Rhubarb Crumble is one of my favourite desserts, I mix rolled oats with the flour to add a bit of crunch and texture to the topping. Sometimes I use flaked almonds, chopped hazelnuts or walnuts, toasting them adds an extra boost of flavor and texture.
Thanks Rik, I’m learning how to cook from your videos. I used to be afraid of cooking but really enjoying it now. Rhubarb crumble is my favourite pudding!
Brilliant pudding. In my childhood, every garden had a rhubarb patch, now I see it on sale in super markets, at such a high price. Love watching your cooking videos. Peace and goodwill.
I grew up in Michigan and we had rhubarb growing in the garden. No one ever told us the leaves were poisonous. We often would grab a stalk (with the unknown poisonous leaf)and eat the stalk. My mother made many things with rhubarb. Now I live in Florida and, IF you can find rhubarb at the grocery store, you need to take out a mortgage to buy it. Thank you for taking me down memory lane.
I was born in MI and my grandmother had a rhubarb in the back yard too. She made rhubarb pie and it was so good! I'm going to make this if I can find some rhubarb. Ric's dishes are delicious and creative.
I love rhubarb! Great plant that is very prolific. My summertime special way to enjoy it is cut it up, like in the crumble recipe, cook in pot with little bit of water, and sugar. Cook until stewed. So tart and yummy
I like to bake the crumble twice for a crunchier topping. First bake is on a baking tray for 15-20 minutes and then break it up with a fork and crumble it over the fruit. Back in into the oven for another 20 minutes to cook the fruit and finish baking the crumble.Instead of yellow colouring in the custard, I like to add a couple of eggs - free range for a deeper colour and a more nutritious custard.
Rhubarb crumble and custard, or cream, when it's cold. Is one of my favourite puddings. I've not made one since my husband died. He was a Yorkshireman too, so one of his favourites too. I'm definitely going to make one soon. Yours looks delicious. I stopped boiling the Rhubarb too, because it made it a bit mushy. Your quick custard recipe is good as well. I'll make it like that next time. I mix in a few oats, for extra crunch. Thank for sharing, Rik.
What a coincidence that l should click on your rhubarb recipe after buying rhubarb yesterday....its a crumble l haven't had for a long time...one of my favourites....thankyou Rik for the recipe ❤
Lovely looking crumble. Good to know a way to make a quick custard that doesn’t use a load of eggs which, although I’m sure is tasty, can be quite expensive. Thanks for sharing Rik. 👍🏻
Rik, another winner! My mother used to make apple crisp using the same dry toppings. We would eat it slightly warm with vanilla ice cream or whipped cream. I love rhubarb so perhaps I’ll try the rhubarb version.
Rhubarb looks like sunburned celery and tastes like heaven! I’ve only eaten it mixed with strawberries and never topped with custard. A la Rik is on the agenda!
Yorkshire Rhubarb, bought on the market, wrapped in newspaper, stewed with sugar but still with a bite, under crumble, in custard, with ice cream, evaporated milk or just on its own…magical. Thanks as usual Rik…
I love rhubarb, and I love crumble anything. I always grew rhubarb so did my parents. Haven’t done for last few years but I’m going to try and find some to grow again. This is yum. I used to cook for the nuns and also in an aged care facility and their favourites were crumble, any fruit and also sponge cakes. They always loved scones with jam and cream for their morning tea too. I’ll have to start making some things again. Thanks for your videos Rik, I’m loving them and a lot of what you make my Mum us3d to make too.
I love to peel some of the skin off the stalk of rhubarb and eat it like a celery stick. Love tart, sour, and vinegar. Delish, can't wait to try it! Also, thank you for the easy custard recipe!
Thank you for posting this. I tried out the custard using turmeric and added some nutmeg. I don't think I'll bother cracking an egg to make custard for a while. Delicious!
Just come up with an idea, I make a rhubarb relish with, ginger, brown sugar, sultanas, white vinegar, fresh red chillies and red onions. Its a great taste, gonna try it as a pudding recipe...
Oh I have just been given a pile of lovely red rhubarb from my friends garden. It is now in the freezer. I will swap the cinnamon for ginger and bobs your uncle. I will try the quick custard with it as I have never made it that way before.
I have never seen a flour based topping . We always use rolled oats , brown sugar , and butter , over rhubarb , apple slices , peaches , plums , maybe toss in some cinnamon. Add a scoop of vanilla ice cream, or cream , sweetened condensed milk . I like your custard idean
From Australia. This is the exact recipe that the Cornish side of my family, have been making for generations. We also make apple crumble the same way 😊🇦🇺
THANK you Rik! My mother used to make a crisp recipe using strawberry Jello and rhubarb I really liked, but I haven't found it in her recipe book. This gives me ideas!
Rhubarb growing nicely in our garden so guess I will be making this very soon. Also love Rhubarb and Strawberry combination in a crumble. Yum..Thanks Rik.
Thanks Rik, love a delicious Crumble Pudding & rhubarb teamed with custard is a match made in heaven!😋 Will definitely be making this when my neighbour kindly shares some of his crop!🤞 Hope you’re enjoying a nice relaxing Sunday! xx 👨🍳👌🥣
I make rhubarb and orange crumble, I put orange zest and the juice of one orange .you may WHAT put CORN flour o help with all juices. Hope you may try this as it takes away the dryness, take care and all the best. 😊😊😊😊👍👍👍👍👍
This is my new favourite cooking channel. So many of the things you've made were a part of my childhood; but this was the best. Rhubarb crumble with custard... I'm Canadian, living in Nova Scotia; but my great grandparents were from Kent County in England. After watching your channel for a little while, it's clear that some of those meals I ate as a child came across the Big Pond with my predecessors. It's quite likely that they brought some rhubarb plants with them, since rhubarb is not native to North America. Thank you for another delicious video.
Classic way to do it, Rik. Ican't see the point in pre-stewing for any crumbles tbh, even apple works if you slice it fine. Over-ripe bananas make a great one (under-ripe are too watery). I usually add a dash of lime juice and rum. Should taste like banana chews. I prefer ginger in the rhubarb, cinnamon in apple, as taught by my gran who learned in the kitchen of a country house, but each to his own👍
Just passing to say I'm making that Chorizo pasta for the second time... LOL...Your 'look at that " and my husband 's"olha isso ", means the same.. Next weekend,I think I 'm gonna heard another look at that/ olha isso for Offaly Bacon loaf or Macaroni Pie. Have a nice Sunday and lots of kisses from Brazil!
No rhubarb on hand this morning, but in true Rik spirit, I had many apples past their prime. Don’t worry about it, it’ll be fine! 😉😄 It’s in the oven now.
That looks Delicious!!! Like everything you make. 😊😊 Still need a nice English carrot and coriander soup recipe. ❤😇 Thank you Rosemary from New Jersey. USA 😻🌺
Rhubarb is my favourite fruit for crumble....thanks for sharing Rik. Always love to see simple variations for a crumble....and a delicious bit of custard 😊
Looks delicious, my mouth is watering! Do you have a recipe for the egg made custard?? If not it would be amazing if you could make one! Love watching you cook, especially with that Air Fryer you use! Thank you for sharing Rik.
You know Rik it's funny. Tonight I am enjoying your school syrup sponge. With custard made your way not the package instructions. Today I made a garla pie.

