    Can the duck replace with chicken?
    Can I add spices on the water bath?
    Can I use the water bath for multiple times?

      Chicken will not get the exact same effect as the duck. I don’t know what kind of spice you want to add, that will change the whole dish itself. Yes you can use the bath twice.

      Just dunk it in and out of the boiling mix for 5 to 6 times should be enough.

      It’s the rack from her halogen fryer, very good hack, lots of people are copying it now since she made her duck!!

    I made this tonight. Very tasty even though I didn’t have all the ingredients for the roast duck. Do you use a convection oven or conventional oven? I had to cook my duck weighing 2.4 kg for 1 hour and 10 minutes at 185 degrees on a convection oven. Family prefers it well done. Next time, I will make sure to gather all the ingredients before attempting it again. Thanks for the recipe.

    Oh my the process and wait time! No wonder it's pricey. But at about $20 for whole duck at our local Chinese restaurant no longer sounds so bad.

    Hi why is it that mt duck skin did nothing crisp or brown as nicely as yours ? Did I put too little honey and brown sugar in The bath water ? I did not have maltose so I use those

    Is it correct that your duck weighed 2.6 kg and you roasted it for 1 hour at 190C? How long did it rest before carving?

      I bought my duck from my local supermarket in UK and you can get the yellow bean paste from any oriental store😉

      It will go off in the Singapore warm weather, be smelly! We can't leave it out in UK either, damp outside or be 'stolen' by foxs.

    This is how you make Chinese fried rice @jamieoliver. Put tofu in the soup not in your rice. 🤪
