Tried this recipe tonight. Did not think 1 lb of meat and 1 cup of rice would go this far!! Made a large meal for 4. I made the enchilada sauce from your other video and that was excellent. The whole meal was a great trial of this recipe. I think I might use shredded beef or shredded chicken in the future. This recipe is so adaptable. thanks for posting this, it was spectacular.
I have more-or-less made this recipe before while trying to get rid of leftover ingredients. It is phenomenal. Only difference was I put them into tortillas and served them as soft tacos. I called them my "leftover tacos" and believe me when I say I am asked to make this all. the. time. Crazy simple and insanely good.

just made this w/my homemade enchilada sauce(was in my freezer which i thawed) ... i used water instead of chicken broth cause i didnt have any broth.. this was very easy to prepare i used my cumin and my taco seasoning homemade... as i cant eat spicy or garlic /onion powder this was really good... i did brown meat first and drained it off since i cant do grease.... i love it ... will make again... it made me 4 dinners for myself... i used rinsed regular long grain rice and it also worked... very good will make again...
Perfect comfort food for when you need that convenience. Where were you when my husband was traveling for work and I cooked on top of a huge cutting board in hotel rooms. I will probably add some peppers and onions when cooking but use what you’ve got is definitely my motto as well.

I made a baked enchilada casserole last night. I almost was going to make some Mexican rice as a side, but figured I had enough "things" already in the casserole, so I didn't. This looks really good, so I'll try this next time. I'd probably top with some black olives (add those to the top with the chopped green onions) and then some sour cream, avocado, and diced tomato.
I make the same dish which is almost on a weekly rotation for my family. Instead of enchilada sauce, I use Rotel. This is a great recipe for college students. 👍🏼
Born and raised in NM, we never use/used cumin as much as I see in Mexican recipes everywhere, maybe it’s a texmex thing, same with fideos, usually just oregano. Love your channel, thanks.

That looks good. You could even add a can of pinto or kidney beans.
Or ANY bean (black, navy, great northern - I'm big on keeping potassium in my dish & have recently found that most beans are a great source) 😉
