I have been canning almost everything for 50 years....I LOVED this video as she is my kinda gal My mother in law always hot packed EVERYTHING and then she helped me and did it my way and she loved how easy it was and that is what she did for the rest of her life, I have picked bushels of blackberries from my patch and have run them through my juicer to remove the huge seeds, and it is wonderful for jam, toppings, to mix with lemonade on a hot day, MY neighbor and I canned our home grown chickens and that was an experience neither of us ever, repeated. I too wash my bottles and love the new lids. I will be watching this again, even though I don't have a lot of canning to do now.

I started pressure canning in 2022. Had only done jams, pickles....20 years ago. Keep all the special gear together--I have a round basket that fits right inside my Presto. Extra rings are a pain, I keep all the extras on bungee cords. If worried about not liking something, add water jars to keep things from clinking around in there. I always have some freezer space in case of a failure, or it's dinner! 😊

Wow! That was a big undertaking! I just canned 25# of Michigan blueberries on Tues. I got 12 qrts & 16 pints with a few left over in the fridge. Thank you! I love how you use produce from azure to stock your pantry. I really appreciate how you will go off the recommended guidelines but explain why. That has taught me so much. It makes following the guidelines much easier to know why and when I can push the boundaries a bit. I got the blue berries last year and we made pie filling. That is a huge treat for pancakes or French toast. With the canned berries can you use them for things like muffins? Just has me thinking… great video!
Awwww…I’m glad you’ve found my info useful. You can use the canned berries for muffins, but they’ll definitely be mushy. When I was a kid, my dad used to buy muffin mixes with tin canned blueberries. I do think frozen berries would be better for muffins though.

How long can I store something.. it will last a year in the freezer.. ok let’s do 9 months there. I am so glad I found you. I have been considering canning some of my azure blue berries and strawberries. I would like less sugar in my strawberries, so don't know how I'll do that. I want some to add to my yogurt. And I try to not eat unnecessary sugar. But I'll think I'll have to use some for this.
@eluzabethhall1716 & flattire farm - I'm wondering if you couldn't cook the strawberries down some, so it's a reasonably thick strawberry "fruit spread" kind of like Polaner Allfruit brand? It's very low sugar & thick. Maybe do it in small jars - enough for a couple of yogurts? They can for the same time as pints, but you shouldn't have to add so much sugar. What do you think Chrystal? Am I giving bad advice here? It's an extra step to cook them down some, but I'd think you could use less sugar that way. I'm currently looking for low/no sugar ideas for everything! That's why I'm revisiting this video tonight. REFRESHER COURSE!! 😂
@@sandijammes7761 strawberries have a pH of between three and 3 1/2. You don’t have to add any sugar if you want. The sugar is just for taste not for safety. You could definitely cook it down as long as you didn’t make it too thick. The heat has to be able to penetrate equally all the way to the middle of the jar. Maybe don’t make it any thicker than apple butter. 💕💕

Just found this, when I have a few small bags of Gogi, red current and blueberries in my freezer. I just want a sauce to put on yogurt or pancakes so a tiny bit of maple syrup.
I bought a big container of mixed berries. It had blackberries, but I found out that they were mulberries. Oh my goodness. I liked them much better. They were sweet and not tart at all. I love adding sugar to strawberries to get out all that juice. Good job. Stay safe my friends ☺️

Hey friend, I rarely debubble anything. Personally, I find that the headspace isn’t affected much by debubbling. But you surely could debubble of the berries in this canning method if you wanted to. 😊

Hey friend, If you go back through I explain this process. I water bath can for the normal time for berries, but I don’t start the timer until 10 minutes after the canner has vent just like normal water bath canning. It just takes longer to get to that point because the jars are at room temperature. The jars aren’t necessarily cold when they go in the water, because I wait until the contents in the jars come to room temperature before it even touches thr canner. I hope this helps. Be blessed.
I would say that all canned strawberries will be mushy. If I were to do fresh or frozen(then thawed) sliced strawberries, I’d do them the same way. Jar up at room temp, then water bath for 15 min. Thanks for your question, let me know if you have any others. 😊

