According to some sources, the Persians invented marzipan and it was introduced to Europe via the Turks. Though others disagree and say it originated in Germany, Spain or Italy! In Goa they use cashew instead of almonds. The Persians added rose water to marzipan so it's an old tradition!

If you use pre-ground almonds, then almond extract will re-add some of the volatile almond flavor that has been lost over time after grinding. If you grind almonds fresh yourself, then it will taste very good even without extra almond flavor.

Instead of using egg white don't you just use water and would be a lot safer than eating something with a raw egg in the ingredient

Raw egg is fine as long as you live in a country with decent food standards.

Egg white is the glue. Eggs in most countries would be fine.
If you are worried about it, use powdered egg white which will be even safer.

Do you need to keep the icing sugar in the fridge so it doesn’t melt?
