  • This video shows how to make a lemon pickle in the traditionalSouth Indian style. This is an easy method and the pickle is ready to be served in about two weeks. When stored in a clean dry jar, the pickle lasts for months.
    Lemons 12
    Salt 4 Tsp
    Chilli powder 4 Tsp
    Turmeric powder 1/2 tsp
    Asafoetida/hing 1 tsp
    Mustard seeds 1 tsp
    Methi/Fenugreek seeds 1 tsp
    Til/Sesame oil 1cup + 1/4 cup

    Actually Amma this achar was prepared by my father in law . This video was treat for my old memories. I recalled his all tips on your every tip. Amma thank you. He even use to prepare lemon with only salt .

      Are you referring to the whole lives in coarse salt? I realize that limes don't soften in the iodised salt we now buy.... even the coarse salt. I am experimenting with Himalayan pink salt!

      usually the lemons are slit and stuffed with salt.

      Amma he use to Pierce them with some big needle and put salt in the ceramic jar. Within few months the whole lemon use to turn dark brown which was either consumed with curd rice directly.

    Thank you Gita ji. Had a bumper winter crop of lemons and despite giving away tons to colleagues and neighbours I still have so many left. Searched TH-cam and saw many famous names but instinctively clicked your video. Best decision. Such a great recipe and clear explanation. Totally idiot proof, which is important to me because too many ingredients confuse me and I end up missing or forgetting something or the other.

      if you are planning to make a large batch I suggest adding more oil to it at leats 1/4 inch above layer of pickle for longer shelf life

      Thank you, will keep this in mind. Starting off with a small batch in case I goof up. I'm using lemons and they are slightly larger so hopefully the recipe should work the same.

    Thank you! This may work well for the limes on our farm. ..they have thick rinds!
    I hope you don't mind me sharing my experience hereand a memory too!
    In one of your videos you had shared a recipe using drumstick leaves and mentioned that they were not easy to obtain.We have an abundant supply but didn't usually use them though we enjoy the drumsticks. I started using them after your video and also cooked some and shared with the farm workers.
    My memory is of my mother teaching people to cook ...and eat..drumsticks in Jodhpur. Our quarters had a drumstick tree! That story is over 60 years old!
    You could choose a local variety of drumstick and plant a few seeds in a pot. It would give you leaves at least. As it grows larger maybe it could be planted on a small vacant area. You would get drumsticks within a year!

      @Maureen Samson Thank you for your lovely comment. I don't even remember when I was last was able to eat drumsticks. I liked a preparation made with ground 'burned/roasted' coconut pieces, roasted raw rice, red chilies, turmeric etc and cooked in coconut milk. I live in the US in a state with a pretty harsh climate where it is impossible to grow tropical plants, so when nostalgia for old familiar foods strikes me, I just close my eyes and re-create then in my memory. Enjoy the beautiful bounty of your drumstick tree!

      My friend and her husband in California have tried to grow drumsticks...not very easy, even there! However I think they mentioned an abundance in Hawaii where nobody ate them!
      I must share that we struggle with borers damaging the trees and this variety does not like the heavy and prolonged monsoons....hence my advice on a local variety, which seems to do better!

      ​@@maureensamson4863 Is it possible to spray with a solution of neem oil? You can get it from Amazon. Another powerful (and non-toxic to humans) pesticide would be a solution of soaked coffee grounds, tobacco, Listerine solution and a few drops of dish-soap. I would suggest not spraying on the blossoms and this might harm bees. But spraying on the bark might work.... Also garden sulphur might be effective. I don't think there is any antidote for heavy monsoons! Best wishes!

    Super!I remember this is how my mother use to prepare lemon pickle!Our house was full of flavour when the raw lemons were getting roasted!Now a days we buy from shops ready made!

    This is really awesome, So simple to do we use to squeeze the juice and mix the spices in the lemon then add the lime juice store it for one week and ready to use no tempering.

      When you store for long time please add more oil on top about 1/4 cup additionally. Also, store pickle in fridge so that it doesn't get spoilt easily

    How wonderful your kitchen must smell... I would love to sit there while you cook.
    I didn't even know you could brown a lemon... we just don't do it! I think this is like for us preserving lemons... we just do it with the salt and pack it in a jar.
    I looked up hing a few months back and I want to use it a little worried though. I am with or without the hing going to try this.

    I have watched countless videos on lemon pickle but this is unique. What is the purpose of saying in oil before cutting ? Will it help to soften the skin fast . My lemon pickle does not soften even after months together ? Please help ..

    Ma'am I made this pickle just now just as shown. Can I add the juice of 1 or 2 lemons to the pickle? I want to avoid the bitter taste as much as possible, that's why. Will it spoil if I do that? Esp. if kept outside?
    I have also cut and stored lemons with a lot of salt in a plastic jar which I will be keeping outside to help soften/marinate faster. I have currently kept the whole jar open in the sun. Should it be kept open or closed in the sun? And for how many days? Sorry for so many questions. This is my first time.

      You can add lemon juice. for longer shelf life pls add more oil to the jar especially if you are keeping outside. For lemon peel pickle see my recipe on my channel playlist where I have given detailed instructions

    Madam, nice to see your lemon pickle preparation. I am going to try at home. Few clarifications, please help.
    a) let me keep it outside after preparing like your way. I think not require to store it in fridge. Right.
    B) I think this method of preparation won't give bitter taste right.
    C) we have to stir it daily till 10 days and then we can use it right.

      You can keep outside but be sure to add sufficient oil on top about 1/2 inch above pickle layer then it will not spoil, otherwise safer to keep in fridge.
      yes it will be ready in ten days

    Gita ji, can the lemons be cut before putting them in the oil? Because this time the limes i got are quite big, and becomes difficult to serve the half lime. And if cut into more smaller pieces, after we take out from the oil, it keeps slipping while cutting 😊
    Can this method also be followed? Though I did the way you had shown. And came out very well.

    Thanks for a wonderful lime pickle. We are south Indians and do the same process. But the pickle tastes bitter. Why? But we are first mixing it with salt after removing the seed. This we keep for 10 days and then do the process as explained by you. But it tastes bitter. Why?

      Sometimes if the spinoff the lemon is very thick it tends to be bitter

    Could you please tell me why you had to saute the whole lemons before proceeding further..Normally pieces of lemons are fried in til oil and the pickle masalas are added gradually thereafter..I have seen my mother and paati doing this way..Thank you gita mami for your innovative recipes... Regards.

    Can I put some more oil so that it last longer. Can it be made in mustard oil or canola oil. If can answer mam I will be thankful

      Please do add more oil for longer shelf life..Traditionally it tastes best in Sesame oil.. Next best would be canola

    my mom dont saute them in oil directly she cuts n adds all ingredients after 3rd day .on 1st day only lemon n salt

    The chilli powder is not roasted..
    ?we need to use normai chilli powder or kashmiri chilli powder?

      That is why we pour hot oil on top of it. Kashmiri chilli powder is fine