Great question! Here’s my novel of an answer. 😊 There’s not an approved method for canning frozen peaches, but this is what I would do in my kitchen. I would follow the guidelines as close as possible, here’s the link for reference. nchfp.uga.edu/how/can_02/peach_sliced.html I would make sure the peaches were sliced, and I would put them in the jars with water and let them come to room temperature just as I did the berries. Peaches have a pH low enough that they are safe for a water bath canning, so pressure canning is not required, with this one caveat: white peaches can exceed the PH safe for water bath canning. So, I would make sure that I used yellow fleshed peaches. I would add a tablespoon or so of lemon juice to each jar to maintain the color and to lower the pH (increase acidity) for extra safety, because this isn’t an approved method. As a quick sidenote, the science behind what makes water bath canning safe is making sure that the pH is low enough. The lower you go on the pH scale the more acidic something is. Peaches have a pH between three and four, which makes them acidic enough to safely waterbath can. The threshold for safety for water bath canning is a pH of 4.6. This means that only things below, a pH of 4.6 are safe for water bath canning. Everything with a pH higher than 4.6 has to be pressure canned. OK back to the peaches… I would use the raw pack time designatd by the national center for food preservation, which is 25 minutes for pints and 30 minutes for quarts. I absolutely would use fresh berries and can them this way. But I would not use other types of berries other than the ones in this video. Different berries have different levels of acidity and only certain ones are safe for waterbath canning. Be blessed friend! Is the plan to eat the berries on their own as if they were fresh/straight from the freezer or cook them later into something else? Say making blueberry pancakes or adding strawberries to eat with yogurt, stuff like that? If so that’s mind blowing, I never would’ve thought of canning them for long storage!🤯 I thought you’d have to can them as a jam or something else but not on their own like this. I’ve started to look into possibly canning/preserving, I don’t have a garden area to grow my own food but there’s little farm stands I can buy stuff in bulk. I know nothing about canning, so been stocking my freezer with small bits & pieces & getting inspiration before investing into canning supplies.
Hello friend! Yes, the plan is to have them to mix in stuff like muffins or make pie filling, add to lemonade, etc. The texture is definitely different. They get mushy. You might consider starting with water bath canning and see how you like it. All you really need is a big pot and some jars. Throw a dish towel in the bottom of your pot so the jar don’t have direct contact with the bottom of the pot. Bada-bing bada-boom. Nothing expensive to buy. 😊 If you want a little info on what can be canned in a water bath canner versus pressure canner, I give a little science lesson at the very beginning of this video. Great question: if you wanted to heat everything up before you put it in jars and put it in a hot canner then you would water bath quarts for 15 minutes. If you are raw packing, like I did in this video, you would can quarts for 20 minutes. Happy canning friend.😊
Usually not if they are sealed in the box. I also don’t heat my lids and jars first or debubble. We’re outside the box for sure at our house. Be blessed friend.
Great question, friend. I find that for most things debubbling doesn’t affect the headspace enough to make a difference. Sometimes I’ll tap the jar on the counter to get the bubbles to rise if there is some air trapped. I’ve not had any issues with it, but definitely not the “approved” method. 😊

For a whole frozen cherries you would of course let them thaw completely and you would can end the same way that I can do the blueberries, but you would increase the water bath canning time to 25 minutes whether it’s pints or quarts it’s the same 25 minutes for cherries. I’m happy to answer your question about the apples, but first I’d like to know what form they are in. Are your apples sliced, diced, or some other form?
@@loganann25 that’s an awesome score. And it’s great that you’re making sure those things don’t go to waste. You can can sliced apples in water, just like we did the blueberries, in pints or quarts and you’ll water bath for 20 minutes. You can add some ascorbic acid to help deter discoloration. But if you heat the apples up in a little bit of water or light syrup and let them boil for five minutes before you put them in the jars, you will get a much better product in the end. Although not necessary. Same headspace as the blueberries half an inch. You might consider canning some as applesauce, or apple pie filling. Yummmm!! Hope that helps. No longer per USDA - the water bath or pressure canner process sterilize the jars provided you are processing for 10 minutes or more. Saves time, money and no more scalded hands, wrists or arms!

