What can I do If I fermented my pickled lemons for 2 weeks and can see that the peel isn’t soft. This is probably do to the weather being cold and I may have selected lemons that were too thick. Yes, JK, you could surely use jaggery in place of sugar. But see that it is grated fine for it needs to dissolve quickly. Also, if using jaggery, you'll have to add around 20 to 25% more of it by weight as compared to the weight of sugar mentioned in the recipe. I have a quick lime pickle and lime crush (super delicious) here. th-cam.com/video/WeHE80PskB4/w-d-xo.html The lime crush is easier to make and can be enjoyed right away. For the lime pickle you have to give it time to mature and also make sure you don't boil it for more than a few seconds , or the peel will turn a little firm.

Yes you can, Dulcine. But you'll have to increase the weight of jaggery as it is less sweet as compared to sugar. For method 1 you could add 320+ 80g + 400g jaggery to start with. At the final stage when the pickle is ready for use, if you taste the pickle, and you find it needs more sweetness, then add 2-3 tbsp of finely grated jaggery directly into the pickle, stir it well. Keep aside for 2 days. For method 2, you could add 280+70g=350g jaggery. Adjust the taste at the end if necessary. Hope this helps.
Mine didn't, Lavina. I can't understand how yours did. Perhaps you boiled it a little bit longer? Also, even if your pickle did, it could be very slight. Because salting the pickle pieces gets rid of the intense bitterness. What you were left with could have been a natural aftertaste. Once the pickle matures it develops its characteristic taste. There's nothing to be done afterwards.
