The Best Way to Make Rhubarb Crisp

  • In the spring many gardeners have a surplus of rhubarb, and during this time "rhubarb crisp" is a popular way to use it up - but in my opinion, most recipes for rhubarb crisp are lousy! In this video I show a better way to make it. give it a try and let me know what you think!
    Fill:
    5 cups chopped rhubarb
    1/2 cup white sugar
    Crisp:
    1 cup flour
    1 cup brown sugar
    1 1/2 cup oatmeal
    1 tsp cinnamon
    1/2 tsp nutmeg
    1/2 tsp salt
    1/2 cup butter
    Use 9x9 pan

    Greg, I made this with apples and my Illinois winter squash, which is a sweet white winter squash. It was excellent! If you’re going to garden you’re also going to have to cook and bake. Please keep the garden and cooking videos coming. 🥖🍞🥧🥮👍

    Thanks for sharing your rhubarb crisp, Greg ! I also love it. I am always experimenting with flavors and textures. I sometimes add a layer of fresh mint leaves on top of the bottom crust to give it a bit of mint sparkle. If I want it a little less tart, I add a layer of apples on the bottom crisp before adding the rhubarb. Instead of adding sugar to the rhubarb, I add pineapple juice and/or apple cider with corn starch for thickener. I also like to sprinkle dried cranberries on top of the rhubarb for a pleasant surprise.
    For the crusts, I use coconut oil instead of butter. I also like to add Chia seeds, Flax seeds and Hemp Hearts to the crust mix for extra healthy ingredients and a bit more crunch. I also add a teaspoon of ground ginger and some molasses to the crunch mix for extra flavor. Just some ideas if you are into experimentation with the taste buds.

    A crust on bottom. Love it! My rhubarb which I gave compost and a good layer of mulch this winter is looking really good! Can't wait to try this. Thanks

    One cup of white sugar plus one tablespoon of molasses kneaded by hand for about a minute will make light brown sugar. It’s really quick and easy and cheap.

    You and I have opposite sensitivities; I can't have gluten, so no flour. However I have made crisp with just oatmeal and it works fine; I often throw in some apples if I am short on rhubarb. I am going to try your bottom crust method too! BTW I like this hot with a scoop of vanilla ice cream for a "company" dessert.

    Nothing beats old fashioned desserts like crisps and crumbles! My rhubarb is now looking a bit sad with our mid summer dry weather but I'm definitely going to try this version with peaches when they come out in a few weeks.

    Hey Greg...was just admiring yr toaster because we need a new one. Is that a corner unit? May I make a suggestion 2 you and 4 others that may read this. It is wise to always keep yr toaster or any other small appliances that have heating units in them due 2 manufactures issues . As in catching on fire. The fire chiefs suggest this all the time and when my sister cld have had her hs burnt down due 2 her toaster which caught her kitchen cabinets on fire and surrounding wall. Fortunately their dog woke them up because she didn't hear her smoke alarm . Anyway..I have reminded many family members to make that a habit to pull their plugs after use with pictures of my sister's toaster and the partly burnt kitchen. Go now and unplugged yr toaster....I'll b watching in yr next kitchen video. 😁🍞

    Yum, yum, yum. My rhubarb is still small, just put it in last yr. But I can get some from my folks! Going 2 bake this and use real local whipping cream on top!

    I chopped up some rhubarb this evening, and I am making an apple rhubarb crisp tomorrow. Perfect timing! Your recipe looks like it has plenty of crisp. some recipes I have had to double the crisp, because it was just not enough. This looks great with a bottom crust.

      @@maritimegardening4887 I ended up finding some rhubarb in the freezer from last summer, so I had 5 cups. My daughter said it was good that I managed to keep that rhubarb tanginess in there, so it's good I didn't add apples. It was delicious! I'm having another piece in the even as I type this. LOL Great recipe!

    Looks good, All depends how tart it is would make my decision if I add Vanilla ice cream or not. If it really tart ice cream for sure if not then it's good enough like it is. cheers

    So, in my opinion the best way to make rhubarb crisp is to use apples instead of rhubarb...lol.
    (That's right...I hate rhubarb...lol)
    Edit: my wife uses maple syrup in the 'crust' part...ands a nice flavour to the crusty bit

    Now I'm hungry. I've never put a bottom crust on my crisp but now I'll have to try it for sure, it looks so good. Something I like to add to my crisps to make them even "healthier" is a sprinkling of wheat germ with the flour/oatmeal mix...gives the crisp a little crunch. Thanks for sharing your recipe, my rhubarb is calling!

    Looks so good! Thanks for the recipe! I'm always looking for different ways to use up the rhubarb. I love the idea of crumb on the bottom. Never seen that before. I'm gluten free so I'll try to sub the flour with a gluten free flour. It should work fine. 😋

    I can hardly wait to make this! Very enjoyable video!! I love watching you have fun in the kitchen. I make a similar topping for my grandkids who are gluten intolerant (no wheat flour, of course). I never measure it, just put in whatever and go be feel, like you. (I might even add some strawberries. (That's the way my mother taught me many decades ago.)

    I have a well established rhubarb plant in my yard. It's the first to come up after a hard Canadian winter. It grows like a SOB. I offer it to friends but no one is really interested because it is so mysterious or something. Alot of it goes in the compost. BUT, When it comes to a special gathering, a rhubarb crisp is the talk of the gathering. I'm doing your recipe times 2 and am sure it will be memorable. I do add a sprinkle of corn starch for easier servings. You got it though. Gourmet! Edit: The pan is smeared with lard. No holding back. It's an occasional dessert after all. Delicious.

      I so wish I had someone like you that had a huge rhubarb patch. I just spend $11.00 on Sunday and $9.00 on Tuesday for rhubarb. It sell for $4.50 /lb. Love rhubarb in on morning oatmeal, strawberry/rhubarb pie, rhubarb muffins the list is endless. I have a patch growing but it’s still in it’s first year.
