  • Healthy Quinoa Chickpea Bowl (Plant-Based) | Easy One Pot Vegan Recipes. Make this healthy & easy plant-based recipe for lunch or dinner! Give this video a thumbs up if you tried this recipe 👍
    ▶️ CHICKPEA QUINOA RECIPE INGREDIENTS: (3 to 4 servings)
    👉 To fry chickpeas:
    1 Can (398ml) of cooked Chickpeas (low sodium) - home cooked chickpeas will be 275g by weight water NOT included
    1 to 2 tablespoon Olive oil
    1 teaspoon Paprika
    1/2 teaspoon Ground black pepper
    Salt to taste (I have added 1/2 teaspoon pink Himalayan salt)
    👉 To cook quinoa:
    1 cup Quinoa (190g) - thoroughly washed & drained
    2 to 3 tablespoon Olive oil
    1 cup onion (135g) - chopped
    2 teaspoon garlic (3 to 4 cloves of garlic) - chopped/grated Or to taste
    2 teaspoon ginger (1/2 inch ginger approx.) - chopped/grated or to taste
    3/4 cup (175ml) Strained tomatoes OR passata
    1/2 teaspoon ground cumin
    1/4 teaspoon cayenne pepper (OPTIONAL)
    1 + 1/2 cup (350ml) Water
    Salt to taste (I have added 1/2 teaspoon pink Himalayan salt)
    1/4 cup (40g) raisins - finely chopped
    1/2 cup (45g) parsley - chopped
    ▶️ METHOD:
    To a heated pan add the cooking oil and chickpeas. Cook on medium high heat until chickpea starts to crisp up (it take about 2 to 3 minutes). Then add paprika, ground black pepper and salt. Fry for another 1 to 2 minutes or until the chickpeas are nicely coated with the spices. Transfer to a plate and set it aside for later. Make sure to use a plate so that the chickpeas are spread out (this will prevent it from getting soggy)
    Now to the same pan add some cooking oil, onion and salt. Adding salt will release moisture from the onion and will help it cook faster so please don’t skip it. Fry on medium-high to high heat (depending on the heat of your stove) just until the onion just starts to caramelize (it will take about 4 to 5 minutes).
    As soon as the onion starts to caramelize, add the ginger and garlic. Reduce the heat to medium low and fry for about 1 to 2 minutes or until fragrant.
    Next add the strained tomatoes/passata and let it cook for about 2 minutes, in the mean time wash the quinoa thoroughly with water and transfer to the pan along with ground cumin and cayenne pepper. (Cayenne pepper is optional). Increase the heat to medium-high, add water and bring to a boil. Reduce the heat to low. Cover and cook on low heat for about 20 minutes or until quinoa is fully cooked.
    Uncover and check to see if the quinoa is cooked. It should be cooked by then but if not cook it for a bit longer. Turn off the heat, add parsley, raisins and fried chickpeas and mix well. (Please DO NOT skip the raisin, as it will balance out the tartness of the tomato. Also, it’s important to finely chop the raisins so that it can disintegrate in the dish and you won't even notice it). Check for seasoning. Ready to serve.
    This is perfect for meal prep as it stores well in the fridge for up to 3 to 4 days.
    ▶️ IMPORTANT TIPS:
    Thoroughly wash the quinoa, this will get rid of any impurities/gunk and will give a cleaner taste to the quinoa. Also, drain the water properly from the quinoa otherwise it will turn soggy when cooked
    -Towards the end of cooking quinoa, if there is still water left in the pan then uncovered and continue cooking for a bit longer to get rid of the excess water
    Be careful when adding ginger because if you add to much of it the dish will turn bitter
    Please DO NOT skip the raisin, it's an important ingredient and will balance out the tartness of the tomato. Also, it’s important that you finely chop the raisins so that it can disintegrate in the dish
    This recipe is perfect for meal prep as it stores well in the fridge for 3 to 4 days

    Hello, I am from Bolivia, and I eat QUINOA since I was born, it is a very nutritional food and gives a lot of energy, as everyone knows it is a food originating in the ANDES in South America, that is where I live, in the ANDES.
    I consume Quinoa about once a week, and in the way that I like the most, it is to cook the QUINOA as if it were rice, and then make a sauce with onion, tomato, salt and yellow pepper, all prepared with oil in a pan and toast. this sauce for about 20 minutes, and to give it that delicious touch we put a little grated cheese on it.
    Hmmm delicious.
    Here sometimes we accompany this delicious dish with a little hot pepper, but that depends on each person.

