    I know you don't read your comments Gordon, however I've just 'practiced' making rice and it turned out better than anticipated! 50g of rice and 150ml of cold water and I followed the method you described. You did say 8 to 10 minutes and I gave it 9. The result was extremely satisfactory and I combined it with some leftovers and have had a lunch with no waste. I know how to do the onion as my daughter has already shown me. I'm off out shortly to buy a steel as I usually sharpen my knife on a whetstone, which can be more of a chore than using a steel. I'm 61 and everyday is a schoolday.... I've so wanted to master rice:-) Cheers!

      Steel isn't for sharpening, it's for maintaining an already sharp blade and having to use the stone less. When the edge chips or erodes away, only with a stone will you be able to get a new edge

    Olive oil is fantastic at many things, but it does not prevent spaghetti from sticking together. Because it floats to the top of the water while the spaghetti is cooking in the water, having the oil there does nothing to prevent the pasta from sticking together while cooking. Furthermore, when you drain the water and oil away, a coat of oil is left on the pasta. Although this may not seem like a problem, the coating of oil prevents sauce from sticking to the pasta, making it difficult for the pasta to absorb the flavor of any sauce you put on it.

      I liked this video until it got to the part you're talking about. Oil, in general, is not great when cooking pasta in large part because it minimizes the ability for the sauce to stick to the pasta and it doesn't really do anything. I'm wondering if 8 years later he has a different opinion on this.

      Mind you chef's true methods are very coveted and not given out freely.

    little things but if you want consistent diced onion, you should cut perpendicular to the gradient of the onion. That way you don't have rectangular pieces from the edge of the onion. It takes a little practice, but with practice it then it doesn't take any more time than slicing straight up and down. You also don't need to do horizontal cuts at all. The onion is already segmented there. It's completely unnecessary to get a perfect dice. I know a lot of people will scoff at some random making points about a video made by an accomplished celebrity chef, but I let the results speak for themself

    I looooove watching Gordon cook and his food tips have really helped me, but I have one slight issue. Part 1 of issue: he didn't sharpen the knife, he honed it. Honing it is a way to move any slightly misplaced material on the working edge back into line, which should be done before every use. Eventually, it will get rounded and maybe even chipped. Part 2 of issue, kinda still part 1: he didn't actually show how to sharpen the knife. When you sharpen the knife, you are grinding off the material to get a fresh edge that you can then hone when it starts feeling dull. Sharpening should be done once or twice a month for fairly regular use.

    Worked in a kitchen years ago.
    There wasn't a single sharpening steel in the whole restaurant.
    When I asked why the chef said to me "because you haven't got a clue how to use it!"
    I disagreed. Having juts gone to school and learned how there.
    He showed me just how badly I'd been trained and then told me if I wanted to learn he would teach me. But under no circumstances was I allowed to use one in the restaurant.
    After every shift he would inspect, clean and sharpen all knives himself.
    Even the ones I owned personally.
    I never heard of another chef doing this before.. or since..
    But he was right.
    I was clueless. My knives were SO much better after he started sharpening them with his high quality water stones.

      i feel like he shouts in his shows (esp hell’s kitchen) because the chefs there have all been trained and should know what they’re doing, but make rookie or even dangerous mistakes.
      i remember one time a chef almost served undercooked fish to a pregnant woman in hell’s kitchen, and that chef was very much deserving of the shouting that came afterwards.

    For cutting onions, one more cut was missing for the cubes to be perfect.
    No one puts anise in rice.
    To remove the skin from salmon, just use hot water on the skin, and it will come off.
    The use of the honing rod is correct.
    Pasta doesn't need olive oil in the water. Here, you disrupt how the sauce adheres to the pasta later. Just water, salt, and a stir halfway through cooking.

      As for rice, sometimes what I does is toss some frozen or canned peas and carrots in the water as the rice cooks. Add black pepper and either salt or creole seasoning. Once cooked, toss in some canned tuna, drained (my cat gets the liquid). Add mayo, mustard, soy sauce, perhaps some hot sauce, and stir well. It should have a fairly thick consistency thanks to the mayo and mustard. the colour will be mostly dominated by the mustard, giving it a yellowish look.
      Get a couple slices of bread, put on your condiments of choice (I typically use mayo and dijon mustard (normal mustard was mixed into the rice), then make a sandwich of it. Cheap, relatively simple, you've got some protein (quite a lot actually) from the tuna, and there's veggies in there which is good (don't want scurvy after all), but most importantly, I find it to be delicious. It's not something you'll see in one of Gordon Ramsay's restaurants of course, but it's welcome on my plate any day.
      Another version of this is to replace the rice with scrambled hardboiled eggs, do away with the tuna, replace the soy sauce with Worcestershire sauce (pronounced worse-tur-sure for anyone who's curious, I used to pronounce it war-chester-shire), and the veggies are optional. I typically go without.

      I’ve spent a bit of time in England, just generalizing here, but I’ve noticed when they try to cook foods from other countries they leave out a lot of the spices that make the food unique. Perhaps they are diversifying the dish or they don’t think the exotic spices make a big enough difference to import? Originals are always better to me. 😎

      Initially, I had the same thought, but if you think about it: there are people who don't like fish skin. There are also recipes where you might not be frying the fish up and therefore the skin would just be flabby and gross. In those cases, you can skin the fish, fry it up, and use it as a garnish. It's also a good "patience" skill which a lot of new cooks lack because they want to be able to do everything like a chef who has been cooking for a few decades.

    I use a rice cooker. Perfectly cooked every time! It even keeps it warm until you are ready for it to be served!
    I don't cook fish because my kids won't eat it!
    I buy knives that never need sharpening!
    I buy Angelhair pasta or homemade pasta, or rice pasta cooks super fast! Time savers are a huge part of my life because I have two kids with Autism. Distractions like cooking gives them time unsupervised, which is a recipe for mischief. Not good! ...Unless you enjoy cleaning up big messes, and don't mind your favorite things being vandalized...

    Hi from 🇵🇱 I would like to share the advice that I heard as a child in a science program and that I still use today :) Onion doesn't irrotate the eyes- it irritates the receptors in the nose. When cutting an onion, just stop breathing through your nose, open your mouth and breathe through it, not through your nose- that's all :)

    Another tip is to cut an onion near the stove when it's hot, it'll prevent tears or make them go away if caused by onion.

      Use a sharp knife... Most of the stuff that makes you cry comes out because you're having too much pressure on the onion. With a really sharp knife this doesn't happen and there's nothing that makes you cry...

    The finely chopped onion is exactly the same as a diced onion apparently. Which is not the case. Diced and finely chopped is very different. But to no surprise most chefs will teach you in some small way a different way to dice an onion.

      @@mimic5121 tis' a different type of rice,a more humid one, used to make stuff like makis a.k.a sushi. More popular in Japan, here in Mexico when it ends up like that we call it "arroz batido" which means its more humid and clumps together, as well as some of the grains get blown up (kinda)
      And then there's the more common well done steamed rice, I've done both so i know what I'm talking about.

      If you're doing it right, being a chef is very often fast-paced. Food goes from perfect to dry or burned in minutes or less. A lot of proper chefs have that same habitual speed.

      If you want a perfect fried egg. put a little oil in the pan then put immediately the egg.. Let the pan heat slowly as it slowly cooks the egg then season with salt.
