I just pulled everything out of my pantry this weekend because it got a bit chaotic over the past year. It was nice to take note of what we actually have... it was shocking to see it all out. My husband and I were flabbergasted, especially considering how often we think we have nothing in the house!! It's beautifully organized and now I'm making meal plans to use up things we've had entirely too long. What prefect timing for this video to ignite the inspiration even more!! Thank you for your smart, thoughtful and realistic videos that are useful no matter your budget.

My family has been doing a pantry/freezer challenge this month. We are bases our menus around what we have on hand. We have only bought some fresh produce and dairy. I am feeding a family of 7 and we have saved so much this month. We are thinking about continuing it next month as we are cleaning out food that was forgotten and needed used. Win in my book!!
I threw everything together for the beef vegetable soup. I think I should have used your recipe for the cream soups. I used a can of mushroom and chicken. I also used tomato sauce instead of V8. I may have to water it down some but it does taste really good on this cold and rainy day here in North Alabama.

Glad your rolls turned out! I found a half a bag of the very same rolls that were hiding out in my freezer & they never rose, so I assume they were in the freezer way too long. Bummer! I really appreciate your, "Use it up" attitude. I have really been paying closer attention to freezing what we don't eat up & eating it later. Reminds me I should thaw my Thanksgiving turkey noodle soup that I made with the turkey carcass. :)

The small V8 cans are actually 6 oz. Also, suggestion for homemade cream of celery and mushroom soups. For celery, use veg or chicken broth with about 2 tablespoons of very finely chopped sauteed celery or a pinch of celery seed (I sometimes use both). For mushroom, use beef broth and 2-3 finely chopped and sauteed mushrooms. It's more work, but you won't be missing those crucial flavor notes. You could also make it exactly like Mindy did and add those elements to the browning meat for a short cut.
Hello Mindy mom, I like your tips and tricks and I do understand about buying some things that are more expensive such as organic milk.... But if you're not bothered by regular milk, I have a tip for you that I have practiced for many years. When I was consuming a lot of milk, the best price for it was the gallon jug but we could not get through it that fast my mother and I.... However what I did find was that if I put my milk into sealed glass jars at the back of the fridge, my milk would go 3 to 4 weeks past the best before date. My mother liked whole milk on her cereal so to get the best price I would just buy the gallon. The full gallon was a little heavy for her but I bought some of those glass quart size jars and she was able to pour her milk herself. I had plenty of milk to bake with or to have a drink myself if I wanted it. I do this with my coffee cream as well because sometimes I get some on a real sale and I enjoy real cream in my coffee so likewise, I will pour this into jars and put them at the back of the fridge and use them one at a time. Again I get a shelf life of about three-and-a-half to four weeks by doing so! so you might want to think about buying regular milk and doing the same thing ☺️! Thank you for all you do Mindy! Oh and I have done this with whipping cream as well!

That's rice dressing! I usually start it the same way you do (browned meat, aromatic veggies) and then add cooked rice! Super quick dinner, you can brown the ground beef from frozen (!) and it's delicious! Very common in Louisiana where I'm from.
i use uncle ben"s long grain wild rice in the 90 second bag with shredded chicken and enough chicken broth to cover if not a little more let simmer then add cream cheese . really good on a cold day

As an Aussie, I have a question. I watch quite a few US budget prep channels, but nobody seems to use fish. Is tinned fish such as tuna, salmon, anchovies and sardines very expensive in the US, or do people not like it? It’s a great source of nutrition.

My mom made a very similar vegetable beef soup with V8 when I was a kid! She didn't add creamy soups though. I still make a vegetarian version of the soup with chick peas or kidney beans.
Love a good pantry challenge! I do them too and I also do ingredient challenges - if I have one item that I just have a lot of and tend not to use that often I’ll challenge myself to make recipes to use it up!
That dish with the ground beef, rice, and veggies is kinda similar to my mom's "mock chop suey" except she'd add those crispy fried noodle things and sometimes water chestnuts to it, as well as Worcestershire sauce. (I didn't like it but ate it anyway).
Love your videos and I’m a HUGE fan of not wasting food and using things up. I wonder Mindy if you know of a website where you type in the ingredients you have and you get recipe options? 😊❤

I schedule these types of meals into my meal plan weekly.. usually once or twice so I can stretch my weekly budget.

It just makes the oven a little warmer so the bread will rise faster.
