- Follow me on my weight loss journey and see what I eat in a day on a vegan low fat high carb plant based diet. I follow Dr. McDougall's Starch Solution and Maximum weight loss plans including 50/50 plate whenever I can.
In this week's video, I show you how I make three delicious meals suitable for weight loss: Carrot cake oatmeal, Easy creamy ramen noodles, and Vegetable wrap. These meals are low fat but will keep you full and satisfied as they are full of fibre and goodness.

Ramen noodles (serves 1):
Broth:
1 low salt stock cube
2 pieces of kombu seaweed
1/2 cup plant milk
1 tbs white miso paste
Creamy peanut paste:
1 tbs PB2 powder
3 tbs water
1 tsp rice vinegar
1 tsp sugar
1 tbs light soy sauce
Toppings:
80g udon noodles
1/2 carrot
2 spring onions
6 shiitake mushrooms
1/2 red sweet pepper
2 tbs light soy sauce
Handful of bean sprouts
1 tsp red pepper flakes

Maybe slicing your squash in long strips will make it easier to roll your burrito well that’s what I find that helps me. Great video.
