      I used to make these in vapiano all the time. We put olive oil, when we didnt put tomatopaste. Some pizzas had just olive oil+cheese+ other ingredients on top

    A little tip to everyone:
    As he uses a stone oven, the surface he places the pizza on is really hot, as well as the air around it, whereas when we try to make it at home, we have pizza trays or flat trays at room temperature.
    If you use a tray the base of the pizza is not going to cook completely in 10 minutes, so try preheating the tray together with the oven and then baking the pizza on the hot tray.
    I tried both ways and the first one didn't have a completely cooked dough below the pizza.

    I just finished eating my second portion. THIS IS THE FIRST TIME I DO THIS RECIPE. I sincerely wish that I could describe the results without sounding like a cliché, but: THIS IS DEFINITIVELY THE BEST PIZZA I HAVE EVER MADE. My whole family agrees, My son even asked me to thank Mr Gennaro Contaldo for this recipe that it has become our official recipe.
    Some remarks:
    - I have a regular oven, which I preheated to 300 C, with the trays I would use inside.
    - I prepared the pizzas and put them into a baking paper.
    - I made three pizzas, and took one and half of the recipe. It worked out perfectly.
    - I always baked one pizza at the time.
    - They baked for 10 minutes (you can see the crust rising and changing colours, it's very exciting)
    - After the pizza was done, I put the second one in the middle to bake but left the one that was ready in the lowest tray of the oven so that the bread would get crispy.
    My mistakes by the second pizza: it was not thin enough and it had too much cheese. (my family was eating and rushing me for more). Of course, it is a matter of personal taste. To me, this bread is so delicious that it's a pity to overpower it with cheese.
    I recovered by the third, that turned out as good as the first one.
    I wonder if you could freeze them?, once cooked or raw? with or without toppings?. It would be useful to know.

      Hi, I am Italian and I routinely cook pizza at home, as I live in Dallas now. You can freeze it after having cooked it halfway, with the toppings. Basically, follow the entire recipe, cook it until you see that it is like 3 minutes from being perfect, then pull it out. Let it cool down, then freeze it. When you'll want to eat it, just pre-heat the oven and finish cooking it. Good luck!

    After eight years of following Gennaro's recipe, I've made some personal changes to my pizza recipe, but the foundation remains the same. My wife refuses to eat any other pizza and over the years, my friends are surprised at the quality of the pizza I've been making. The single biggest improvement was using a pizza oven, one of the best Christmas gifts I've received from my wife. Makes you wonder who the gift was for at times, but nevertheless, I'm grateful for this video. Pizza seems simple to make, but in simplicity there are details you refine over the years and the preparation process itself is my zen moment in the kitchen. Grazie!

    This recipe is gold! I've been trying different pizza recipes for years, and this is the first case the outcome was exactly as expected! The only thing I did differently was that I baked it on a pizza grate, at 300 Celsius degrees for 6 minutes. The result was gorgeous!

    For any users of the customary system and/or people with a regular oven instead a wood burning oven I tested this recipe out twice in the same night, however here are some measurement adjustments:
    - Flour: 3 1/2 cups (I tried all-purpose bleached flour and unbleached bread flour and honestly the crust consistencies came out the same I preferred the all-purpose flour pizza)
    - Sea Salt: 1 1/8 tsp
    - Yeast: 1 packet or a 1/4 ounce of yeast
    - Water: 1 1/2 cups
    These measurements worked for me and I followed the rest of the steps from the video, with the exception of the toppings I used:
    - Homemade Pesto for my sauce
    I still drizzled the olive oil and sprinkled the sea salt over my sauce as well as an Italian cheese blend substitute for parmesean when pushing the sauce around!
    - Provoleta or Provolone for my cheese
    - Jamon Iberico
    - Hard Italian salami
    - Oregano on the ends of the crust
    Also, on the pan before placing the pizza on the pizza tray I thinly spread olive oil and half a handful of cornmeal on the pizza pan to stop any possible sticking.
    You're going to bake the pizza for approximately 12-14 mins at 475 degrees Fahrenheit on the top rack of your oven, then broil on high for about 1-2 mins.
    It turned out amazing the broiler not only crisps up the toppings and caramelizes them a lil but also gives you a similar look and taste to the fire spots of a wood burning or brick oven.

    In case others wonder what “strong flour” is? Bread flour. More gluten and you get that lovely pizza dough like his - I make it this way too.

      But I used AP flour, so maybe that's why. There's no strong flour in my country.