I am so glad I found you. I have been considering canning some of my azure blue berries and strawberries. I would like less sugar in my strawberries, so don't know how I'll do that. I want some to add to my yogurt. And I try to not eat unnecessary sugar. But I'll think I'll have to use some for this.

@eluzabethhall1716 & flattire farm - I'm wondering if you couldn't cook the strawberries down some, so it's a reasonably thick strawberry "fruit spread" kind of like Polaner Allfruit brand? It's very low sugar & thick. Maybe do it in small jars - enough for a couple of yogurts? They can for the same time as pints, but you shouldn't have to add so much sugar. What do you think Chrystal? Am I giving bad advice here? It's an extra step to cook them down some, but I'd think you could use less sugar that way. I'm currently looking for low/no sugar ideas for everything!

@@sandijammes7761 strawberries have a pH of between three and 3 1/2. You don’t have to add any sugar if you want. The sugar is just for taste not for safety. You could definitely cook it down as long as you didn’t make it too thick. The heat has to be able to penetrate equally all the way to the middle of the jar. Maybe don’t make it any thicker than apple butter. 💕💕

Just found this, when I have a few small bags of Gogi, red current and blueberries in my freezer. I just want a sauce to put on yogurt or pancakes so a tiny bit of maple syrup.

I bought a big container of mixed berries. It had blackberries, but I found out that they were mulberries. Oh my goodness. I liked them much better. They were sweet and not tart at all. I love adding sugar to strawberries to get out all that juice. Good job. Stay safe my friends ☺️

I did have one jar siphon just a bit because I pulled it out of the water while the water was still boiling. Imagine that, me not being patient enough. Ha!

Hey friend, I rarely debubble anything. Personally, I find that the headspace isn’t affected much by debubbling. But you surely could debubble of the berries in this canning method if you wanted to. 😊

They are definitely like canned fruit. Ha! We use it for making syrups snd adding to oatmeal or smoothies. 😊

Using the cold jar method, how long would you process the fruit using water bath canning??
Hey friend, If you go back through I explain this process. I water bath can for the normal time for berries, but I don’t start the timer until 10 minutes after the canner has vent just like normal water bath canning. It just takes longer to get to that point because the jars are at room temperature. The jars aren’t necessarily cold when they go in the water, because I wait until the contents in the jars come to room temperature before it even touches thr canner. I hope this helps. Be blessed.

Yep! Peaches will water bath for 30 minutes.
How would I can sliced strawberries? If I did them the same as you would it make them mushy? Thank you.
I would say that all canned strawberries will be mushy. If I were to do fresh or frozen(then thawed) sliced strawberries, I’d do them the same way. Jar up at room temp, then water bath for 15 min. Thanks for your question, let me know if you have any others. 😊

Can you use this same process to can frozen peaches?
Great question! Here’s my novel of an answer. 😊
There’s not an approved method for canning frozen peaches, but this is what I would do in my kitchen. I would follow the guidelines as close as possible, here’s the link for reference.

