  • How to water back can fresh or frozen fruit
    Fill each jar with fruit
    make a simple syrup to the sweetness you prefer. We did 16 cups water and 8 cups of sugar.
    Fill each jar with hot simple syrup once your fruit is defrosted (if using frozen). Leave 3/4 inch headspace. Clean the top and apply a lid and ring fingertip tight.
    Water bath pints for 15 minutes and quarts for 25 minutes.
    Stores for 18 months.

      Absolutely! I have a juicer steamer - I even have rhubarb juice frozen in cubes from ice cube trays - really good in iced tea, or blended up with other juice.

    Love this idea!! I have some fruit I want out of my freezer and the juice would be ideal for kombucha. So glad I watched.

    After losing everything we had in the freezer, I highly recommend this. I have dehydrated a lot, but took the easy way out and didn’t can like I was taught to 😞 and it’s a very costly mistake I won’t make again. Thank you 🙏🏻 I’m looking into the Azure shopping. They have a stop not to far from me.

    What a great idea! I make healthy shakes all year and buy frozen fruit to put in the freezer. Never occurred to water bath frozen fruit.....seems so much easier. Thank you. 🤩

    I’ve done price comparison for Azure and locally sourced frozen fruits, and local prices are much better. If I want organic, it’s only a little bit more than as Azure which indicate they are not organic. The idea of canning frozen fruits is wonderful! I definitely need to clean my freezer out.

      Use any fruit you are comfy with! I do get some at Costco and it’s worked well.

    Some years my fruit trees produce, some years not. Last year, in NY state, we had a really hard, long, frost on May 18. A day that lives in infamy. All blossoms killed on the fruit trees. The only fruit I had on the farm were blueberries, raspberries and strawberries, and thank goodness I'm retired, because even though my hundreds of strawberry plants were covered with tarps, they were frozen underneath. I sprinkled water on them with the hose for hours, not sure how long to do it for, plus with that large an area, the ones I sprinkled first were freezing again by the time I got back around. I would feel the leaves and see if they were thawed out yet. So, I did save the strawberries.
    Whew! BUT - my area had NO apples, no peaches (peaches are iffy here anyway), no pears. I mean, even the hedgerow trees had no apples. NY is an apple kinda state - orchards in my area lost hundreds of thousands of dollars - I asked them!
    Anyway, canned fruit is just so useful to have on hand. I wish Azure Standard came closer than an hour and a half away! I've made jam from canned fruit, lots of cobblers, and of course on ice cream. There is nothing like having frozen black raspberries in the freezer, too, and getting them out in February when it is so cold and dreary out. This year, I have 38 'baggies' inside pint freezer bags of strawberries. Eating them half-frozen is one of my very simple pleasures! Actually I just finished up 2023 strawberries. They are SO expensive at U-pick - $7/quart if you can believe it. They are a pain to keep weeded, separate runners, etc., but I save hundreds of dollars.

      Ha ha, I didn’t even notice that. All of our windows were open and a breeze shuts that door. I usually have a wood block I stick in the way.

    Have you ever considered using unsweetened and unfiltered apple juice when canning? Yes, it is a bit more expensive, but I find the fruit retains more of its natural flavor.

      Busted! I told my hubby I forgot to move them. Yes! We will have a few garden bed options actually. We will have a high end and low end and compare them! Those are the prettiest soft blue and the others are a beautiful navy. It’s going to be an awesome garden redo.

    I didn't realize that I could do that. I am starting out late in my life to can things. I watched my mom do it as a kid but they had fresh fruit and vegetables so I thought it had to be fresh.

      Hello! Any deep pit will work. Just make sure the jars have 1-2 inches of water over the top. I also add an old towel under them or a little balled up foil so they aren’t sitting right against the pan.

      Comme elle le dit, prendre simplement une casserole profonde, mettre un linge au fond, mettre les pots en recouvrant de 1-2 pouces d’eau, mettre le couvercle et… voila! Pour faire du « water bath canning », pas besoin d’équipement spécialisé. Par contre, pour faire du « pressure canning », là ca prend une machine spéciale. Pas un simple autocuiseur mais bien une machine à pression.

    Ali! I got my sourdough starter. With my own starter I always get fruit flies. If you have any tips on keeping them away, I would love it! I put bleach down my sink (I don’t have a septic tank). I keep ACV in a bottle. It catches some, but it ruins my sourdough every time. Hoping the starter puts me ahead a day or two! I was using a coffee filter with a rubber band. Now I have the cloth bonnet. Thank you! I am SO EXCITED. Also, found out my Azure standard drop off is right by my house! So we placed our first order. We will get it last of this month. I could NOT find the clothes you mentioned in one of your haul videos. I looked right away and nothing came up. Is there a name for them?

      She’s not using a pressure canner. You can use any deep pot, just put a towel on the bottom so your jars don’t break

      You can use water but the flavor isn’t as good. I’d suggest light syrup or fruit juice.!

    If I want to can cranberries without sugar, only in water, is it safe??? Anyone knows? I eat cranberry compote with little sugar, and canning those cranberries in a simple syrup would be too sweet for me. Help!!
