- Ingredients:
1.8kg Whole duck
2.5tbsp Dark soy sauce
Seasoning:
1/2 tbsp Onion powder
1/2 tbsp Garlic powder
1 tsp Ginger powder
1/4 tsp Chinese 5 spice powder
1/2 tsp Chicken powder
1/2 tsp Salt
Sauce:
90g Chopped red shallots
25g Sliced garlic
20g Crushed ginger
4/5 nos Pickled plum
3 tbsp Brown sugar
50g Yellow rock sugar
1 stick Cinnamon
4 pieces Bay leaf
1/2 no Mandarin peel
3.5 tbsp Plum sauce
3 tbsp Light soy sauce
2 tbsp Shaoshing wine
1/2 tbsp Mushroom superior dark soy sauce
1/8 tsp Sesame oil
1 litre Water