    I just made this; it's truly an amazing dish. I have tried to get into quinoa, but have hated it every time. This is the first time I've LOVED a quinoa dish and will be making it regularly. I did add a few different things to it: I sauteed the chickpeas with the same spices, but I added corn with it, and roasted it in the oven afterwards while the quinoa cooked. I didn't have cayenne, so I used ground crushed red pepper and a chipotle seasoning instead. I didn't have raisins, so I used dates; they were good, but I do think raisins would be better so I'll get that in next time. I also sauteed red peppers together with the onions. What you do cooking the quinoa with water and tomato sauce, however, is absolutely the best way to add flavor that I've seen so far. Amazing method, and I'm very grateful you put this video out.

    Tried this today instead of the tomatoes sauce I roasted 3 plum tomatoes, half of red pepper, and 2 cloves of garlic in air fryer for 20 mins it gave a nice smoky flavour. Also added one chicken stock cube. It’s delicious thanks for this God bless you!

    Just made this dish, i used coriander as i had no parsley and threw in a little korean hot paste, I chopped up some seedless dates as i had no raisins. Its turned out slightly sweet and savoury. Very nice ❤

    This was very simple to make with no prior prep needed. It was delicious! Personally i couldve used more spice, and i did end up adding more salt. But it was still flavorful. The addition of raisins I was skeptical about but it honestly enhances the dish
    I think the portion size in the recipe could be clearer so for me - following the above recipe exactly constitutes 2 meals.
    And the aesthetic of the video is lovely.

    I just finished making this recipe, it is very good. I changed a few things, I only used a 1/4 teaspoon of black pepper instead of 1/2 teaspoon. I used 1/2 teaspoon of garlic instead of 2. I did not add the raisins and parsley. Thank you for this recipe.

    I tried this with dried Turkish apricots since I didn't have any raisins and it was good. They are the same color as the Thompson raisin. I knew that would work because I used them in a Tagine dish, so I gave it a shot in this one

    One tip from me: soak the quinoa in water overnight and rinse it the next day before cooking. This will take away the natural bitterness in the quinoa.
    UPDATE: I discovered a new method. You don't even need to soak it. Just put the quinoa in a closed jar or a container with water and shake it VERY WELL for a few seconds. You will notice that the quinoa will form a lot of foam (or froth). Put the quinoa in a sieve and rinse it from the froth and then cook it.

      @@ruthhernandez2922 I never liked quinoa because of the bitterness, till I saw a random comment on TH-cam recommends soaking it. I did that and it really worked. I don't taste the bitterness anymore.

      I never tasted any bitterness, although I do buy the tri-color quinoa and I’ve never needed to rinse and had no digestive issue because of not rinsing. Maybe it depends what type of quinoa?

    Fry chickpeas with spices. Set aside. Fry onion in oil add salt ginger garlic. Add tomato sauce. Rinse quinoa and add to pan (1 cup). Add cumin and cayenne and a cup of water. Mix and simmer for a while, about 20 mins. Add some greens of choice (I don't like parsley but she uses it). Add raisins if you'd like. Turn off heat. Mix it all up and add chickpeas in. Boom. Beautiful video but painstakingly long for me so here ya go 💙

    This tastes so good! My son, who isn't crazy about chickpeas, loved it! He said before we ate that he wasn't very hungry, but he ate every last bite!     Omg I just finished making this today and it was yummy! I made a few modifications for ex wasn't sure what type of tomatoes to use so used 1/4 c diced tomatoes with some leftover tomato sauce I had; instead of using parsley and raisins I added cilantro and craisins and I must say yummy! Also cooked a lb of black beans so looks like I will have a healthy lunch for the work week! Might try your almond bars later today!

    I just finished making this and I liked it more than I thought I would. The flavor is good and it’s healthy. Didn’t have parsley so I left that out but everything else remained the same. Hope my boyfriend likes it so I can make it again. Thank you for the great recipe.

    Finally got around to making this. I must admit; I almost checked out when you said "raisins", but I was still intrigued. I was pleasantly surprised by how good this is. I used vegetable broth instead of water to add another layer of seasoning. I included the cayenne pepper; it added a nice little kick to it. Comfort food that's environmentally friendly. And yes, you were right about the raisins☺ Definitely trying more of your recipes. Thanks for sharing!

    My husband is vegan and I struggle to cook for him. I was so tired of cooking him the same thing over and over. I was looking for a different way to cook chickpeas other than curry when I found this. He FREAKING LOVES this! He ate the entire pot by himself! 🤣 Great recipe thanks!
    I used tomato paste instead of strained tomatoes because its what I had.
    Also, he is not a fan of cumin so I omitted that.
