    Sifting both the almond flour and icing sugar, before kneading, made a huge difference to the consistency of my marzipan...it was softer ,uniform and tasted better than the first 2 batches I made without sifting.Thank you for your recipe.

    Hi, I have been watching your videos. A quick question: why do you use rose water and almond extract? Can't marzipan be done sans these two ingredients? Also, can it be blended in a food processor? Thanks

    • @TheAspiringHomeCook
      @TheAspiringHomeCook  4 ปีที่แล้ว +1

      I have never tried it without them, but if I do, I'll update those details here. I imagine you would need a little something to help bind that almond powder to a dough like consistency, I know in some parts of Europe, they add some Whisky instead of the extract and rose water. In other places, egg white is used. I like the flavour that the rose water and extract add to the marzipan.
      You can definitely use a food processor too.

    • @TheAspiringHomeCook

      As it is uncooked, I wouldnt keep it for too long. In the fridge about 3-5 days, depending on the weather (heat and humidity). But it may sweat a little when taken out.

    • @carolleader5436
      @carolleader5436 2 ปีที่แล้ว

      i don’t think so! icing sugar is much finer, whereas caster sugar is still pretty coarse, so if you were to use caster sugar you would be able to feel the little sugar granules when you eat!

    • @TheAspiringHomeCook
      @TheAspiringHomeCook  4 ปีที่แล้ว

      Hi Rheya, It does need a little moisture to hold it together, the rose water helps with that. There are some European recipes that use Whiskey in place of the rose water too. Almond extract is for flavour, if you don't want to use it, you can leave it out.

    • @TheAspiringHomeCook
      @TheAspiringHomeCook  4 ปีที่แล้ว +1

      Hi Carmen, I find that the almonds need to be ground fine and preferably in a high powered blender. That helps get a less crumbly marzipan. If you have access to cashew nuts, try this recipe (it is one of my favourites). It turns out fantastic too - th-cam.com/video/AwWWH17hYtU/w-d-xo.html
