I was there for a week including Easter last year and it was packed with people; to see it like this is both beautiful and sad. Thank you for the "walk' - I have been there about 15 times over the past 12 years and I know most of the village very well - I hope all these businesses will survive and thrive once again in the not too distant future.

It’s not always tranquil, believe me .. ( she says after turning the oven on without realising there was a plastic dish inside.. and 5minutes later also spilling a full glass all over the table 😂
@@NickiPositano I turned my oven on and a fire started inside! Apparently, SOMEONE in this house cooked a whole turkey in too shallow a pan, and grease fell onto the oven bottom.

That bread was perfect for bruschetta....literally. Even sandwiches with some mortadella, provolone cheese and pickled eggplant etc.. I'd buy bread from a bakery if they'd make it like that. Perfect bread if you ask me.

Carlo seems to be a man that does not like to stay still. You have a lovely family and live in what can only be described as the most beautiful place on earth, Positano is one of my favorite places. I have only just discovered your channel and am going back through in an attempt to watch them all, it will take me a while but fun to watch when I have down time. Started watching your videos after planning a two week trip to Atrani that was to start last weekend. Needless to say now I visit Amalfi via your videos. I find your view soothing while cooped up in a suburb outside of Boston. Your videos really are a sort of balm on my soul since being there is a dashed dream. Hopefully next year I’ll get to see it with my own eyes!

Hi Nicki! We love watching your videos! Here is a recipe from my partner Luigi who’s Italian and makes all kinds of bread....you’ll need: 400g of caputo Rosso flour, 300ml of water, 50g of salt, 5grams of fresh yeast and a teaspoon of sugar. Process includes: stir and melt the yeast into the 300ml of water. Once the yeast is melted, add the sugar and mix well. Then add the salt and sift in the flour. Mix it up until the dough has a nice elastic texture for around 15mins. Put it in a bowl and let the dough sit for 20minutes with a wet dish cloth over the bowl (this will keep the dough moist). Every 20minutes for 3 sets, fold the dough into itself (all 4 sides). While folding the dough, keep your hands wet. After your 3 sets are complete, place dough into fridge for 15 hours( overnight is best) and keep it covered with wet cloth or plastic wrap. After 15 hours of rising, get a new bowl, place a new dish towel inside the bowl, sprinkle flour on top of the dish cloth, the place dough on top of floured dish cloth and cover the dough with the dish cloth that hangs out of the bowl. Let it sit in room temp for 6 hours. Then preheat the oven AND the dish/pot on convention bake to 220 degrees. Use an oven dish/pot, one with a lid is best (if no lid is available, place foil over the dish) then bake for the first 30 minutes with the lid on and then another 20 minutes without. . Then you have delicious, crunchy and rustic bread! It’s quite a few steps but it’s so delicious!! Enjoy! Hello from Toronto, Canada! Xx

nutella fixes everything. You probably already figured this out but what I learned during quarantine for bread making is this: no knead bread. Throw everything in a bowl, walk away for 15 hours or so and then bake it covered in olive oil, salt and rosemary.

I love your videos and adore to learn more about Italy and Positano. I've had a crush on Italy/Amalfi coast all my life .... and you've successfully made it even worse! My in laws are from Croatia and Carlo 110% reminds me of my father in law! They really could have been family. Anyway I took a little vacation in Croatia years ago, I enjoyed it very much, it's a beautiful place, and the food is also very good, and also the place where you live, even if I've never been, must be wonderful, as far as I have hearsay, so what to say, I hope you can travel soon, and in the meantime be satisfied with Mauritius !!!
@@NickiPositano Both my husband and I are planning to get to Europe soon. Then we will for sure visit your area. Maurius is, however, currently in its second lockdown. We were covid free for 9 months until beginning of March this year when a case somehow slipped through the very strict measures in place and a mandatory 14 days of quarantine in a special quarantine hotel, before allowed entry into the country. Hopefully the lockdown will be lifted soon thanks to the strict lockdown. My in laws were originally from Zagreb area but has lived most of their adult lives in South Africa where my husband was born. They hope to return permanently to Croatia in the near future. My brother in law has been back in Croatia for 17 years. It is a beautiful country specially the coastal areas. Mauritius is a great little island and a fantastic place to raise kids. We've lived here for 12 years. Hopefully you will put Mauritius on your bucket list too! We are on the west coast of Mauritius near a place called Le Morne which is famous for its underwater waterfall. If you are interested to learn more about Mauritius you can check out the vlog of Lucy Leheilleix. Oooh, perhaps you and Carlo may even consider retiring here! There are no steps, promise. I was so happy to see your video this morning. The beautiful scenery that I remember brought tears to my eyes but made me feel so wonderful at the same time. I have been in my home by myself for a month and this is just what I needed. Thank you so much. I am sure it is strange to see no tourists but so peaceful for you and the people of Positano. I was just working in my garden today and walking and huffing and puffing... Nothing like your steps though!! it's amazing how quickly and body gets out of shape!
What a great video so entertaining. My gosh Carlo never stops, I had a good laugh as you barley made it home going up all those steps. That’s why you have children so they can do it for you 😉. That banana bread you made looks yummy and that salad I will def make. Have never seen tuna in a large bottle like that. Loved the last scene the whole family together on the bed, wishing you all a HAPPY EASTER. I guess Skye is too old for an egg hunt!..............🤗🇨🇦
Wow Carlos is so industrious! I had to laugh when you died on the stairs LOL. It is amazing how easy it is to get out of shape When proofing the yeast, make sure the water is luke warm and add a bit of sugar.