      The flour is the key. Different types of flours can absorb water in a very different way.
      I don't know how flour categories work in the rest of the world, but here in Italy strong flours are signaled by a W. The higher the number, the stronger the flour. So for example, we have 360W, 420W... The 420w is the strongest, I think, and you can even mix this flour with classic white flour, to balance the amount of gluten in your dough... Basically, with "strong" he means that has an higher amount of gluten in it, because it is a very refined flour.

      I noticed the same thing. My guess is that he has lived in England for some of his life. You'll notice he states that Italian pizza uses minimal toppings, not like English pizza at 5:49. The main thing that comes through for me on this video is how much he loves what he does with food!

    i've tried dozens of pizza recipes looking for the perfect pizza dough that will cook well in a regular oven and i find this one to be the best and as long as you follow his instructions you can't go wrong. it's as close as you can get to the authentic pizza, but made at home. totally recomend

      By the way 2x30min of resting for the dough is an insult to the pizza, the napolitan recipe is at least 8-12h of rest... And 220 degres for the oven is just joke, pizza should be cooked at 400 degrees for max 1 min.

    Thank you so much mister Italian, I tried it with vegan cheese, kept it simple and it came out delicious. I preheated oven at 300 degrees and baked at 230 but needed some more minutes, I d say around 15 minutes to come out perfectly. Amazing result, thanks for sharing!

    Look really good. He’s done this before! In a pro setting, they would cold ferment the dough for a day or two, otherwise pretty much the same. I love how there is a little hint of East London in his English.

    I just tried it exactly step by step. It is amazing.. very tasty italian pizza.. i tried real pizza in italy, it is very simple and clear, just like he described, not tons of peper, and ingredients.. our owen can go max up to 250C but finished pizza was excelent.. using 500g of flour it is for 2 pizzas.. only one recomendation. When you do it at home using simple baking pan, make the final round shape directly on it and then you put ingredients you like on top, then you just simply give it all to oven.. if you shape and prepare pizza on the desk first then it can be difficult to move it to baking pan without damaging nice shape or even whole pizza..

      Cannot agree more! Dough was great. Two pizzas worth of dough. But the transfer is over of the hardest parts. It can get heavy on the pan! If you're transferring to a stone baking sheet already heated in the oven sure you really go have liberally dusted with flour. Still not easy transfer.

    I love making pizza at home - one trick I've learned is to use some seminola when you're spreading out the dough. Just use it instead of flour when you prepare the workplace.
    You also really need high temperatures and a pizza stone helps. It's also a good idea to spray some water into the oven just before baking the pizza - the steam will create a more crunchy crust.
    There's also a small Italian pizza oven which I plan to get, the G3 Ferrari Delizia. You can find a thorough test in the SORTEDFood video channel here on TH-cam.

      I have the G3 Ferrari and whilst I regularly use because it is convenient it is not the best option out, because it is not hot enough. Pizza will need 3-4 und thus develop a crusty and not a soggy bottom. Much better than from a normal oven, but I would rather save up for a gas fired oven like the ooni koda, which will allow high temperatures and give you the perfect speckled crust.

      I really don't have the space for anything larger than the Ferrari G3 in my kitchen, though. And have you considered modifying it? I've seen people put aluminium in the lid to increase the temperature.

    Strong flour is standard flour with high gluten. Soft flour is pastry flour with low gluten. It is difficult to find pastry flour in stores., Pastry flour is used for pies and cookies and other pastries.

    This mans recipe saved my marriage. 44 years married and the spark was gone, we had tried everything. I had one last trick up my sleeve, I followed step by step Gennaro's recipe, I even wore a button-down business shirt with a gold necklace during dinner. It Worked, now our marriage is stronger than ever, we have Sunday pizza once a month. Thank you Gennaro.

      Just Fede keep calm, is not so strange putting parmigiano cheese on pizza (only reggiano of course). Put prosciutto crudo on the raw pizza... that is sad.

    My husband's 'Noinni' was from Napoli (she never made a bad recipe). We miss her terribly. Jamie Oliver swears by this man's pizza skills, he calls Gennaro 'his mentor'. Although, Jamie, I love you, but, I have to say,
    Rule#1) Never turn the temperature up on your garlic, when making marinara for pizza! You'll wind up throwing out the whole pot! Burnt garlic in marinara is a 'no-no', note from Noinni.❤️🇮🇹 Ciao! Beautiful City, Beautiful Country, Beautiful Man. Such Passion 🥰 I want to make pizza right now...🍕
