Dominican Republic). I know that you have made many French recipes, but it would be fantastic if you could do a Hispanic week, where you feature different takes on foods from the latino community. Could you try to make Champola ( a delicious drink using guanabana or soursop) or maybe a tres leches cake!!

    OMG his dredging station is perfect! I know that this is weird to be happy about but look at how the eggplant just fits the container. Like that never happens to me when I cook something bad/unplanned always happens to me lol

    I know a lot of Italians wouldn't be that happy with your rendition (traditions are a big thing you know...), but I love the idea and the elegant presentation! Going to try it soon and make some Italians change their mind!
