I fell so in love with the way Gennaro describes how to cook pasta. I feel really excited, 'just' because noddles and boiling water! It's so full of passion! You can think he's an artist, describing that there's nothing important, besides a pen and a paper, for a masterpiece.

Another good tip, is to leave the lid on, after you've put your pasta in (1:41), and then turn your stow all the way down to the lowest point. The water will keep boiling as long as the lid is on, and you save a lot of gas/electricity.
***** Do you have a reason for that?
***** That doesn't make any difference. Cooking at higher degrees uses more electricity, if you have an electric stove, or more gas, if you have a gas stove. So you save either electricity or gas, by using lower degrees. If you use wood or coal, then that's a different thing all together.

i ad sometimes olive oil and salt by thin-pasta, and by thick-pasta i ad some lemon-juice...even on korean-green pasta i ad fresh leafs of spinage cooking with some 2 little pots of pesto in it to make it greenish having extract binding in the pasta...

Maybe it's down to the pasta I buy, but a rapid boil turns the outside a little mushy before the pasta is al dente. As soon as I put the pasta in, I turn the heat down to low and put the lid on, making sure to stir half way though just incase it starts to stick. Seems to come out much better this way.
The quality of pasta is fundamental. Try De Cecco (the brand Gennaro used in this video) or Garofalo if you can find them ;)

It doesnt matter what salt you put in, it all dissolves in to Na+ and Cl- ions.
I think it does especailly with salt sold in America. I taste the difference :) I definitely dont wnt GMO salt in my food.
@@kenlee2923 Okay, I know this is a 3 month old comment and possibly a troll at that, but... you can't have genetically modified salt. I mean, salt is pretty much a rock. It has no genetic material to modify. You are correct that different salts can taste different, which is because most salt you can buy has added iodide salts to prevent iodine deficiency (typically resulting in a goitre), and the concentration of the salts and anti-caking agents added to commercial table salts can affect the taste. You might even be able to taste a difference between fresh salt and old salt that has been exposed to the air, because some of the iodide in the salt will have oxidized or evaporated over time. All this to say, as long as you make sure your salt has some iodine in it, it is safe to use and there is no danger of it having been genetically modified for... growth.

Good salt increase the quality of the pasta water and the temperature itself

Guys, you don't need expensive sea salt for this, the only difference between fleur de sel and regular table salt is the texture, which is lost when dissolved in water. Make sure you get good quality table salt without a ton of additives though.