I would make sure the peaches were sliced, and I would put them in the jars with water and let them come to room temperature just as I did the berries. Peaches have a pH low enough that they are safe for a water bath canning, so pressure canning is not required, with this one caveat: white peaches can exceed the PH safe for water bath canning. So, I would make sure that I used yellow fleshed peaches. I would add a tablespoon or so of lemon juice to each jar to maintain the color and to lower the pH (increase acidity) for extra safety, because this isn’t an approved method. As a quick sidenote, the science behind what makes water bath canning safe is making sure that the pH is low enough. The lower you go on the pH scale the more acidic something is. Peaches have a pH between three and four, which makes them acidic enough to safely waterbath can. The threshold for safety for water bath canning is a pH of 4.6. This means that only things below, a pH of 4.6 are safe for water bath canning. Everything with a pH higher than 4.6 has to be pressure canned. OK back to the peaches… I would use the raw pack time designatd by the national center for food preservation, which is 25 minutes for pints and 30 minutes for quarts. @@AnnieCarvalho hello! Yes. The sugar is completely optional and does not add to the safety of canning berries. You can leave it in, take it out, add more, it won’t make a difference except for what it tastes like. 😊

I absolutely would use fresh berries and can them this way. But I would not use other types of berries other than the ones in this video. Different berries have different levels of acidity and only certain ones are safe for waterbath canning. Be blessed friend!

Is the plan to eat the berries on their own as if they were fresh/straight from the freezer or cook them later into something else? Say making blueberry pancakes or adding strawberries to eat with yogurt, stuff like that? If so that’s mind blowing, I never would’ve thought of canning them for long storage!🤯 I thought you’d have to can them as a jam or something else but not on their own like this. I’ve started to look into possibly canning/preserving, I don’t have a garden area to grow my own food but there’s little farm stands I can buy stuff in bulk. I know nothing about canning, so been stocking my freezer with small bits & pieces & getting inspiration before investing into canning supplies.
Hello friend! Yes, the plan is to have them to mix in stuff like muffins or make pie filling, add to lemonade, etc. The texture is definitely different. They get mushy.
You might consider starting with water bath canning and see how you like it. All you really need is a big pot and some jars. Throw a dish towel in the bottom of your pot so the jar don’t have direct contact with the bottom of the pot. Bada-bing bada-boom. Nothing expensive to buy. 😊

It’s completely safe to do your strawberries in quart jars. All you do is increase your processing time a little bit.

I don’t see why not. The jars might not like the temperature change though. The berries will still need yo he completely thawed before you start water bathing. Good luck friend.

Great question: if you wanted to heat everything up before you put it in jars and put it in a hot canner then you would water bath quarts for 15 minutes. If you are raw packing, like I did in this video, you would can quarts for 20 minutes. Happy canning friend.😊

Usually not if they are sealed in the box. I also don’t heat my lids and jars first or debubble. We’re outside the box for sure at our house. Be blessed friend.

Great question. For a whole frozen cherries you would of course let them thaw completely and you would can end the same way that I can do the blueberries, but you would increase the water bath canning time to 25 minutes whether it’s pints or quarts it’s the same 25 minutes for cherries. I’m happy to answer your question about the apples, but first I’d like to know what form they are in. Are your apples sliced, diced, or some other form?

@@loganann25 that’s an awesome score. And it’s great that you’re making sure those things don’t go to waste. You can can sliced apples in water, just like we did the blueberries, in pints or quarts and you’ll water bath for 20 minutes. You can add some ascorbic acid to help deter discoloration. But if you heat the apples up in a little bit of water or light syrup and let them boil for five minutes before you put them in the jars, you will get a much better product in the end. Although not necessary. Same headspace as the blueberries half an inch. You might consider canning some as applesauce, or apple pie filling. Yummmm!! Hope that helps. @@VonM. Hey friend. Lots of people preheat their jars. I do not. The jars end up being completely cooled back to room temperature before I ever get anything into the jars. That’s definitely the case and this recipe for sure. Keep in mind this is not approved method and I do things very different. I’m just showing you what works in my kitchen and hope it inspires you. No longer per USDA - the water bath or pressure canner process sterilize the jars provided you are processing for 10 minutes or more. Saves time, money and no more scalded hands, wrists or arms!
