      Hi! It would be too soft right after it's made, but if chilled overnight in the fridge and dusted with powdered sugar you might be able to. Let me know how it goes if you try it!

    This is what I call mock almond paste. Powdered sugar contains about 3-4% corn starch which affects the flavor and texture. To make real almond paste one must boil water and sugar into a syrup and then add to the almond flour and then process until smooth. This process only takes a few minutes longer but results in a far superior product. This is also an almond paste that can be eaten without baking (no raw egg).

      What you are describing is marzipan, not almond paste. Almond paste is mostly used as an ingredient in baking while marzipan is reserved as a candy/confection. The method you mentioned of boiling sugar is a technique used in candy making (like for marzipan) Understanding there are multiple ways to approach a recipe, I would hardly call mine a "mock" recipe, especially given most authorities in this space use the same ingredients (powdered sugar) and technique that I'm sharing.

      @@Owlbbaking I don’t know what most of the authorities did for a living but I am a third generation former owner of a pastry shop that is 100 years old this year. I have tried both ways and stand by my statement that your way affects both the texture and taste of the end product. Negatively.Commercially prepared almond paste (American Almond) is not made the way you make it. I don’t care what most of your “experts “ on line say.

      Yes, in most cases you'd use the almond paste as an ingredient in a baked recipe. If needed for a raw recipe, you could always use a pasteurized egg to make it safe. :)

      @@phuongkern8027 Yes, I think so! The egg white is used to help bind the rest of the ingredients here, so you should have success if you replace it with something else! You could try 3 Tbsp aquafaba or up to 3 Tbsp of applesauce. I haven't tried these personally, but let me know how it works out for you!! :)

    Now show us how to make almond cookies, or we call them pignoli cookies
