Rhubarb Pie by the Angry Gardener - Best Crust

  • Angry’s Rhubarb Pie -
    Preheat oven 375 F
    Crust-
    3 cups flour
    1/2 cup water
    1 1/2 cup shortening
    1 tsp salt
    1 TBL apple cider vinegar
    1 egg
    In 2 cup measuring cup add the water, then add shortening to make 2 cups, drain(save) water. Cut shortening into flour until crumbly. Mix all other ingredients (including the 1/2 cup saved water) and add to the flour/shortening crumbles. Mix with spatula (don’t over mix). Turn out onto floured surface and kneed briefly. Split in half, wrap and keep chilled until used.
    Filling
    4-5 cups diced rhubarb
    1 1/2 cups sugar
    2 TBL flour
    2 eggs
    1/4 cup heavy cream
    1/4 tsp Cinnamon (optional)
    Capful Vanilla (optional)
    Mix all but rhubarb in a bowl until well incorporated. Then stir in rhubarb.
    Roll out 1/2 of dough for bottom crust 1/8in thick, put in 9in pie plate. Add filling
    Roll out 1/2 of dough for top crust 1/8in thick and cover filling, trim excess dough, crimp edges.
    Egg wash
    1 egg
    1 TBL water
    Brush top of crust with egg wash
    Sprinkle with sugar (optional)
    Bake on foils lined sheet pan for approx 60-90 minutes. Start checking crust at 35 minutes until crust is proper color the. Tent or ring with foil to prevent burning.
    Pie is done when internal temp is 170 (anything less and filling won’t set….giving you a watery mess.
    Cool, then chill.

    I've made many many rhubarb pies over the decades. Never have I put cream in it, but now I might just have to try that. Thank you for sharing, especially the tip of 170 deg F internal temp - great info, especially for newbies.

    man o man, looks delicious!! The anticipation as you were slowwwlyyyy cutting into the pie....I was yelling for you to hurry up! I dream of having a rhubarb patch, like we had growing up. Rhubarb crisp and rhubarb torte were Mom's and Grandmas best recipes.

    My mom made this and called it rhubarb custard pie. Her recipe got lost a while ago. She sometimes made the same pie but added a package of strawberry jello for my dad because he liked the combo better. I’m planning to make your recipe to see if it is similar. Thanks for sharing.

    I have made this pie and my wife just really, really fell in love with your pie. This is such a good pie, that we made many photo copies and gave it to our closest friends.

    Just had Alexa add rhubarb to my spring planting list. I once combined two recipes to make a rhubarb pie with egg. It seems to cut the abrasive texture of the rhubarb. It was perfect but I've never been able to duplicate my on-the-fly recipe..! This looks like the real deal plus it incorporates what we call my Aunt Speed's Pie Crust. Thank you so much..!

    Thank u for sharing this recipe. My mother-in-law would make rhubarb pie. Haven’t had that since she’s been gone. Don’t have any rhubarb. Have to see if Gracie’s store have any. Looks delicious

    I love rhubarb pie! My great-grandmother made that when I was child and I have never been able to get the recipe. I will definitely have to try yours. It looks wonderful! She also made a rhubarb sauce....like applesauce. Have you tried that?

      Depending on your location rhubarb bare root can be purchased in garden centers during very early spring, plants of various sizes during middle to late spring. My favorite way is find a friend, relative or neighbor with an over grown plant and ask them for a division from it as every few years they should be divided to encourage continued strong growth.
      However you get it, plant it in a sunny location best with a wall or fence behind it to soak up the sun’s heat in the spring. Keep it regularly water for the first year or so.