Omg i wish i could get my hands on rhubarb here in Nw florida. I once ate a whole bowl of stewed rhubarb when i was a child my mum said it never affected me at all as she thought if would open the bomb bay doors and fully deploy its load 😂😂😂

Now that is my kind of rhubarb dish, not to much sugar and not mixed with other fruits
Agreed! Thank you. Best, Rik
It's beautiful isn't it?! ❤

Just a quick way that mimics the custard powder used in the UK. It's obviously not as rich. Thank you. Best, Rik
Custard makes everything better!

no stawberries, they take away the nice sharp taste of the rhubarb
Yorkshire Rhubarb, bought on the market, wrapped in newspaper, stewed with sugar but still with a bite, under crumble, in custard, with ice cream, evaporated milk or just on its own…magical. Thanks as usual Rik…

Crumble is my all time favourite pudding ! As an alternative to cornflour for the custard would it work using plain flour instead?
No this is a quick custard the cornflour is the thickener - the same as in bought custard powders. Thank you. Best, Rik
Erik, this is one of my favourite pudding since childhood. I am 64 now watching from London.
I must say fresh rhubarb isn't easy to get hold of and tinned rhubarb seem too soft?

We have qlut of rhubarb often. I love rhubarb curd but a right faff. Do you have ine of your quick ways of making ...the one I made involved mushing the rhubarb thru a fine sieve...that needs strong arms ...was like a full workout. Like the quick custard . I tried with eggs + tasted like scrambled eggs
The rhubarb does have to be strained. Thank you. Best, Rik
You can’t beat this classic dish Rik but rhubarb is so expensive here in uk I don’t know why 🤷♀️I use ginger in mine cuz hubby doesn’t like cinnamon and to be honest if he could have crumble crumble he would lol he’s not keen on the fruity bottom , same with trifle he only likes the custard and cream 😂🤣Amanda xx
